Cauliflower Lettuce Wraps

Ingredients

For the Wraps:

  • 1/4 cup tamari (or soy sauce)
  • 2 tablespoons maple syrup
  • 1/2 teaspoon sambal oelek
  • 1 teaspoon fresh ginger, minced
  • 1 teaspoon sesame seeds, toasted, plus more for garnish
  • 2 teaspoons sesame oil
  • 1 large head cauliflower, separated into tiny florets
  • 1/2 red onion, chopped
  • 2 teaspoons garlic, minced
  • 1 1/2 cup walnuts, chopped finely
  • 1 head butter or Boston lettuce, leaves separated and washed
  • 2 green onions, sliced thin

For the Dipping Sauce:

  • 2 teaspoons sesame oil
  • 1/4 cup tamari (or soy sauce)
  • 1/4 cup rice vinegar
  • 2 tablespoons sambal oelek
  • 2 teaspoons garlic, minced
  • 2 teaspoons fresh ginger, minced

Instructions

In a small bowl, mix the tamari, maple syrup, sambal oelek, ginger, and 1 teaspoon toasted sesame seeds. Set aside.

In a large skillet, heat the sesame oil over medium-high heat. Add the cauliflower and the onion and sauté, stirring often, until the cauliflower browns in spots, about 15 minutes. Add the reserved sauce, the garlic and the walnuts, and mix well. Cook for another 2 minutes while stirring. Taste and season with sea salt, if needed and set aside while you make the dipping sauce.

To make the dipping sauce, mix all the ingredients together in a small bowl. Stuff the filling in lettuce leaves, garnish with green onions and sesame seeds and serve alongside the dipping sauce. Bon appétit!
