Broccolette Salad with Maple-Dijon Vinaigrette

Ingredients

  • 1/4 cup fine bulgur
  • 1 lb ripe tomatoes, cored and minced
  • 3 cups flat leaf parsley, minced
  • 1/2 cup fresh mint leaves, minced
  • 1/3 cup fresh lemon juice
  • 5 tablespoons olive oil
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cinnamon

Instructions

Combine the bulgur with 1/2 cup hot water in a medium bowl, and let sit 10 minutes. Drain bulgur, rinse thoroughly, and transfer to a large mixing bowl, along with the rest of the ingredients. Toss well and serve immediately.
