When it’s pumpkin season, treat yourself to this Pumpkin, Fennel and Fig Tagine, a Moroccan-inspired dish that’s large in comfort and taste. A tagine is a stew traditionally cooked in earthenware pots of the same name. I love how figs lend themselves so well to the spicy-sweet taste of this sublime North African dish.

Pumpkin, Fennel and Fig Tagine

Ingredients

  • 2 tablespoons olive oil
  • 1 small sugar or pie pumpkin, peeled and diced (about 3 cups)
  • 1 fennel bulb, trimmed and sliced thin
  • 1 large onion, diced
  • 3 cloves garlic, peeled and left whole
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ยฝ teaspoon ground cinnamon
  • ยฝ teaspoon ground black pepper
  • 1 cup tomato, diced
  • 2 cups vegetable broth
  • 1 cup dried figs
  • ยฝ teaspoon maple syrup (optional)
  • 1 can chickpea, rinsed and drained
  • Sea salt, to taste
  • To serve: cooked couscous, toasted almond, fresh cilantro

Instructions

Heat the oil in a 3-qt pot over medium heat. Itโ€™s important not to use a pot too big, as you need all the ingredients cozy and close together, as if you would be using an authentic tagine clay pot.

Add the pumpkin, fennel, onion, garlic, ginger, and 2 teaspoon sea salt. Bring to a simmer, reduce the heat, cover, and cook for 15 minutes, stirring occasionally so that the vegetables donโ€™t burn. The goal here is to create moisture, so that the vegetables get soft and aromatic, without browning.

Add the cumin, coriander, cinnamon, black pepper, tomato, vegetable broth, figs, and maple syrup. Bring the tagine to a boil, reduce the heat, and simmer, uncovered for 20-30 minutes, until the liquid has thickened and the vegetables are tender. About 5 minutes before the end of cooking, add the chickpeas. Mix well, taste and adjust seasonings, if necessary. Heat through. Serve over couscous and garnish with almonds and cilantro.

  • 2 c. ร  soupe d’huile d’olive
  • 1 petite citrouille sucrรฉe ou ร  cuisson, pelรฉe et coupรฉe en dรฉs (environ trois tasses)ย 
  • 1 bulbe de fenouil, parรฉ et tranchรฉ mince
  • 1 gros oignon, en dรฉs
  • 3 gousses d’ail, pelรฉes et entiรจres
  • 1 c. ร  soupe de gingembre frais, รฉmincรฉ
  • 1 c. ร  thรฉ de cumin moulu
  • 1 c. ร  thรฉ de coriandre moulue
  • ยฝ c. ร  thรฉ de cannelle moulue
  • ยฝ c. ร  thรฉ de poivre noir
  • 1 tasse de tomates, en dรฉs
  • 2 tasses de bouillon de lรฉgumes
  • 1 tasse de figues sรฉchรฉes
  • ยฝ c. ร  thรฉ de sirop d’รฉrable (en option)
  • 1 boรฎte de pois chiches, rincรฉs et รฉgouttรฉs
  • Sel de mer, au goรปt
  • Pour servir: couscous cuit, amandes grillรฉes et coriandre fraรฎche

Instructions

Chauffer l’huile dans une cocotte de 3-qt ร  feu moyen. Il est important de ne pas utiliser une casserole trop grande, les ingrรฉdients doivent รชtre bien tassรฉs afin de crรฉer de la vapeur.ย 

Ajouter la citrouille, le fenouil, l’oignon, l’ail, le gingembre et 2 c. ร  thรฉ de sel de mer. Baisser le feu et laisser mijoter, ร  couvert, pendant 15 minutes, en brassant quelques fois, pour que les lรฉgumes ne collent pas. Il est important de crรฉer de la vapeur, afin que les lรฉgumes ramollissent sans brunir.

Ajouter le cumin, la coriandre, la cannelle, le poivre noir, les tomates, le bouillon de lรฉgumes, les figues et le sirop d’รฉrable. Porter ร  รฉbullition, rรฉduire le feu et mijoter, ร  dรฉcouvert, pendant 20 ร  30 minutes, jusqu’ร  ce que le bouillon รฉpaississe et que les lรฉgumes soient tendres. Environ 5 minutes avant la fin de la cuisson, ajouter les pois chiches. Bien mรฉlanger, goรปter et ajuster les assaisonnements, au besoin, Servir sur du couscous cuit, garni d’amandes grillรฉes et de coriandre fraรฎche.

The Moroccan Carrot Salad recipe from the other day requires an ingredient called ras el hanout. Some people might wonder what that is, and some people might not be able to find it already made. Ras el hanout is a spice mixture originating in North Africa. It could be considered as the North African version of the Indian garam masala. Ras el hanout is associated mainly with Morocco, but it is also used in the neighboring countries.

