Ingredients

Scale
  • 2 1/2 cups of water
  • 1 red bell pepper, seeded and chopped
  • 1 yellow or orange bell pepper, seeded and chopped
  • Kernels from 2 ears of corn (keep a little bit to decorate)
  • 2 cucumbers or 2 zucchinis, peeled and chopped
  • 1/4 cup shallots, chopped
  • 3 tablespoons fresh lime juice
  • 2 cloves of garlic
  • 1 teaspoon caraway seeds
  • 1 teaspoon Italian seasoning
  • 2 teaspoon sea salt
  • Pinch of pepper
  • Garnishes: fresh corn kernels, sliced green onion

Instructions

Mix all the ingredients in a high speed blender, until creamy. Serve garnished with fresh corn kernels and green onions. Bon appรฉtit!ย

  • 2 1/2 tasses d’eau fraรฎche
  • 1 poivron rouge, sans les graines, hachรฉ
  • 1 poivron orange ou jaune, sans les graines, hachรฉ
  • Grains de 2 รฉpis de maรฏs (conserver des grains pour dรฉcorer)
  • 2 concombres ou 2 zucchinis, pelรฉs et hachรฉs
  • 1/4 tasse d’รฉchalotes franรงaises, hachรฉes
  • 3 c. ร  soupe de jus de lime frais
  • 2 gousses d’ail
  • 1 c. ร  thรฉ de graines de carvi
  • 1 c. ร  thรฉ d’assaisonnement ร  l’italienne
  • 2 c. ร  thรฉ de sel de mer
  • Pincรฉe de poivre noir
  • Garnitures: grains de maรฏs, oignon vert tranchรฉ mince

Instructions

Mรฉlanger tous les ingrรฉdients dans un mรฉlangeur haute vitesse, jusqu’ร  l’obtention d’une soupe crรฉmeuse. Garnir de grains de maรฏs frais et d’oignon vert. Bon appรฉtit!

This Raw Cream of Vegetable Soup is not only smooth, it is also extra tasty, thanks to allspice and fresh ginger. There is so much to be said about a raw diet or a raw cleanse. I believe we all could use a little more “raw” in our lives. I created this soup with vegetables I had on hand, so nothing fancy here. The cashews add a creaminess to the soup and a healthy dose of selenium. Selenium not only boosts your immune system, but it is also said to help in the prevention of heart disease. Try this raw soup today along with the Broccolette Salad with Maple-Dijon Vinaigrette, for a fabulous, nutrient-dense meal.

  • 1 to 1 1/2 cup of fresh water (I never use tap water to cook)
  • 1 large zucchini, roughly chopped
  • 2 tomatoes, roughly chopped
  • 4 stalks celery, roughly chopped
  • 2 large carrots, roughly chopped
  • 1 large golden beet, roughly chopped
  • 3 Medjool dates, pitted
  • 1 clove garlic, smashed
  • 1 small shallot, roughly chopped
  • 1/2 cup raw cashews, soaked
  • 1” piece of fresh ginger, roughly chopped (optional, but so good)
  • 1 seeded jalapeรฑo, roughly chopped (optional)
  • 56 whole allspice berries
  • 1 1/2 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1/2 cup cold-pressed olive oil

Instructions

In a high-speed blender, put all the ingredients except the olive oil. Blend for one minute, until smooth and creamy. With the blender on low speed, add the olive oil in a slow stream and blend for an additional minute. That is it, folks!

  • 3 dates medjool, sans le noyau

  • 1/2 tasse de noix de cajou, trempรฉes, rincรฉes et รฉgouttรฉes
  • 1 bout de gingembre frais de 1 pouce, hachรฉ grossiรจrement (optionnel, mais si bon)
  • 1 piment jalapeรฑo, sans les graines, hachรฉ (optionnel)
  • 56 grains de piment de la Jamaรฏque
  • 1 1/2 c. ร  thรฉ de sel de mer
  • 1/2 c. ร  thรฉ de poivre
  • 1/2 tasse d’huile d’olive pressรฉe ร  froid

Instructions

Dรฉposer tous les ingrรฉdients, sauf l’huile d’olive, dans un mรฉlangeur haute vitesse. Mรฉlanger pendant 1 minute. Avec le mรฉlangeur ร  la plus basse vitesse, ajouter l’huile d’olive en filet, et mรฉlanger une minute de plus, jusqu’ร  l’obtention d’une soupe onctueuse. C’est tout, les amis!
