Brazil Nut Topping

I have been using this Brazil Nut Topping on pasta, pizza, and salads. It is reminiscent of parmesan, but tastes more earthy. Furthermore, Brazil nuts are one of the richest sources of selenium, an essential mineral with antioxidant properties. They also contain plenty protein and healthful fats. The addition of fresh garlic to this mixture makes this topping fragrant and versatile, perfect to perk up a pasta dish or add crunch to a salad. Try it and let me know what you think!

Ingredients

Scale
  • 1/3 cup Brazil nuts
  • 2 cloves garlic, chopped
  • 2 tablespoons hemp seeds
  • 1 tablespoon nutritional yeast
  • 1 teaspoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon sea salt

Instructions

Place all the ingredients in a small food processor and pulse 6-7 times until homogenous. Use on what you want. Bon appétit!

Garniture aux noix du Brésil

Ingredients

Scale
  • 1/3 tasse de noix du Brésil
  • 2 gousses d’ail, hachées
  • 2 c. à soupe de graines de chanvre
  • 1 c. à soupe de levure alimentaire
  • 1 c. à thé d’huile d’olive
  • 1/4 c. à thé de poudre d’ail
  • 1/2 c. à thé de sel de mer

Instructions

Placer tous les ingrédients dans le bol d’un petit robot culinaire. Pulser 6 à 7 fois jusqu’à l’obtention d’une texture homogène. Bon appétit!

The toasted pistachios in this Zucchini Noodles with Avocado and Mint Sauce add a nice crunchiness to the zucchini, and the avocado makes it so creamy, it’s almost a dream. Just make sure to prepare the avocado sauce close to serving time, to avoid it turning brown. You can, however, prepare your zucchinis ahead of time, and keep them refrigerated.

Zucchini Noodles with Avocado and Mint Sauce

Ingredients

Scale
  • 3 large zucchinis, in noodles or in thin juliennes
  • 2 large avocados, peeled and pitted
  • 2 tablespoons shallots, minced
  • 2 tablespoons fresh mint, minced
  • Juice of 1/2 to 1 lemon (to taste)
  • 1 cup green peas, fresh or frozen
  • 1/3 cup pistachios, toasted
  • Salt and pepper, to taste
  • Fresh mint, to serve

Instructions

In a medium mixing bowl, mash the avocados with a fork. Add the shallots, mint, lemon juice, and salt and pepper to taste. Mix with the spiralized or julienned zucchinis. Add the peas and stir delicately. Serve into shallow bowls and garnish with pistachios and fresh mint. Bon appétit!

Nouilles de zucchini avec sauce avocat et menthe

Ingredients

Scale
  • 3 gros zucchinis, en nouilles ou en minces juliennes
  • 2 gros avocats, pelées, sans le noyau
  • 2 c. à soupe d’échalotes françaises, émincées
  • 2 c. à soupe de menthe fraîche, émincée
  • Jus de 1/2 à 1 citron (au goût)
  • 1 tasse de pois verts, frais ou surgelés
  • 1/3 tasse de pistaches, rôtis
  • Sel de mer et poivre, au goût
  • Garniture: menthe fraîche

Instructions

Écraser les avocats avec une fourchette dans un bol moyen. Ajouter l’échalote, la menthe, le jus de citron, et le sel de mer et le poivre. Ajouter les nouilles de zucchini et les pois verts, et mélanger délicatement. Servir garni de pistaches rôtis et de menthe fraîche. Bon appétit!
