Raw Wild Rice Salad with Apple and Pomegranate

Ingredients

  • 1 cup wild rice, soaked 24 hours total, changing the water after 12 hours
  • 1 cup pomegranate seeds
  • 1 apple, julienned
  • 1 tablespoon shallots, minced
  • 1/3 cup fresh orange juice
  • 1/8 teaspoon allspice
  • 1/4 cup almonds, chopped
  • Sea salt, to taste

Instructions

Rinse and drain the wild rice and place in a mixing bowl. Add the rest of the ingredients and mix well. Garnish with sea salt, to taste. Bon appétit!
