Apple-Maple Upside-Down Cake

My mama used to make all sorts of upside down cakes, pineapple being her favorite. Her and desserts… she just makes the best! This Apple-Maple Upside-Down Cake is no exception. It is very easy to make, but it is also gorgeous. You can easily serve it at your next dinner party with some maple yogurt or caramel ice cream on the side. You can make it ahead of time, and it stays nice at room temperature. I like to put the leftovers in the fridge and eat them cold the day after. A winner!

Apple-Maple Upside-Down Cake

Ingredients

  • 5 large apples, peeled
  • 1/2 cup maple syrup
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 3/4 cup butter
  • 1 1/2 cup brown sugar
  • 6 tablespoons aquafaba
  • 3/4 cup apple juice (I like to use two more apples*, blend and press them to make fresh juice)

Instructions

Preheat the oven to 350หšF (180หšC). Grease a soufflรฉ mold of approximately 2 quarts (8 cups or 2 liters).

Cut the flesh of 1 apple into cubes. These will be used for the dough. Using a mandoline, cut the rest of the apples into thin slices. Using the best looking ones first, arrange the apple slices in the bottom of the soufflรฉ bowl in concentric circles, pressing down to ensure the cake batter won’t crawl into any crannies. Add the maple syrup and set aside.

In a bowl, mix the flour, baking powder, cinnamon and sea salt. In a second mixing bowl, beat the butter into a cream. Add the brown sugar and keep beating until fluffy. Add the aquafaba and beat until the mixture is soft and homogenous. Add the dry ingredients, alternating with some apple juice, until no more. Mix well. Add the apple cubes and fold in using a spatula. Spread the cake batter on top of the apple sliced in the soufflรฉ bowl.

Place in the oven and bake for approximately 1 hour and 30 minutes, or until a toothpick inserted in the thickest part of the cake comes out clean. Let cool 15 minutes. Run the thin blade of a knife between the cake and the soufflรฉ pan. Invert the cake onto a serving platter or a cake stand. Serve warm or room temperature. Serve with maple yogurt, some ice cream on the side, or simply as is. It makes for a great mid-morning snack, too! Bon appรฉtit!

  • 5 grosses pommes, pelรฉes
  • 1/2 tasse de sirop d’รฉrable
  • 2 tasses de farine
  • 2 c. ร  thรฉ de poudre ร  pรขte
  • 1 c. ร  thรฉ de cannelle
  • 1/2 c. ร  thรฉ de sel de mer
  • 3/4 tasse de beurre
  • 1 1/2 tasse de cassonade
  • 6 c. ร  soupe d’aquafaba (le liquide dans une boรฎte de pois chiches)
  • 3/4 tasse de jus de pomme (j’aime bien prendre deux pommes de plus* et les passer au mรฉlangeur pour en faire un jus frais)

Instructions

Prรฉchauffer le four ร  350หšF (180หšC). Graisser un moule ร  soufflรฉ d’une contenance d’environ 2 litres (8 tasses).

Couper la chair d’une pomme en cubes, pour la pรขte ร  gรขteau. Rรฉserver. ร€ l’aide d’une mandoline, trancher le reste des pommes en tranches fines. En commenรงant par les plus belles (avec le milieu en รฉtoile), placer les tranches en rosace dans le fond du moule ร  soufflรฉ. Disposer et presser sur les tranches afin de s’assurer que la pรขte ร  gรขteau ne d’infiltre entre les pommes. Ajouter le sirop d’รฉrable et rรฉserver.

Dans un bol moyen, mรฉlanger la farine, la poudre ร  pรขte, la cannelle et le sel de mer. Dans un grand bol ร  mรฉlanger, battre le beurre en crรจme. Ajouter la cassonade et battre pendant 2 minutes. Ajouter l’aquafaba et continuer de battre jusqu’ร  l’obtention d’un mรฉlange onctueux et homogรจne. Ajouter les ingrรฉdients secs en alternant avec le jus de pomme et bien incorporer avant chaque nouvelle addition. ร€ l’aide d’une spatule, incorporer dรฉlicatement les cubes de pomme. Rรฉpartir la pรขte sur les tranches de pomme dans la moule.

