Plantains have become something I look for at the grocery store. I’m experimenting with different ways of cooking them. They are so versatile, since they can go sweet or savory, depending on the flavor profile you’re looking for. For this Plantain Chips recipe, I went with a jerk seasoning, and oh my, they are simply addictive. When you buy plantain for this, just make sure the fruit is unripe.

Peel the banana. Slice each one as thin as you can, using a mandoline or a sharp knife, keeping each the slices of each plantain separate. Put 1 tablespoon of the jerk spice blend in a small paper bag. Line a plate with paper towels.

In a large heavy pot, warm about 2 inches of coconut oil over medium-high heat until it reaches 375 degrees (check with a candy thermometer). Fry the slices of one banana at a time, stirring them around, until they are nice and golden, about 1 minute. Using a slotted spoon, transfer the chips to the paper bag with the spice mixture. Close the bag and shake vigorously to coat the chips. Transfer to the paper towel lined plate. Repeat with the remaining banana slices, adding more spices to the bags if necessary. Bon appétit!

Peler les bananes. Trancher chacune le plus mince possible, à l’aide d’une mandoline ou d’un couteau bien aiguisé. Placer 1 c. à soupe du mélange à épices dans un petit sac en papier brun. Placer du papier essuie-tout sur une assiette. 

Dans une grande casserole, faire chauffer environ 2 pouces (5 cm) d’huile de coconut à feu moyen-élevé, jusqu’à ce que l’huile atteigne 375˚ sur un thermomètre à bonbon. Faire frire les tranches de banane, une banane à la fois, en remuant doucement, jusqu’à ce qu’elles soient dorées, environ 1 minute. À l’aide d’une cuiller à trous, retirer les chips et déposer dans le sac en papier. Fermer le sac et secouer afin de bien recouvrir. Transférer sur l’assiette et répéter avec le reste des tranches de banane, en ajoutant plus d’épices au sac, au besoin. Bon appétit!
