15-Minute Avocado-Zucchini Sandwich

Make this 15-Minute Avocado-Zucchini Sandwich once and be hooked forever. The kids and I can’t stop eating this amazing sandwich and I wanted to share, because we believe it’s a wonderful twist on the avocado toast. You’ll need very few ingredients and, more importantly, very little time. Try it for lunch, serve it for brunch, or make your life extra easy on a weeknight. Feel free to switch out the bagel for your favorite bread or baguette.

Ingredients

Scale
  • 4 everything bagels
  • 2 ripe avocados
  • 1 small shallot, minced
  • 2 juicy limes
  • 2 tablespoons cilantro, minced
  • 1/2 jalapeรฑo pepper, minced
  • 2 zucchinis
  • Cream cheese, optional (I absolutely LOVE the Violife brand)

Instructions

Cut the zucchinis in ribbons, salt generously and let drain in a colander for 10 minutes. Rinse and drain. Spread on kitchen towels to let dry.

Meanwhile, make the guacamole. Mash the avocados, and add the shallot, the lime juice, the cilantro and the jalapeรฑo. Mix well.

Toast your bagels, place some guacamole on one side and cream cheese on the other. Garnish with some zucchini ribbons and close. Now, try to eat this only once in your life! Impossible. Bon appรฉtit!

Ingredients

Scale
  • 4 bagels tout garnis
  • 2 avocats mรปrs
  • 1 petite รฉchalote franรงaise, รฉmincรฉe
  • 2 limes bien juteuses
  • 2 c. ร  soupe de coriandre fraรฎche, รฉmincรฉe
  • 1/2 piment jalapeรฑo, รฉmincรฉ
  • 2 zucchinis
  • Fromage ร  la crรจme (en option – j’adore la marqueย Violife)

Instructions

Couper les zucchinis en rubans ร  l’aide d’un รฉplucheur ร  lรฉgumes. Saler gรฉnรฉreusement et laisser รฉgoutter dans une passoire pendant 10 minutes. Rincer et รฉgoutter. ร‰tendre les rubans et laisser sรฉcher sur un linge de cuisine.

Pendant ce temps, faire la guacamole. ร‰craser les avocats. Ajouter l’รฉchalote, le jus de lime, la coriandre et le piment jalapeรฑo. Bien mรฉlanger.

Rรดtir les bagels. ร‰tendre de la guacamole sur un cรดtรฉ et du fromage ร  la crรจme sur l’autre. Garnir de rubans de zucchinis, fermer et savourer. Bon appรฉtit!
