Extra Creamy Celery Root and Pear Slaw Thumbnail

Ingredients

Scale
  • 1 celery root, washed, peeled and cut into matchsticks or coarsely grated (I used a mandoline)
  • 1 pear, cut into matchsticks or coarsely grated
  • 3 green onions, sliced thin on the diagonal
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 garlic clove, minced
  • 1/2 cup mayo
  • 1 teaspoon Dijon mustard (or yellow)
  • 1/3 cup toasted pecans, chopped
  • Sea salt and pepper, to taste

Instructions

Place the celery root and pear matchsticks and the green onions into a large mixing bowl. Make a vinaigrette with the olive oil, apple cider vinegar, garlic clove, and a sprinkle of sea salt and pepper. Pour on top of the celery root and pear and mix thoroughly. Mix the mayo and the mustard in a small bowl. Add to the slaw and mix well. Remove to a serving bowl and sprinkle with the toasted pecans. You may season with additional sea salt and pepper.
