Growing up, I remember loving this very creamy coleslaw from the local chicken joint. The creaminess of the sauce with the crunch of the cabbage, along with the tang of the vinegar was so good. Fast forward to now, during fall season, and I’m finding myself craving this slaw, that the kids love as well. This Extra Creamy Celery Root and Pear Slaw, a clever twist on a classic, is easy, original and serves as a perfect side for all your gatherings. I also love pairing it with my Hasselback Potatoes with Tarragon Butter.

Extra Creamy Celery Root and Pear Slaw

Ingredients

Scale
  • 1 celery root, washed, peeled and cut into matchsticks or coarsely grated (I used a mandoline)
  • 1 pear, cut into matchsticks or coarsely grated
  • 3 green onions, sliced thin on the diagonal
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 garlic clove, minced
  • 1/2 cup mayo
  • 1 teaspoon Dijon mustard (or yellow)
  • 1/3 cup toasted pecans, chopped
  • Sea salt and pepper, to taste

Instructions

Place the celery root and pear matchsticks and the green onions into a large mixing bowl. Make a vinaigrette with the olive oil, apple cider vinegar, garlic clove, and a sprinkle of sea salt and pepper. Pour on top of the celery root and pear and mix thoroughly. Mix the mayo and the mustard in a small bowl. Add to the slaw and mix well. Remove to a serving bowl and sprinkle with the toasted pecans. You may season with additional sea salt and pepper. Je me souviens de la salade de chou crรฉmeuse du St-Hubert BBQ. J’aimais tant la sauce crรฉmeuse, avec le crunch du chou et l’aciditรฉ du vinaigre. Cette version utilise la saveur du cรฉleri-rave pour une interprรฉtation intรฉressante et unique du grand classique.

Ingredients

Scale
  • 1 cรฉleri-rave, lavรฉ, pelรฉ et coupรฉ en bรขtonnets ou grossiรจrement rรขpรฉ (j’ai utilisรฉ une mandoline)
  • 1 poire, coupรฉe en bรขtonnets ou grossiรจrement rรขpรฉe
  • 3 oignons verts, tranchรฉs mince sur la diagonale
  • 3 c. ร  soupe d’huile d’olive
  • 1 c. ร  soupe de vinaigre de cidre de pomme
  • 1 gousse d’ail, รฉmincรฉe
  • 1/2 tasse de mayo
  • 1 c. ร  thรฉ de moutarde de Dijon (ou moutarde prรฉparรฉe)
  • 1/3 tasse de pacanes rรดties, hachรฉes
  • Sel de mer et poivre, au goรปt

Instructions

Placer le cรฉleri-rave et la poire dans un grand bol ร  mรฉlanger. Fouetter l’huile d’olive, le vinaigre de cidre de pomme, l’ail, et une pincรฉe de sel de mer et de poivre. Verser sur le cรฉleri-rave et la poire et bien mรฉlanger. Mรฉlanger la mayo et la moutarde dans un petit bol et verser sur la salade. Bien mรฉlanger et placer dans un bol de service. Garnir des pacanes rรดties et d’un peu plus de sel de mer et de poivre, si dรฉsirรฉ. Bon appรฉtit!