Cuire au four pendant environ 1 heure 30 minutes ou jusqu’ร  ce qu’un cure-dents insรฉrรฉ dans le milieu du gรขteau en ressorte propre. Laisser reposer pendant 15 minutes. Passer la fine lame d’un couteau entre le moule et le gรขteau. Renverser sur une assiette ou un plateau ร  gรขteau. Servir tiรจde ou ร  tempรฉrature ambiante. Servir simplement ou avec du yogourt ร  l’รฉrable ou de la crรจme glacรฉe au caramel. On peut en faire un dessert ou un snack en matinรฉe. Bon appรฉtit!

And that’s how I developed such a liking to the dessert that apparently comes straight from medieval times. This rendition is dense and moist, and you’ll only need a small slice to take you to carrot cake heaven.

For the Cake:

  • 3 cups of flour
  • 3 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 1 1/2 cup grapeseed oil
  • 2 cups sugar
  • 3/4 cup aquafaba or 1 cup applesauce
  • 1 cup crushed pineapple, drained
  • 2 cups grated carrots
  • 1 cup walnuts, chopped and lightly floured
  • 1/2 cup raisins, lightly floured

For the Frosting:

  • 250g cream cheese
  • 2 cups confectioner’s sugar
  • 2 tablespoons butter
  • 1 teaspoon vanilla

To Assemble (optional):

  • Chopped toasted walnuts
  • Dehydrated diced pineapples
  • Dehydrated carrot ribbons
  • Toasted coconut

Instructions

For the Cake:

Preheat oven to 350หšF (175หšC) and line a round cake pan with parchment paper. In a mixing bowl, place the flour, baking powder, baking soda, salt, and cinnamon. Mix well and set aside. In another large mixing bowl, mix the oil, the sugar and the aquafaba or applesauce. Add the pineapple, carrots, walnuts and raisins, and mix well. Add the flour mixture slowly, incorporating well as you go. Place the mixture in the round cake pan, transfer to the oven and bake for 1 hour and 10 minutes, or until a toothpick inserted in the middle of the cake comes out clean. Remove from the oven, let rest in the pan, until cooled. Remove from the pan, let cool completely. The cake is then ready to frost.

For the Frosting:

Beat the cream cheese and butter together into a cream. Add the confectioner’s sugar, 1/2 cup at a time, and integrate as you go. Add the vanilla, blend until you obtain a smooth consistency. Frost the cake, decorate to your taste and enjoy. Bon appรฉtit!

  • 2 tasses de carottes rรขpรฉes

  • 250g de fromage ร  la crรจme vรฉgรฉ

Instructions

Pour le gรขteau:

Prรฉchauffer le four ร  350หšF (175หšC) et recouvrir un moule rond de papier parchemin. Dans un bol ร  mรฉlanger, placer la farine, la poudre ร  pรขte, le bicarbonate de soude, le sel et la cannelle. Bien mรฉlanger et rรฉserver. Dans un autre grand bol, mรฉlanger l’huile, le sucre et l’aquafaba ou la compote de pomme. Ajouter les ananas, les carottes, les noix, et les raisins. Mรฉlanger. Ajouter le mรฉlange sec un peu ร  la fois, en incorporant aprรจs chaque addition. Verser le mรฉlange dans le moule ร  gรขteau, placer au four et cuire pendant une heure 10 minutes, ou jusqu’ร  ce qu’un cure-dents insรฉrรฉ au centre du gรขteau en ressorte propre. Retirer du four et laisser refroidir dans le moule. Retirer du moule et laisser refroidir complรจtement. Lorsque le gรขteau est complรจtement refroidi, il est temps de le glacer.

