The secret to this Epic Coconut Curry Soup is in the broth. If you have a good broth, you can add whatever you want, and it’ll be a delight. Don’t skip on the simmering time, take it nice and slow. If anything, make the broth the day before, splitting your workload in half. You won’t regret it.

Epic Coconut Curry Soup

Ingredients

For the broth:

  • 3 tablespoons toasted sesame oil
  • 1/3 cup ginger, sliced in coins
  • 1 tablespoon fresh turmeric, sliced in coins
  • 1 head garlic, cloves sliced in half
  • 1 large onion, sliced thin
  • 6 tablespoons yellow curry paste
  • 2 quarts vegetable broth
  • 2 cans coconut milk
  • 2 tablespoons maple syrup
  • 2 tablespoons miso paste

For the garnishes:

  • Asian noodles of choice, cooked according to package directions (I really enjoy the “somen” noodles from Hakubaku)
  • Zucchini noodles
  • Large handfuls of spinach
  • 8 oz shiitake mushrooms, trimmed, sautรฉed in sesame oil and tamari
  • Green onions, sliced on the diagonal
  • Fresh cilantro
  • Toasted pumpkin seeds
  • Sambal oelek, to taste

Instructions

In a large soup pot, heat the sesame oil over medium-high heat. Add the ginger, turmeric, garlic, and onion, and sautรฉ, stirring often, until the onion starts to caramelize, about 5-7 minutes. Add the curry paste, mix well, and cook, stirring, until very fragrant, about 2-3 minutes. Add the vegetable broth, the coconut milk, and the maple syrup. Bring to a low boil, cover, reduce the heat and simmer for as long as you can. I recommend at least 45 minutes, but feel free to extend it to 90 minutes, for even more flavor.

Before serving, take out a cup of broth in a small bowl and add to it the miso paste. Mix well and put back in the pot. Stir. To serve, place the noodles and the zucchini noodles in a shallow bowl. Add the spinach to one side. Ladle some broth (with or without the onions/ginger/turmeric/garlic mixture) in the bowl, and top with the shiitake, green onions, fresh cilantro, pumpkin seeds, and sambal oelek.

Pour le bouillon:

  • 3 c. ร  soupe d’huile de sรฉsame grillรฉ
  • 1/3 tasse de gingembre frais, coupรฉ en rondelles
  • 1 c. ร  soupe de racine de curcuma frais, coupรฉe en rondelles
  • 1 tรชte d’ail, les gousses coupรฉes en deux
  • 1 gros oignon, coupรฉ en tranches minces
  • 6 c. ร  soupe de pรขte de cari jaune
  • 2 litres de bouillon de lรฉgumes
  • 2 boรฎtes de lait de coconut
  • 2 c. ร  soupe de sirop d’รฉrable
  • 2 c. ร  soupe de pรขte miso

Pour les garnitures:

  • Nouilles asiatiques au choix, cuites selon les directives sur l’emballage (j’aime bien les nouilles “somen” de Hakubaku)
  • Zoodles (spirales de zucchini)
  • Quelques poignรฉes d’รฉpinards frais
  • 8 oz de champignons shiitake, รฉqueutรฉs, sautรฉs dans l’huile de sรฉsame et la sauce tamari
  • Oignons verts, coupรฉs sur la diagonale
  • Coriandre fraรฎche
  • Graines de citrouilles grillรฉes
  • Sambal oelek, au goรปt

Instructions

Dans une marmite, chauffer l’huile de sรฉsame ร  feu moyen-รฉlevรฉ. Ajouter le gingembre, le curcuma, l’ail et l’oignon. Faire revenir, en brassant souvent, jusqu’ร  ce que l’oignon commence ร  prendre une couleur dorรฉe, environ 5 ร  7 minutes. Ajouter la pรขte de cari, brasser, et cuire, en brassant, 2 ร  3 minutes. Ajouter le bouillon de lรฉgumes, le lait de coconut et le sirop d’รฉrable. Porter ร  รฉbullition pour quelques secondes, couvrir, et mijoter le plus longtemps possible, au moins 45 minutes, jusqu’ร  90 minutes, pour plus de saveur. Avant de servir, retirer une tasse de bouillon dans une tasse ร  mesurer, ajouter la pรขte de miso, brasser, et retourner le tout dans la marmite. Mรฉlanger.

Pour servir, placer les nouilles et les zoodles dans une assiette creuse. Ajouter les รฉpinards. ร€ la louche, ajouter le bouillon (avec ou sans le mรฉlange oignons/ail/gingembre/curcuma) et garnir des champignons shiitake prรฉalablement sautรฉs, des oignons verts, de la coriandre fraรฎche, des graines de citrouille et du sambal oelek.

