Smokehouse Green Lentil Soup

Ingredients

  • 1 cup green lentils, rinsed and drained
  • 1 tablespoon olive oil
  • 3 carrots, minced
  • 1 onion, minced
  • 4 garlic cloves, minced
  • 34 sprigs thyme
  • 1 sprig rosemary
  • 3 plum tomatoes, chopped
  • A few generous glugs of liquid smoke (you could also use smoked paprika, to taste)
  • 6 cups vegetable broth
  • Sea salt and pepper, to taste

Instructions

In a soup pot, heat the olive oil over medium-high heat. Add the carrots, onion, garlic, sprigs of thyme and rosemary and sauté until the onion is soft, about 4-5 minutes. Add the tomatoes and keep cooking for 3-4 minutes, until the tomato is saucy. Add the lentils and the liquid smoke and stir well. Add the broth and bring to a boil. Reduce the heat to a simmer, season to taste with sea salt and pepper, and let cook, stirring occasionally until the lentils are cooked, about 20 minutes. Cooking time may vary depending on the type of lentils. Ensure you are testing for doneness as you cook, and remove from the heat before the lentils are mushy. Adjust seasonings if necessary, remove from the heat, and serve. Bon appétit!

Soupe de lentilles vertes super simple

Ingredients

Scale
  • 1 tasse de lentilles vertes, rincées et égouttées
  • 1 c. à soupe d’huile d’olive
  • 3 carottes, émincées
  • 1 oignon, émincé
  • 4 gousses d’ail, émincées
  • 3 à 4 branches de thym
  • 1 branche de romarin
  • 3 tomates italiennes, hachées
  • Quelques généreux traits de fumée liquide (vous pouvez aussi utiliser du paprika fumé)
  • 6 tasses de bouillon de légumes
  • Sel de mer et poivre, au goût

Instructions

Chauffer l’huile dans un chaudron à soupe, à feu moyen-élevé. Ajouter les carottes, l’oignon, l’ail, les branches de thym et de romarin, et faire revenir jusqu’à ce que l’oignon soit tendre, environ 4 à 5 minutes. Ajouter les tomates et continuer de cuire pendant 3 à 4 minutes. Ajouter les lentilles et la fumée liquide et bien mélanger. Ajouter le bouillon et porter à ébullition. Réduire le feu, assaisonner au goût de sel de mer et de poivre, et laisser mijoter pendant environ 20 minutes, jusqu’à ce que les lentilles soient tendres, mais pas trop cuites. S’assurer de goûter pendant la cuisson. Ajuster les assaisonnements, si nécessaire et servir. Bon appétit!