Pour le glaรงage:

Battre le fromage ร  la crรจme et le beurre en crรจme. Ajouter le sucre ร  glacer une demie tasse ร  la fois, et bien incorporer. Ajouter la vanille et battre jusqu’ร  l’obtention d’un glaรงage crรฉmeux. Glacer le gรขteau et dรฉvorer. Bon appรฉtit!

Poor Man’s Pudding

Poor Man’s Pudding, or pouding chรดmeur as it was originally known, is a quintessential French Canadian dessert. It originated in the Belle Province early during the Great Depression and can be literally translated by “pudding of the unemployed man”. It was actually created by female factory workers. This recipe for the Poor Man’s Pudding comes from my mama’s recipe vault. I can remember eating this scrumptious dessert throughout my childhood. It is so easy to make and satisfying, I can see why there was often a pan at home. It also requires ingredients that you probably already have on hand, so you could decide to make this, like… right now! I hope you enjoy this recipe!

Preheat oven to 200หšC (400หšF) and grease a square baking pan (8-in x 8-in). In a large mixing bowl, sift flour and baking powder. In another bowl, beat the butter and sugar into a cream. Add the aquafaba, the milk and the vanilla extract. Mix until you get a smooth consistency. Add the dry ingredients (flour and baking powder) and mix just enough to combine. Whisk the sauce ingredients directly in the bottom of the baking pan until well-combined. Using a spoon, place dollops of the dough on top of the sauce. Place in the oven and bake for approximately 35 minutes. Take out, let cool slightly and enjoy. Bon appรฉtit!

Date and Coconut Cake

This Date and Coconut Cake falls right on time for family gatherings. It’s extremely soft and the dates make it rich and flavorful. After cooking the cake, we add a decadent topping of coconut and brown sugar, and put it to broil until it’s nice and bubbly. This truly takes it over the top.

This cake is from my childhood. I found this recipe in my mom’s many, many hand written recipe notebooks. Originally named gรขteau Reine Elizabeth in French, this cake is a well-known cake by all French Canadians. I decided to change the name, for obvious reasons. Another thing to note, I use aquafaba in lieu of eggs. I believe this is what makes my cakes so soft and moist. Trust me, this cake will be a hit at the dessert table!

For the Cake:

  • 1 cup dates, without the seeds, chopped
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • 1/4 cup plant butter (plus a little more to grease the pan)
  • 3 tablespoons aquafaba (chickpea juice)
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cup flour
  • 1 teaspoon baking powder

For the Glaze:

  • 3/4 cup brown sugar
  • 3/4 cup unsweetened shredded coconut
  • 1/2 cup plant butter
  • 1/3 cup unsweetened coconut condensed milk

Instructions

Preheat the oven to 350หšF (180หšC). Line the bottom of a 10-inch (25cm) spring-form pan or a 9-in (23cm) square baking pan with parchment paper. Butter and flour the sides.

In a small bowl, place the dates and cover with the boiling water. Add the baking soda and mix well. Set aside while you prepare the rest of the batter.

In a large mixing bowl, beat the butter into a cream. Add the aquafaba, the sugar and the vanilla extract and mix well. In a second bowl, whisk the flour and the baking powder. Add to the butter and aquafaba mixture, and mix well. Add the dates along with their soaking water. Mix well and place the cake batter in the baking pan. Transfer to the oven and bake for 25-30 minutes, until a toothpick inserted in the middle of the cake comes out clean.

While the cake bakes, place all the glaze ingredients in a small saucepan and bring to a boil. Lower the heat and simmer gently for 2 minutes.

When the cake is ready, take out of the oven and put the oven on “broil”. Top the cake with the glaze and place back in the oven 2-3 minutes, making sure to watch to prevent burning. Take out the oven, let cool and remove from the pan. Slice and enjoy. Bon appรฉtit!

Ce gรขteau aux dates et coconut est en fait la version vรฉgรฉtalienne du fameux Reine-Elizabeth. J’ai changรฉ le nom, pour des raisons รฉvidentes, mais je me suis vraiment inspirรฉ de la recette de ma maman. L’utilisation d’aquafaba au lieu des oeufs rend ce gรขteau ultra moelleux et le glaรงage, ajoutรฉ ร  la toute fin, lui donne une texture croustillante et mรฉmorable.

