  • How I love this Jamaican Jerk Whole Roasted Cauliflower with Black Beans and Chickpeas! It’s spicy, it’s tasty, it’s Jamaica! You can make your jerk blend in advance, and assemble the cauliflower right before dinner. Takes 45 minutes of hands-off cooking in the oven, and you get a complete meal, served over rice. For the jerk sauce, I took inspiration from a recipe by @VeganVonnie13, plant-based chef at VeganVibrationz, based out of Dallas, Texas. Give thanks for the flavor, Chef!

Jamaican Jerk Whole Roasted Cauliflower with Black Beans and Chickpeas

Ingredients

  • 1 large head cauliflower
  • 6 Scotch Bonnet peppers (or Habanero), chopped
  • 6 cloves garlic, chopped
  • 6 scallions, chopped
  • 1/3 cup vinegar
  • 1/3 cup coconut aminos
  • 1 1/2 teaspoon sea salt
  • 1 tablespoon black peppercorns
  • 1 ounce ginger (about 2″ piece), chopped
  • 2 tablespoons allspice berries
  • 2 tablespoons brown sugar
  • 1 teaspoon freshly grated nutmeg
  • 2 tablespoons coconut oil
  • 8 sprigs thyme
  • 1 lime, juiced
  • 2 cups vegetable broth
  • 1 can black beans, rinsed and drained
  • 1 can chickpeas, rinsed and drained
  • 1/3 cup shallots or red onion, minced
  • Garnishes: fresh cilantro

Instructions

Preheat oven to 400ยฐ. Place the Scotch Bonnet peppers, garlic, scallions, vinegar, coconut aminos, sea salt, black peppercorns, ginger, allspice berries, brown sugar, nutmeg, coconut oil, thyme, and lime juice to a blender. Blend on high until well combined. Set aside. Can be made a day ahead. Cover and refrigerate.

Remove the leaves from the cauliflower, then trim the stem flush with the bottom of the head so the cauliflower sits flat in a Dutch oven and the lid can be closed tight. Place the cauliflower in the Dutch oven.

Spread the reserved jerk sauce over the cauliflower and rub, with your hands, until the sauce is in all nooks and crannies. Pour the vegetable broth at the bottom of the Dutch oven. Place the lid, pop in the oven for 45 minutes. Remove from the oven and add the beans and the minced onions on the sides of the cauliflower. Put back in the oven and cook, uncovered this time, for an additional 7 minutes. Remove from the oven and let rest for 10 minutes. Garnish with fresh cilantro, serve over rice, and enjoy!

  • 6 piments Scotch Bonnet (ou Habanero), hachรฉs
  • 6 gousses d’ail, hachรฉes
  • 6 oignons verts, hachรฉs
  • 1/3 tasse de vinaigre
  • 1/3 tasse d’aminos de coconut
  • 1 1/2 c. ร  thรฉ de sel de mer
  • 1 c. ร  table de grains de poivre noir
  • 1 once de gingembre frais (environ 2″), hachรฉ
  • 2 c. ร  table de grains de piment de la Jamaรฏque entiers
  • 2 c. ร  table de sucre brun
  • 1 c. ร  thรฉ de noix de muscade, fraรฎchement rรขpรฉe
  • 2 c. ร  table d’huile de coconut
  • 8 branches de thym frais
  • Jus de 1 lime
  • 2 tasses de bouillon de lรฉgumes
  • 1 boรฎte d’haricots noirs, rincรฉs et รฉgouttรฉs
  • 1 boรฎte de pois chiches, rincรฉs et รฉgouttรฉs
  • 1/3 tasse d’รฉchalotes franรงaises ou oignons rouges, รฉmincรฉs
  • Garnitures: coriandre fraรฎche

Instructions

Prรฉchauffer le four ร  400ยฐ. Placer les piments Scotch Bonnet, l’ail, les oignons verts, le vinaigre, les aminos de coconut, le sel de mer, les grains de poivre noir, le gingembre, le piment de la Jamaรฏque, le sucre brun, la muscade, l’huile de coconut, le thym, et le jus de lime dans un mรฉlangeur. Mรฉlanger jusqu’ร  l’obtention d’un mรฉlange homogรจne. Rรฉserver. La sauce jerk peut รชtre faite ร  l’avance. Couvrir et placer au rรฉfrigรฉrateur jusqu’au moment de l’utiliser.

