Ingredients
- 1 to 1 1/2 cup of fresh water (I never use tap water to cook)
- 1 large zucchini, roughly chopped
- 2 tomatoes, roughly chopped
- 4 stalks celery, roughly chopped
- 2 large carrots, roughly chopped
- 1 large golden beet, roughly chopped
- 3 Medjool dates, pitted
- 1 clove garlic, smashed
- 1 small shallot, roughly chopped
- 1/2 cup raw cashews, soaked
- 1” piece of fresh ginger, roughly chopped (optional, but so good)
- 1 seeded jalapeรฑo, roughly chopped (optional)
- 5–6 whole allspice berries
- 1 1/2 teaspoon sea salt
- 1/2 teaspoon pepper
- 1/2 cup cold-pressed olive oil
Instructions
In a high-speed blender, put all the ingredients except the olive oil. Blend for one minute, until smooth and creamy. With the blender on low speed, add the olive oil in a slow stream and blend for an additional minute. That is it, folks!

- 1 ร 1 1/2 tasse d’eau fraรฎche (je n’utilise jamais l’eau courante pour la cuisine vivante)ย
- 1 gros zucchini, hachรฉ grossiรจrement
- 2 tomates, hachรฉes grossiรจrement
- 4 branches de cรฉleri, hachรฉes grossiรจrement
- 2 grosses carottes, hachรฉes grossiรจrement
- 1 grosse betterave jaune, hachรฉe grossiรจrement
- 3 dates medjool, sans le noyau
- 1 gousse d’ail, รฉcrasรฉe
- 1 petite รฉchalote franรงaises, hachรฉe grossiรจrement
- 1/2 tasse de noix de cajou, trempรฉes, rincรฉes et รฉgouttรฉes
- 1 bout de gingembre frais de 1 pouce, hachรฉ grossiรจrement (optionnel, mais si bon)
- 1 piment jalapeรฑo, sans les graines, hachรฉ (optionnel)
- 5–6 grains de piment de la Jamaรฏque
- 1 1/2 c. ร thรฉ de sel de mer
- 1/2 c. ร thรฉ de poivre
- 1/2 tasse d’huile d’olive pressรฉe ร froid
Instructions
Dรฉposer tous les ingrรฉdients, sauf l’huile d’olive, dans un mรฉlangeur haute vitesse. Mรฉlanger pendant 1 minute. Avec le mรฉlangeur ร la plus basse vitesse, ajouter l’huile d’olive en filet, et mรฉlanger une minute de plus, jusqu’ร l’obtention d’une soupe onctueuse. C’est tout, les amis!