  • 1 tasse d’eau bouillante
  • 1 c. ร  thรฉ de bicarbonate de soude
  • 1/4 tasse de beurre vรฉgรฉtalien (et un peu plus pour graisser le moule)
  • 3 c. ร  soupe d’aquafaba (jus de pois chiches)
  • 1 tasse de cassonade
  • 1 c. ร  thรฉ d’extrait de vanille pur
  • 1 1/2 tasse de farine
  • 1 c. ร  thรฉ de poudre ร  pรขte

Pour le glaรงage:

  • 3/4 tasse de cassonade
  • 3/4 tasse de coconut rรขpรฉ sans sucre ajoutรฉ
  • 1/2 tasse de beurre vรฉgรฉtalien
  • 1/3 tasse de lait de coconut condensรฉ sans sucre ajoutรฉ

Instructions

Prรฉchauffer le four ร  350หšF (180หšC). Recouvrir le fond d’un moule ร  gรขteau de 10 pouces (25cm) ou d’un moule carrรฉ de 9 pouces (23cm) avec du papier parchemin. Graisser et enfariner les rebords.

Dans un bol moyen, dรฉposer les dates et recouvrir de l’eau bouillante. Ajouter le bicarbonate de soude et bien mรฉlanger. Laisser reposer.

Dans un grand bol ร  mรฉlanger, dรฉfaire le beurre en crรจme. Ajouter l’aquafaba, la cassonade et l’extrait de vanille. Bien mรฉlanger. Dans un second bol, tamiser la farine et la poudre ร  pรขte. Ajouter le mรฉlange de farine au mรฉlanger de beurre et cassonade. Bien mรฉlanger. Ajouter les dates ainsi que l’eau de trempage, et mรฉlanger jusqu’ร  l’obtention d’un mรฉlange homogรจne. Dรฉposer le mรฉlange dans le moule et cuire au four pendant 23 ร  30 minutes, jusqu’ร  ce qu’un cure-dents insรฉrรฉ au milieu du gรขteau en ressorte propre.

Pendant que le gรขteau cuit, prรฉparer le glaรงage. Mรฉlanger tous les ingrรฉdients dans une petite casserole. Porter ร  รฉbullition, rรฉduire le feu et laisser mijoter doucement pendant 2 minutes.

Lorsque le gรขteau est cuit, le retirer du four et placer le four ร  “broil”. Recouvrir le gรขteau du glaรงage et remettre au four pendant 2 ร  3 minutes, en s’assurant qu’il ne brรปle pas. Retirer du four, laisser refroidir et retirer du moule. Couper et dรฉguster. Bon appรฉtit!

This four-ingredient strawberry crumble is also guilt-free. Only three tablespoons of maple syrup as a sweetener will bring you to crumble kingdom. This recipe can be made with any seasonal fruit, so it is also very versatile.

We are currently in Canada, and we have to be in quarantine for fourteen days. As we are in an Airbnb, supplies are limited. I didn’t want to buy a lot of baking goods, so I had to make due with what I had on hand. This led me to the conclusion that we overcomplicate our desserts, and use more sugar than required, especially when fruits are at their prime. I hope you enjoy this guilt-free strawberry crumble! Guilt-Free Strawberry Crumble

  • 16 oz strawberries, hulled and cut in half (hold 4 strawberries to decorate)
  • 2 1/2 cups oats
  • 4 tablespoons coconut oil
  • 3 tablespoons maple syrup

Instructions

Place the strawberries in a medium saucepan, and add 1/4 cup of water. Bring to a boil, reduce the heat, and simmer until you get a thick compote, about 10 minutes. Remove from the heat and let cool.

Preheat the oven to 350หš. In a medium mixing bowl, place the oats, the coconut oil, and the maple syrup. Mix until well combined. Place half of the oats mixture at the bottom of an oven-proof baking pan, pour the strawberry mixture on top and spread evenly. Add the rest of the oats on top, and decorate with the four sliced strawberries. Place in the oven for 30 minutes or until the top is nice and golden. You can garnish with some lemon zest for an extra zing, but that is not necessary.