You can find it in a spice jar in many grocery stores and speciality markets, but if not, or if you’re crazy like me and love to do these things from scratch, here is the recipe I’ve been using for a while. I’m not sure where it’s from or who gave it to me, but it sure tastes great. You could even go as far as grinding each individual spice before mixing them.

  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon turmeric
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon ground coriander seeds
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Instructions

Whisk everything together in a small bowl. You can keep this spice blend in an airtight container at room temperate, away from the light, for about a month. You can use it to flavor dressings, you can rub root vegetables before roasting them, you can stir into a couscous. There are so many possibilities for this complex and tasty spice mix.   • 3/4 c. ร  thรฉ de poivre noir, fraรฎchement moulu
  • 1/2 c. ร  thรฉ de poivre blanc, fraรฎchement moulu
  • 1/2 c. ร  thรฉ de graines de coriandre moulues
  • 1/2 c. ร  thรฉ de cayenne
  • 1/2 c. ร  thรฉ de piment de la Jamaรฏque moulu
  • 1/2 c. ร  thรฉ de muscade moulue
  • 1/4 c. ร  thรฉ de clou de girofle moulu

Instructions

Mรฉlanger tous les ingrรฉdients dans un petit bol. Conserve le mรฉlange d’รฉpices dans un contenant hermรฉtique au rรฉfrigรฉrateur pendant un mois. Vous pouvez l’utiliser dans une vinaigrette, pour assaisonner des lรฉgumes racines avant la cuisson au four, ou mรชme pour relever un couscous. Ce mรฉlange ร  รฉpices est vraiment versatile. Go ahead, finish the whole bowl! This Moroccan Spiced Carrot Salad is so good, even the kids asked for more. The sweetness brought in by the maple syrup mixes perfectly with the lingering cumin aroma.

It all started with some Fruit Bliss Agen plums. Fruit Bliss‘s fruits are simply delectable, it’s sometimes hard to use them for anything else than eat as is. But I was set on something no-cook for dinner. I had carrots on hand. I always have chickpeas and herbs, so it was decided. A Moroccan-inspired carrot salad with chickpeas, mint, and the delicious plums.

Moroccan Spiced Carrot Salad

Ingredients

  • 1 tablespoon cumin seeds
  • 1/2 teaspoon ras el hanoutย (homemade or store-bought)
  • 1/3 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon maple syrup
  • 1/8 teaspoon red pepper flakes
  • Salt, to taste
  • 4 cups shredded carrots (on a box grater or food processor)
  • 1 can chickpeas (15-ounce), rinsed and drained
  • 1 bag (5-ounce) dried plums, quartered (I used Fruit Bliss, they’re the best)
  • 1/4 cup fresh mint, chopped, plus more for garnish
  • 1/3 cup almond slices, toasted

Instructions

For the dressing, toast the cumin seeds in a dry skillet until aromatic and lightly browned, about 1-2 minutes. Transfer to a mortar and pestle and grind.

In a small bowl, combine the cumin seeds, ras el-hanout, olive oil, lemon juice, maple syrup, salt, and red pepper flakes.

In a large bowl, combine the shredded carrots, chickpeas, dried plums, and mint. Mix gently. Add in the vinaigrette, toss until evenly coated. You can serve immediately or cover and refrigerate until ready to eat. Before serving, garnish with the almond slices. Bon appรฉtit!

Salade de carottes aux รฉpices marocaines

  • 1 c. ร  soupe de graines de cumin
  • 1/2 c. ร  thรฉ de ras el hanout (fait maison ou achetรฉ)
  • 1/3 tasse d’huile d’olive
  • 3 c. ร  soupe de jus de citron frais
  • 1 c. ร  soupe de sirop d’รฉrable
  • 1/8 c. ร  thรฉ de flocons de chili
  • Sel de mer, au goรปt
  • 4 tasses de carottes rรขpรฉes
  • 1 boรฎte de pois chiches (15 onces), rincรฉs et รฉgouttรฉs
  • 5 onces de prunes sรฉchรฉes, coupรฉes en quatre
  • 1/4 tasse de menthe fraรฎche, รฉmincรฉe
  • 1/3 tasses d’amandes ciselรฉes, rรดties

Instructions

Pour la vinaigrette, faire rรดtir les graines de cumin dans une petite poรชle jusqu’ร  ce qu’elles soient aromatiques, environ 1 ร  2 minutes. Transfรฉrer dans un mortier et moudre ร  l’aide du pilon.

Dans un petit bol, mรฉlanger le cumin moulu, le ras el hanout, l’huile d’olive, le jus de citron, le sirop d’รฉrable, le sel de mer, et les flocons de chili.

Dans un grand bol, combiner les carottes rรขpรฉes, les pois chiches, les prunes sรฉchรฉes, et la menthe. Ajouter la vinaigrette et mรฉlanger dรฉlicatement. Vous pouvez manger immรฉdiatement ou placer au rรฉfrigรฉrateur jusqu’au moment de servir. Bon appรฉtit!