Retirer les feuilles de la tรชte de chou-fleur et couper ensuite la base de la tรชte, si nรฉcessaire, afin qu’elle puisse รชtre disposรฉe dans une cocotte avec le couvercle bien fermรฉ. Mettre la tรชte de chou-fleur dans la cocotte., mรฉlanger l’huile d’olive, la sauce adobo, la poudre d’ail, la poudre d’oignon, l’origan, le cumin, le sel de mer et le poivre.

Verser la sauce jerk sur la tรชte de chou-fleur et badigeonner avec les mains afin de bien la distribuer. Ne pas oublier le dessous de la tรชte de chou-fleur. Verser le bouillon de lรฉgumes au fond de la cocotte, en รฉvitant de verser sur le chou-fleur. Placer le couvercle et mettre au four pendant 45 minutes. Retirer du four et disposer les haricots noirs, les pois chiches et les รฉchalotes franรงaises รฉmincรฉes autour du chou-fleur. Remettre au four et cuire, ร  dรฉcouvert, pendant 7 minutes de plus. Retirer du four, laisser reposer pendant 10 minutes. Garnir de coriandre fraรฎche et servir sur du riz.

This Baked Jerk Tofu will bring you to Jamaica. Jerk has always been one of my favorite seasonings. There is something quite unique about it, probably because of the use of allspice berries. I remember the cookouts on the streets of Jamaica. The smell is something I will never forgetโ€ฆ The hot grills, the salt air, the spices. Well, as you would expect, back in my kitchen, I still crave Jamaican cuisine. Often.

I have a dry jerk seasoning blend that I usually have on hand. I use it on roasted cashews all the time. I am not sure where I got the recipe as it was written on a piece of paper in one of my notebooks. But it was exactly what I needed here!

Baked Jerk Tofu

  • 1 block extra-firm tofu, pressed and cut into small cubes
  • 3 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon minced fresh ginger
  • 2 cloves garlic, minced
  • 4 teaspoons dry jerk seasoning

Instructions

Preheat oven to 400ยฐ. In a medium bowl, mix the olive oil, lime juice, ginger, garlic, and jerk seasoning. Add the tofu cubes to the bowl, and mix until well coated.

Spread the tofu cubes in one layer on a parchment-lined baking sheet. Transfer to the oven and cook 15 minutes. Shake the tofu cubes around and return to the oven for an additional 10 minutes. Remove from the oven and serve with sliced green onions, rice and peas, and cabbage slaw. Bon appรฉtit!

  • 1 bloc de tofu extra ferme, pressรฉ et coupรฉ en cubes
  • 3 c. ร  soupe d’huile d’olive
  • 1 c. ร  soupe de jus de lime
  • 1 c. ร  thรฉ de gingembre frais, รฉmincรฉ
  • 2 gousses d’ail, รฉmincรฉes
  • 4 c. ร  thรฉ d’รฉpices jerk en poudre

Instructions

Prรฉchauffer le four ร  400ยฐ. Dans un bol moyen, mรฉlanger l’huile d’olive, le jus de lime, le gingembre, l’ail, et les รฉpices jerk. Ajouter les cubes de tofu et bien mรฉlanger.

ร‰tendre le tofu en une seule couche sur une tรดle, prรฉalablement recouverte de papier parchemin. Mettre au four et cuire 15 minutes. Retourner les cubes de tofu et remettre au four pendant 10 ร  15 minutes de plus. Retirer du four et servir avec des oignons verts รฉmincรฉs, du riz et haricots, et une salade de chou, par exemple. Bon appรฉtit!