  • 16 onces de fraises, รฉqueutรฉes et coupรฉes en deux (conserver 4 fraises tranchรฉes mince pour dรฉcorer)
  • 2 1/2 tasses de flocons d’avoine
  • 4 c. ร  soupe d’huile de coconut
  • 3 c. ร  soupe de sirop d’รฉrable

Instructions

Placer les fraises dans une casserole moyenne avec 1/4 tasse d’eau. Porter ร  รฉbullition, rรฉduire le feu, et laisser mijoter 10 minutes, jusqu’ร  l’obtention d’une compote. Retirer du feu et laisser refroidir.

Prรฉchauffer le four ร  350หš. Dans un bol moyen, placer les flocons d’avoine, l’huile de coconut, et le sirop d’รฉrable. Bien mรฉlanger. Placer la moitiรฉ du mรฉlange dans le fond d’un plat de cuisson allant au four. Dรฉposer la compote de fraises, et recouvrir du reste du mรฉlange de flocons d’avoine. Garnir des quatre fraises tranchรฉes. Placer au four 30 minutes ou jusqu’ร  ce que les flocons d’avoine soient bien dorรฉs. Vous pouvez dรฉcorer de zeste de citron, si dรฉsirรฉ, mais ce n’est pas nรฉcessaire.

Banana Bread

  • 1/2 cup butter
  • 1 cup sugar
  • 6 tablespoons aquafaba (the liquid from a can of chickpeas, this will replace the eggs)
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/2 cup plant milk
  • 1/2 teaspoon pure vanilla extract
  • 3 very ripe bananas, mashed
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon

Instructions

Preheat oven to 350หš.

In a medium bowl, place the flour, the baking powder, the baking soda, and the salt. Mix well. In a large bowl, beat the butter into a cream. Add the sugar. Add the aquafaba and whisk. Slowly incorporate the flour mixture, adding some of the milk after each addition, until all incorporated. Add the vanilla extract and the mashed bananas. Mix well. Transfer to four mini bread pans (3×6) or two regular 5×7 bread pans, lined with parchment paper. In a small bowl, mix the brown sugar and the cinnamon. Spread over the batter and place the pans in the oven. Bake for 25 minutes (or 50 minutes for the regular bread pans), or until a toothpick inserted in the middle of the loaves comes out clean. Remove from the oven and let cool 10 minutes. Remove the breads from the pans and let cool 20 minutes more. Bon appรฉtit!

  • 1/2 c. ร  thรฉ d’extrait de vanille pur
  • 3 bananes bien mรปres, pilรฉes
  • 1/4 tasse de cassonade
  • 1/2 c. ร  thรฉ de cannelle

Instructions

Prรฉchauffer le four ร  350หš.

Dans un moyen bol, placer la farine, la poudre ร  pรขte, le soda ร  pรขte, et le sel. Bien mรฉlanger. Dans un grand bol, dรฉfaire le beurre en crรจme. Ajouter le sucre et battre. Ajouter l’aquafaba et battre. Incorporer en รฉtapes le mรฉlange de farine, en ajoutant du lait aprรจs chaque addition, jusqu’ร  ce que tout soit incorporรฉ. Ajouter l’extrait de vanille et les bananes. Bien mรฉlanger. Placer dans quatre mini moules ร  pain de 3 1/2 x 6, prรฉalablement tapissรฉs de papier parchemin, ou dans deux moules ร  pain rรฉguliers de 5×7.

Dans un petit bol, mรฉlanger la cassonade et la cannelle. ร‰tendre sur le mรฉlange aux bananes. Placer les moules au four et cuire pendant 25 minutes (ou 50 minutes pour les moules ร  pain rรฉguliers), ou jusqu’ร  ce qu’un cure-dents insรฉrรฉ au centre du moule en ressorte propre. Retirer du four et laisser reposer 10 minutes. Retirer les pains des moules et laisser reposer pour 20 minutes de plus. Bon appรฉtit!

