Place the celery root and pear matchsticks and the green onions into a large mixing bowl. Make a vinaigrette with the olive oil, apple cider vinegar, garlic clove, and a sprinkle of sea salt and pepper. Pour on top of the celery root and pear and mix thoroughly. Mix the mayo and the mustard in a small bowl. Add to the slaw and mix well. Remove to a serving bowl and sprinkle with the toasted pecans. You may season with additional sea salt and pepper.
