1 butternut squash, peeled and cut into cubes (about 4 cups)
4 tablespoons tomato sauce, juice, or 2 tomatoes
1 tablespoons white miso
1 tablespoon apple cider vinegar
2 cups warm water
3 cloves garlic, chopped
1 piece fresh ginger, peeled and chopped (about 1-2″)
1 piece fresh turmeric, peeled and chopped (about 1/2″)
1/2 teaspoon cumin
1/8 teaspoon cinnamon
Sea salt and pepper, to taste
Garnishes: apple cubes, freshly minced ginger and turmeric, pumpkin seeds, black salt
Instructions
Put all ingredients in a high speed blender using the “Soup” function (if available), or blend at high speed until ultra creamy. Garnish with your choice of garnishes.