There’s nothing like nicecream on a Sunday morning. The kids can choose the flavor, and each of us garnishes with different toppings. They like theirs garnished simply with oats. I enjoy using different things I have on hand for my toppings. This morning, to the oats I added coconut bacon that I made yesterday, as well as some frozen wild blueberries. The sweet-salty combo is out of this world. For a different twist, I also like this Matcha Nicecream with Pistachio Chewy Bites.

  • 6 bananas, peeled, cut in thirds and frozen overnight
  • 1/2 cup to 1 cup plant milk
  • 1 teaspoon blue spirulina, beetroot, maqui, or goji berry powder, for color OR simply add 1/2 teaspoon pure vanilla extract, for a vanilla nicecream

Instructions

Put all the ingredients in a high speed blender and blend, adding more plant milk as necessary to achieve the desired consistency. Garnish to your heart’s content!

Matcha Nicecream with Pistachio Chewy Bites

Ingredients

  • 4 frozen bananas*
  • 2 teaspoons matcha powder
  • 1/31/2 cup plant milk or coconut water
  • 4 Pistachio Chewy Bites, chopped (or chopped pistachios)
  • Seasonal fruits, chopped (optional)

Instructions

Place the bananas in a blender or food processor. Process until the bananas start to break down. Add the matcha powder and the milk, and blend until completely smooth. Transfer to serving bowls, garnish with fresh fruits (mandarins were in season at the time of the picture) and chopped Pistachio Chewy Bites (or pistachios), and enjoy!

*To freeze bananas to make nicecream,ย  start with really ripe bananas. Break them up in chunks and place the chunks in a freezer-grade ziptop bag. I always have 3-4 large ziptop bags in my freezer loaded with bananas, ready for nicecream.

They are delightful and you can adapt the filling to the seasons. Date squares are the perfect Holiday treat. You can serve them at your next party or bring them to a potluck. They are so festive. And I say famous, because even Oprah had them!

Ingredients

  • 2 cups dates, chopped
  • 1 cup plus 2 tablespoons water
  • 1 1/2 cup brown sugar, divided
  • 1 teaspoon corn starch
  • 1/4 teaspoon vanilla extract
  • 1 1/4 cup old fashioned oats
  • 1 cup butter
  • 1 1/2 cup flour
  • 1/4 teaspoon baking soda
  • Pinch of sea salt

Instructions

Preheat the oven to 350หš. In a small bowl, mix the 2 tablespoons water and the corn starch. Set aside. Bring one cup of water and 1/2 cup of brown sugar to a low boil in a medium saucepan. Reduce the heat to medium. Add the dates and the corn starch mixture. Keep simmering until the mixture thickens, about 6-8 minutes. Turn off the heat and add the vanilla extract. Mix well.

Beat the butter into a cream. Add 1 cup of brown sugar, the flour, the baking soda, the salt, and the oatmeal, and mix well. Spread half of the mixture at the bottom of an 8ร—8 baking dish lined with parchment paper. Compact well. Add the date mixture on top, and top with the rest of the oatmeal mixture (do not press down on the top as you want it to look like a fluffy crumble). Place in the oven for 25-30 minutes, or until golden on top. Let cool on a rack for about an hour. Cut in squares and eat them all! Bon appรฉtit!

  • 1 c. ร  thรฉ de fรฉcule de maรฏs
  • 1/4 c. ร  thรฉ d’extrait de vanille pur
  • 1 1/4 tasse de flocons d’avoine ร  l’ancienne
  • 1 tasse de beurre
  • 1 1/2 tasse de farine
  • 1/4 c. ร  thรฉ de bicarbonate de soude
  • Pincรฉe de sel de mer

Instructions

Prรฉchauffer le four ร  350หš. Dans un petit bol, mรฉlanger 2 c. ร  soupe d’eau avec la fรฉcule de maรฏs. Rรฉserver. Porter 1 tasse d’eau et 1/2 tasse de cassonade ร  รฉbullition dans une casserole moyenne. Rรฉduire le feu ร  moyen et ajouter les dates et le mรฉlange de fรฉcule de maรฏs. Mรฉlanger et laisser mijoter jusqu’ร  ce que le mรฉlange รฉpaississe, environ 6 ร  8 minutes. Retirer du feu et ajouter l’extrait de vanille. Bien mรฉlanger et laisser refroidir environ 30 minutes.

