Place the avocado, the oil, the lemon juice, the apple cider vinegar, and the maple syrup in a blender (I use a hand held mixer to purée everything). Add sea salt and pepper, to taste. Serve with cut up raw vegetables, your favorite pasta, cooked, and top with roasted pumpkin seeds. Let me know what you think! Bon appétit!
