Sautéed Green Beans with Tofu

Ingredients

  • 1 lb green beans, trimmed and julienned
  • 2 tablespoons sesame oil
  • 1 tablespoon garlic-ginger paste (or 1/2 tablespoon minced garlic and 1/2 tablespoon minced ginger)
  • 1 block extra-firm tofu, pressed
  • 1/2 cup tamari
  • 2 teaspoons sambal oelek
  • 2 tablespoons maple syrup
  • 1 tablespoon lime juice
  • 2 green onions, sliced thin on the diagonal
  • To serve: toasted sesame seeds, rice or rice noodles, lime quarters

Instructions

Heat the sesame oil in a large sauté pan or wok over medium-high heat. Add the garlic-ginger paste and cook 1 minute. Crumble the tofu with your hands directly into the pan. Let cook, stirring often, about 4-5 minutes. Add the green beans, stir well, cover and cook 4-5 minutes more. Meanwhile, make a sauce by mixing the tamari, sambal oelek, maple syrup and lime juice. Add to the green beans and tofu. Stir well, cover and cook an additional 4-5 minutes, or until desired doneness. Serve on rice or rice noodles, garish with green onions and toasted sesame seeds, and some lime quarters. Bon appétit!