Dรฉfaire le beurre en crรจme. Ajouter 1 tasse de cassonade, la farine, le bicarbonate de soude, le sel de mer et les flocons d’avoine. Bien mรฉlanger avec les mains. ร‰tendre environ la moitiรฉ du mรฉlange dans le fond d’un moule de 8 pouces par 8 pouces, prรฉalablement recouvert de papier parchemin. Presser pour bien compacter. Ajouter le mรฉlange de dates et recouvrir du reste du mรฉlange de croustade (ne pas presser le dessus). Placer au four pendant 25 ร  30 minutes, jusqu’ร  ce que le dessus soit dorรฉ. Retirer du four et laisser refroidir pendant 1 heure. Couper en carrรฉs et dรฉvorer! Bon appรฉtit!

When I was little, my mom would buy those individual angel cakes, add ice cream and strawberry compote to create strawberry shortcake. It was my favorite dessert. It is with great pleasure that I recreated a plant-based version in this Decadent Strawberry Shortcake.

For the ice cream portion, I simply replaced regular ice cream by coconut, dairy-free ice cream. We like the Coconut Bliss brand. For a different twist on the regular strawberry coulis, I tried Heidi Swansonโ€™s Roasted Strawberries recipe, which I doubled.

For the Classic White Cake:

  • 3/4 cup plus 1 tablespoon non-dairy milk
  • 1 teaspoon apple cider vinegar
  • 1 cup plus 2 tablespoons cake flour
  • 2 tablespoons tapioca or arrowroot flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup plus 3 tablespoons sugar
  • 1 tablespoon vegetable oil
  • 1 tablespoon unrefined coconut oil
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1/8 teaspoon lemon extract

For the Roasted Strawberry Coulis:

  • 1 lb strawberries, hulled and cut in half (in quarters if they are big)
  • 1/4 cup pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon balsamic vinegar

Instructions

For the Classic White Cake:

Preheat the oven to 350หš. Lightly spray or grease an 8-inch round cake pan with coconut oil spray or vegetable oil. Dust it with flour, removing excess.

In a small bowl, whisk the non-dairy milk and apple cider vinegar. Let sit for 5 minutes.

In a medium mixing bowl, whisk together the cake flour, the tapioca flour, the baking powder and the baking soda. Set aside. In another mixing bowl, whisk together the sugar, vegetable oil, coconut oil, vanilla extract, salt and lemon extract. Whisk in the non-dairy milk mixture into this bowl until well incorporated. Add the dry ingredients to the bowl, and whisk together until just incorporated. Do not over mix.

Pour the mixture into the cake pan, and tap on its sides with a spoon to remove any bubbles. Bake for 18-22 minutes or until a toothpick comes out clean. Cool for about an hour and transfer to a cake rack to cool completely. You can store the cake in an air-tight container at room temperature for about a week.

For the Roasted Strawberry Coulis:

Place a rack in the middle of the oven. Line a rimmed baking sheet with parchment paper.

In a mixing bowl, whisk the maple syrup, olive oil and salt. Add the strawberries and gently toss to coat the berries. Arrange the strawberries in a single layer on the baking sheet. Roast for approximately 40 minutes, making sure the strawberries donโ€™t burn, but long enough that the juices thicken.

When done, transfer the berries into a small bowl and stir in the balsamic vinegar. You can keep the strawberries for up to a week in the refrigerator.

