
When you feel like bacon and that crazy umami flavor, there’s seriously nothing better than this Shiitake Bacon. In this breakfast bowl, I served the shiitake bacon on a bed of barely-sautéed spinach and shallots. I garnished with quickly-blanched broccolette, heirloom tomatoes, and green onions.

Ingredients
- 4 oz shiitake mushrooms, cleaned, stems removed and sliced 1/4 inch
- 1 tablespoon tamari
- 1 tablespoon olive oil
- 1 teaspoon maple syrup
- 4–5 drops liquid smoke
Instructions
Preheat oven to 300˚. Mix all the ingredients for the sauce in a medium bowl. Add the mushroom and mix until well-coated. Place on a parchment-lined baking sheet and bake 35 minutes, turning halfway.

Bacon de shiitake
Quand ce goût d’umami vous prend, essayez ce bacon de shiitake. Vous serez rassasiés, c’est promis!
Ingredients
- 4 onces de champignons shiitake, lavés, les queues enlevées, et tranchés (1/4 pouce)
- 1 c. à soupe de tamari
- 1 c. à soupe d’huile d’olive
- 1 c. à thé de sirop d’érable
- 4–5 gouttes de fumée liquide
Instructions
Préchauffer le four à 300˚. Mélanger tous les ingrédients de la sauce dans un bol moyen. Ajouter les champignons et mélanger afin qu’ils soient bien couverts de sauce. Placer sur une plaque de cuisson, préalablement recouverte de papier parchemin et cuire 35 minutes au four, en tournant les champignons après 20 minutes.
