Toast the cumin and coriander seeds in a dry skillet until fragrant, about 3-4 minutes. Grind them together with a mortar and pestle or a spice grinder. Set aside.
In a large skillet, heat the oil over medium-high heat. Add the onion, cloves, peppercorns, and cinnamon stick. Cook, stirring occasionally, until the onion is golden, about 5-6 minutes. Remove and discard the cinnamon stick. Add 1 tablespoon of the coriander and cumin seeds mixture, the garam masala and the turmeric. Fry, while stirring, for 30 seconds.
Add the tomatoes and break up with the back of a wooden spoon. Keep cooking for 2-3 minutes. Add the jalapeño peppers, the garlic-ginger paste and the sea salt, and mix well. Cook over medium heat for about 10 minutes, or until the oil separates from the mixture at the edges.
Add the cauliflower florets and mix into the skillet. Cover and cook, at a simmer, until the cauliflower is tender, about 20 minutes. Add the peas and the walnuts and cook 5 minutes longer, adding more salt and garam masala as needed. Serve with rice, naan or chapatis. Bon appétit!