For the Assembly:

Cut the cake into small bite-size squares. Place on a shallow bowl. Add some dairy-free ice cream and top with the roasted strawberries. Garnish with mint, if desired. Bon appรฉtit!

Pour le gรขteau blanc classique:

  • 3/4 tasse plus 1 c. ร  soupe de lait
  • 1 c. ร  thรฉ de vinaigre de cidre
  • 1 tasse plus 2 c. ร  soupe de farine ร  gรขteau
  • 2 c. ร  soupe de farine de tapioca ou de marante
  • 1 1/2 c. ร  thรฉ de poudre ร  pรขte
  • 1/2 c. ร  thรฉ de soda ร  pรขte
  • 1/4 tasse plus 3 c. ร  soupe de sucre
  • 1 c. ร  soupe d’huile vรฉgรฉtale
  • 1 c. ร  soupe d’huile de coconut
  • 2 c. ร  thรฉ d’extrait de vanille pur
  • 1/4 c. ร  thรฉ de sel de mer
  • 1/8 c. ร  thรฉ d’extrait de citron pur

Pour le coulis de fraises rรดties:

  • 1 livre de fraises, sans les queues et coupรฉes en deux (ou en quatre si elles sont grosses)
  • 1/4 tasse de sirop d’รฉrable
  • 2 c. ร  soupe d’huile d’olive
  • 1/2 c. ร  thรฉ de sel de mer fin
  • 1 c. ร  thรฉ de vinaigre balsamique

Instructions

Pour le gรขteau blanc classique:

Prรฉchauffer le four ร  350หš. Graisser un moule ร  gรขteau rond de 8 pouces avec de l’huile de coconut ou vรฉgรฉtale. Saupoudrer de farine et retirer l’excรจs.

Dans un petit bol, fouetter le lait et le vinaigre de cidre. Laisser reposer pendant 5 minutes.

Dans un bol moyen, fouetter la farine ร  gรขteau, la farine de tapioca, la poudre ร  pรขte et le soda ร  pรขte. Rรฉserver. Dans un autre bol ร  mรฉlanger, mรฉlanger le sucre, l’huile vรฉgรฉtale, l’huile de coconut, l’extrait de vanille, le sel de mer, et l’extrait de citron. Incorporer au fouet le lait et vinaigre de cidre. Ajouter les ingrรฉdients secs au bol ร  mรฉlanger, et combiner jusqu’ร  ce que les ingrรฉdients soient bien intรฉgrรฉs. Ne pas trop mรฉlanger.

Transfรฉrer le mรฉlange ร  gรขteau dans le moule et taper sur les rebords pour retirer les bulles d’air. Cuire au four pendant 18 ร  22 minutes, ou jusqu’ร  ce qu’un cure-dent insรฉrรฉ au milieu en ressorte propre. Laisser refroidir pendant 60 minutes et transfรฉrer ensuite sur un support ร  gรขteau pour laisser refroidir entiรจrement. Vous pouvez conserver le gรขteau dans un contenant hermรฉtique pendant une semaine.

Pour le coulis de fraises rรดties:

Placer la grille dans le milieu du four. Placer un papier parchemin sur une tรดle de cuisson.

Dans un bol ร  mรฉlanger, fouetter le sirop d’รฉrable, l’huile d’olive et le sel de mer. Ajouter les fraises et remuer dรฉlicatement. Placer les fraises sur la tรดle de cuisson. Mettre au four et rรดtir pendant environ 40 minutes. S’assurer que les fraises ne brรปlent pas, mais rรดtir assez longtemps pour que la sauce รฉpaississe.

Transfรฉrer les fraises dans un bol et incorporer le vinaigre balsamique. Le coulis peut รชtre conserver au rรฉfrigรฉrateur, dans un contenant hermรฉtique, pendant une semaine.

Pour l’assemblage:

Couper le gรขteau en bouchรฉes. Placer dans un bol. Ajouter de la crรจme glacรฉe et garnir du coulis de fraises rรดties. Garnir de menthe fraรฎche, si dรฉsirรฉ. Bon appรฉtit!