I adapted this Thai Coconut Curry Soup with Chickpeas and Potatoes from a recipe I found in Street Vegan, the great cookbook from the Cinnamon Snail food truck! The book oozes with imaginative and fun recipes like Chickpea “Crab” Cakes and Tequila Lime Tostones! You can always find inspiration by just leafing through the pages.

Yesterday, I had a taste for Thai soup. But this soup needed to be a one-pot meal, substantial enough to feed the kids at lunch. So after looking through what I had left in the fridge and the pantry (hello potatoes!), I browsed through Street Vegan and found exactly what I needed. This Thai Coconut Curry Soup with Chickpeas and Potatoes. The potatoes and the chickpeas bring the heartiness, while the deep Thai spices make this dish a keeper. The kids loved it with some quinoa on the side. The next day, they wanted some again, but with rice.

The recipe is simple and straightforward. I only switched out the agave nectar for maple syrup (I more often than not use maple syrup as a sweetener) and since I didn’t have Thai basil on hand, I used Spicy Globe basil. It was just great! The broth is addictive, you’ll want to dip everything in it, from toast to fingers! Feel free to change up the vegetables, you can’t ruin anything that goes into this broth.

Thai Coconut Curry Soup with Chickpeas and Potatoes

Ingredients

  • 3 tablespoons toasted sesame oil
  • 1 tablespoon mustard seeds
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 3 celery stalks, diced
  • 2 tablespoons fresh ginger, minced
  • 2 tablespoons ground coriander
  • 2 tablespoons ground cumin
  • 3 tablespoons Thai red curry paste
  • 1/4 cup fresh basil leaves (Thai is great, but any basil will do), chopped
  • 8 makrutย lime leaves, sliced into strips
  • 2–3 Yukon Gold potatoes, diced
  • 7 cups vegetable broth
  • 1 can coconut milk
  • 3 tablespoons rice vinegar
  • 3 tablespoons maple syrup
  • 2 tablespoons tamari
  • 1 can chickpeas, rinsed and drained

Instructions

Heat the sesame oil over medium heat in a soup pot. Add the mustard seeds and cook until they start to pop. Add the onions, carrots, celery, and ginger. Sautรฉ for 3-4 minutes while stirring.

Add the coriander, cumin, red curry paste, basil, and lime leaves, and continue cooking for 2 more minutes, stirring often. Add the potatoes, vegetable broth, coconut milk, vinegar, maple syrup, tamari, and chickpeas. Bring to a boil. Continue to cook over high heat for 15 minutes, or until the potatoes are tender. Serve with extra basil as a garnish. That’s it! Bon appรฉtit!

  • 3 c. ร  soupe d’huile de sรฉsame grillรฉ
  • 1 c. ร  soupe de graines de moutarde
  • 1 oignon moyen, hachรฉ
  • 2 carottes moyennes, pelรฉes et hachรฉes
  • 3 branches de cรฉleri, hachรฉ
  • 2 c. ร  soupe de gingembre frais, pelรฉ et รฉmincรฉ
  • 2 c. ร  soupe de coriandre moulue
  • 2 c. ร  soupe de cumin moulu
  • 3 c. ร  soupe de pรขte de cari rouge
  • 1/4 tasse de basilic thaรฏ frais, hachรฉ
  • 8 feuilles de lime makrut, tranchรฉes en fines lamelles (ou le zeste d’une lime)
  • 2 ร  3 pommes de terre Yukon Gold, en dรฉs
  • 7 tasses de bouillon de lรฉgumes
  • 1 boรฎte de lait de coconut
  • 3 c. ร  soupe de vinaigre de riz
  • 3 c. ร  soupe de sirop d’รฉrable
  • 2 c. ร  soupe de sauce tamari ou soya
  • 1 boรฎte de pois chiches, rincรฉs et รฉgouttรฉs

Instructions

Chauffer l’huile de sรฉsame dans un chaudron ร  soupe, ร  feu moyen. Ajouter les graines de moutarde et cuire jusqu’ร  ce qu’elles commencent ร  รฉclater. Ajouter les oignons, carottes, cรฉleri, et gingembre. Faire revenir pendant 3 ร  4 minutes, en brassant.