I found this magical Dry Jerk Seasoning recipe written in a notebook at home. Big thank you to whoever shared this. This is something precious in a kitchen, something like a wonderful garam masala recipe. You should always have some on hand. This jerk seasoning is used in my Baked Jerk Tofu recipe, but you can also toss it into simmering coconut milk and serve over pasta. You can toss raw cashews with coconut oil, sprinkle them with the jerk seasoning, and pop in the oven. You can also sprinkle some on fried plantain chips. It’s really endless. It’s spicy and tangy, and you won’t want to live without it!

  • 1 tablespoon garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons cayenne
  • 2 teaspoons dried parsley
  • 2 teaspoons dried thyme
  • 2 teaspoons sea salt
  • 2 teaspoons sugar
  • 1 teaspoon paprika
  • 1 teaspoon allspice
  • 1/2 teaspoon dried crushed pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon

Instructions

  • 2 c. ร  thรฉ de poudre de cayenne
  • 2 c. ร  thรฉ de persil sรฉchรฉ
  • 2 c. ร  thรฉ de thym sรฉchรฉ
  • 2 c. ร  thรฉ de sel de mer
  • 2 c. ร  thรฉ de sucre brun
  • 1 c. ร  thรฉ de paprika
  • 1 c. ร  thรฉ de piment de la Jamaรฏque
  • 1/2 c. ร  thรฉ de piment chili broyรฉs
  • 1/2 c. ร  thรฉ de poivre noir
  • 1/2 c. ร  thรฉ de muscade
  • 1/4 c. ร  thรฉ de cannelle moulue

Instructions

Simplement mรฉlanger tous les ingrรฉdients dans un petit bol. Conserver au rรฉfrigรฉrateur dans un contenant hermรฉtique. Bon appรฉtit!

Plantains have become something I look for at the grocery store. Iโ€™m experimenting with different ways of cooking them. They are so versatile, since they can go sweet or savory, depending on the flavor profile you’re looking for. For this Plantain Chips recipe, I went with a jerk seasoning, and oh my, they are simply addictive. When you buy plantain for this, just make sure the fruit is unripe.

Peel the banana. Slice each one as thin as you can, using a mandoline or a sharp knife, keeping each the slices of each plantain separate. Put 1 tablespoon of the jerk spice blend in a small paper bag. Line a plate with paper towels.

In a large heavy pot, warm about 2 inches of coconut oil over medium-high heat until it reaches 375 degrees (check with a candy thermometer). Fry the slices of one banana at a time, stirring them around, until they are nice and golden, about 1 minute. Using a slotted spoon, transfer the chips to the paper bag with the spice mixture. Close the bag and shake vigorously to coat the chips. Transfer to the paper towel lined plate. Repeat with the remaining banana slices, adding more spices to the bags if necessary. Bon appรฉtit!

Peler les bananes. Trancher chacune le plus mince possible, ร  l’aide d’une mandoline ou d’un couteau bien aiguisรฉ. Placer 1 c. ร  soupe du mรฉlange ร  รฉpices dans un petit sac en papier brun. Placer du papier essuie-tout sur une assiette.ย 

Dans une grande casserole, faire chauffer environ 2 pouces (5 cm) d’huile de coconut ร  feu moyen-รฉlevรฉ, jusqu’ร  ce que l’huile atteigne 375หš sur un thermomรจtre ร  bonbon. Faire frire les tranches de banane, une banane ร  la fois, en remuant doucement, jusqu’ร  ce qu’elles soient dorรฉes, environ 1 minute. ร€ l’aide d’une cuiller ร  trous, retirer les chips et dรฉposer dans le sac en papier. Fermer le sac et secouer afin de bien recouvrir. Transfรฉrer sur l’assiette et rรฉpรฉter avec le reste des tranches de banane, en ajoutant plus d’รฉpices au sac, au besoin. Bon appรฉtit!
