- 1 1/2 cup carrots, chopped
- 1/2 cup olive oil
- 2 tablespoons lime juice
- 2 tablespoons apple cider vinegar
- 2 tablespoons maple syrup
- 1 tablespoon fresh ginger, chopped
- 1 clove of garlic
- Sea salt and pepper, to taste