Ajouter la coriandre, le cumin, la pรขte de cari rouge, le basilic, et les feuilles de lime. Continuer de mijoter pendant 2 minutes. Ajouter les pommes de terre, le bouillon de lรฉgumes, le lait de coconut, le vinaigre de riz, le sirop d’รฉrable, la sauce tamari ou soya, et les pois chiches. Porter ร  รฉbullition, rรฉduire le feu et laisser mijoter pendant 15 minutes, ou jusqu’ร  ce que les pommes de terre soient tendres. Servir avec du basilic frais. Bon appรฉtit!

This Tom Yum Soup is fresh, easy, and quick. I would recommend making your own broth here. You start the broth and then while it reduces, you can prep the rest of your ingredients for the soup. It’s a total of 30-40 minutes in the kitchen. You can add rice noodles or cubes of tofu to the soup, transforming it into a filling and energizing meal.

For the Broth:

  • 1/2 red bell pepper, cut in strips
  • 2 green onions, chopped
  • 1 big handful of fresh cilantro
  • 1-inch piece fresh ginger, chopped
  • 1 lemongrass stalk, minced
  • 1 tablespoon grated lime zest
  • 8 cups water
  • 2 cups vegetable broth

For the Soup:

  • 1 tablespoon coconut oil
  • 1-inch piece fresh ginger, minced
  • 1 clove garlic, minced
  • 2 lemongrass stalks, tough outer leaves removed, tender stems minced
  • 1 Indonesian lime leaf, minced (optional)
  • 1/2 red bell pepper, chopped finely
  • 8 ounce shiitake mushroom, sliced thick
  • 5 ounce cherry tomatoes, cut in half
  • 2 green onions, sliced thin
  • 2 teaspoons maple syrup
  • 3 tablespoons naturally brewed soy sauce
  • pinch of red pepper flakes
  • 1/4 cup fresh lime juice
  • 2 cups bean sprouts
  • Garnishes: fresh cilantro, lime wedges, grilled tofu cubes, rice noodles (optional)

      Instructions

      For the Broth:

      Mix all the ingredients in a large soup pot. Bring to a boil, lower the heat to a steady simmer, and let reduce for about 30 minutes. Strain and discard solids. Reserve.

      For the Soup:

      Heat coconut oil in a large soup pot over medium heat. Add the ginger, garlic, lemongrass, and Indonesian lime leaves, and sautรฉ 2 minutes. Add the red bell pepper and sautรฉ one minute more. Add the mushrooms and cook, stirring, for an additional 3 minutes. Add the reserved broth, tomatoes, green onions, maple syrup, and soy sauce. Bring to a boil, reduce the heat to medium-low and simmer for 6-7 minutes. Right before serving, add the fresh lime juice. Ladle soup in bowls, top with some bean sprouts, fresh cilantro, and lime wedges, and serve. Bon appรฉtit!

      • 1 c. ร  soupe de zeste de lime
      • 8 tasses d’eau
      • 2 tasses de bouillon de lรฉgumes

      Pour la soupe:

      • 1 c. ร  soupe d’huile de coconut
      • 1 bout de gingembre de 1 pouce, รฉmincรฉ
      • 1 gousse d’ail, รฉmincรฉe
      • 2 branches de citronnelle, รฉmincรฉes
      • 1 feuille de lime indonรฉsienne, รฉmincรฉe (en option)
      • 1/2 poivron rouge, hachรฉ finement
      • 8 once de champignons shiitake, tranchรฉs mince
      • 5 once de tomates cerises, coupรฉes en deux
      • 2 oignons verts, รฉmincรฉs
      • 2 c. ร  thรฉ de sirop d’รฉrable
      • 3 c. ร  soupe de sauce soya ou tamari
      • Pincรฉe de flocons de chili broyรฉs
      • 1/4 tasse de jus de lime
      • 2 tasses de fรจves germรฉes
      • Garnitures: coriandre fraรฎche, quartiers de lime, tofu grillรฉ (en option), nouilles de rizย 

      Instructions

      Pour le bouillon:

      Mรฉlanger tous les ingrรฉdients dans un grand chaudron ร  soupe. Porter ร  รฉbullition, rรฉduire le feu et mijoter, en laissant rรฉduire, pendant environ 30 minutes. Passer dans un tamis et retirer les solides. Rรฉserver.

      Pour la soupe:

      Chauffer l’huile de coconut dans un grand chaudron ร  soupe ร  feu moyen. Ajouter le gingembre, l’ail, la citronnelle, et la feuille de lime indonรฉsienne, et faire revenir pendant 2 minutes. Ajouter le poivron rouge et faire revenir pendant une minute de plus. Ajouter les champignons et cuire, en remuant, pendant 3 minutes. Ajouter le bouillon, les tomates, les oignons verts, le sirop d’รฉrable et la sauce soya ou tamari. Porter ร  รฉbullition, rรฉduire le feu ร  moyen-bas et laisser mijoter pendant 6 ร  7 minutes. Juste avant de servir, ajouter le jus de lime. Servir la soupe dans des bols et garnir avec les fรจves germรฉes, la coriandre fraรฎche et les quartiers de lime. Bon appรฉtit!

