Pea and Pine Nut Pesto


  • 1/2 cup toasted pine nuts
  • 1 1/2 cup frozen green peas, thawed
  • 1 cup fresh basil, chopped
  • 1/2 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 1 clove garlic
  • 1 teaspoon sea salt
  • Zest and juice of 1 lime


Place all the ingredients in a food processor and pulse until you get a homogenous but coarse texture. Serve with pasta, stuff an avocado, or garnish some baguette. Bon appétit!