      I’ve been making a version of this Coconut Milk Thai Soup for a long, long time. Every time I have a coconut milk urge (which is often!), I turn to my fridge and look at what I could toss in a Thai soup. This time, my friend Darlene had brought me Thai basil from her garden. It was a golden opportunity!

      I had bok choy, zucchini, mushrooms, and red bell pepper in the fridge. Other times it could have beenย sweet potato, tofu, and kale. You can pretty much empty your fridge into this soup. It is versatile, easy to make, bright, and nourishing. It stays nice for leftovers the next day as well. The kids love it, too!

      Coconut Milk Thai Soup

      Ingredients

      • 1 teaspoon coconut oil
      • 2 cloves garlic, minced
      • 1 chile pepper, minced
      • 1 lemongrass stalk, tender part only, minced
      • 1 tablespoon grated fresh ginger
      • 1 tablespoon red curry paste (optional, your soup would be just fine without it)
      • 1 cup stemmed shiitake mushrooms, sliced
      • 1 quart vegetable broth
      • 1 Indonesian lime leaf, minced (optional)
      • 1 can (14-oz) coconut milk
      • Vegetables: zucchini, bok choy, carrots, bell pepper, cooked squash or sweet potato, basically whatever you have leftover or vegetables you think would go well
      • Juice of one lime
      • Garnishes: cilantro, lime wedges, minced Thai pepper, Thai basil

        Instructions

        In a large soup pot, heat the coconut oil over medium heat. Add the garlic, chile pepper, lemongrass, and fresh ginger. Sautรฉ until fragrant, about 2 minutes. Add the red curry paste and cook for one minute more. Add the mushrooms and the vegetables you are planning to use, depending on their hardiness, so that they soften a bit before you finish cooking them in the broth.

        Add the broth and Indonesian lime leaves. Bring to a boil, lower the heat and simmer until the vegetables are done, about 5-10 minutes, depending on the vegetables. If you add spinach, add it after this simmering time, as spinach doesn’t need to cook, just wilt. Then add the coconut milk, taste and adjust seasoning, and bring back to a gentle simmer. Before serving, turn the heat off and add the lime juice. Serve topped with Thai basil, fresh cilantro, fresh lime wedges. Bon appรฉtit!

        • 2 gousses d’ail.รฉmincรฉes
        • 1 piment jalapeรฑo, รฉmincรฉ
        • 1 bรขton de citronnelle, รฉmincรฉ
        • 1 c. ร  soupe de gingembre frais, รฉmincรฉ
        • 1 c. ร  soupe de pรขte de cari rouge
        • 1 tasse de champignons shiitake, tranchรฉ
        • 4 tasses de bouillon de lรฉgumes
        • 1 feuille de lime indonรฉsienne, รฉmincรฉe (en option)
        • 1 boรฎte (14-oz) de lait de coconut
        • Lรฉgumes: zucchini, bok choy, carottes, poivron, patates douces ou courge, ou tout autre lรฉgume qui vous plaรฎt
        • Jus de lime
        • Garnitures: coriandre fraรฎche, quartiers de lime, piment thaรฏ, basilic thaรฏ (en option)

        Instructions

        Dans un grand chaudron ร  soupe, chauffer l’huile de coconut ร  feu moyen. Ajouter l’ail, le piment jalapeรฑo, la citronnelle et le gingembre. Faire revenir pendant 2 minutes. Ajouter la pรขte de cari rouge et cuire pendant une minute de plus. Ajouter les champignons et le reste des lรฉgumes, selon leur temps de cuisson. Bien remuer.

        Ajouter le bouillon et la feuille de lime indonรฉsienne. Porter ร  รฉbullition, rรฉduire le feu et laisser mijoter jusqu’ร  ce que les lรฉgumes soient cuits, environ 5 ร  10 minutes, selon les lรฉgumes. Si vous ajoutez des รฉpinards, ajoutez-les ร  la toute fin. Ajouter ensuite le lait de coconut, goรปter, ajuster les assaisonnements au besoin et laisser mijoter 2 minutes de plus. Retirer du feu, ajouter le jus de lime et servir avec les garnitures de votre choix. Bon appรฉtit!
