Toasted Nuts and Seeds Mix

This Toasted Nuts and Seeds mix makes its way into my dishes on many occasions. I don’t have to discuss the importance of nuts in a plant-based diet, but know that nuts are high in essential amino acids and healthy fats. Eating nuts and seeds is a great way to add vitamins, minerals, fiber, and essential fatty acids (like omega-3 and omega-6), to your diet. They are used, for example, to top my Indian Spiced Parsnip Soup, but I also sprinkle this mix on top of my morning oatmeal, on salads, and we eat them just like that too as an easy snack. It’s easy and it’ll add some crunch and nutrients to your diet.

Toasted Nuts and Seeds Mix

Feel free to add thisย Dry Jerk Seasoning or this Garam Masala right at the end of the toasting process, for different flavors.

Ingredients

  • Raw cashews
  • Raw peanuts
  • Raw almond slices
  • Shelled rawย pistachios
  • Raw pine nuts
  • Raw pumpkin seeds

Instructions

Heat up a small skillet over medium heat. When the skillet is warm, add the bigger nuts, like cashews and pistachios. Toast them while stirring until they start to brown, at which point you can add the other nuts. Keep stirring until brown but not burnt. At this point, you may add the dry seasoning, if desired. Remove from the heat to a large plate and let cool. Bon appรฉtit!

J’ajoute souvent des รฉpices ร  mon medley de noix, juste avant de retirer du feu. Vous pouvez essayer du garam masala ou ce mรฉlange d’รฉpices jerk. Utilisez toujours des noix brutes, non-rรดties.

  • Noix de cajou
  • Arachides
  • Amandes ciselรฉes
  • Pistaches
  • Noix de pin
  • Graines de citrouille

Instructions

Rรฉchauffer une petite poรชle ร  feu moyen. Lorsque la poรชle est chaude, ajouter les plus grosses noix, comme les noix de cajou et les pistaches. Rรดtir en remuant, jusqu’ร  ce qu’elles commencent ร  dorer. ร€ ce moment, ajouter le reste des noix et des graines. Continuer de rรดtir, en remuant, jusqu’ร  ce que toutes les noix et graines soient dorรฉes. Ajouter les assaisonnements, si dรฉsirรฉ. Retirer du feu et transfรฉrer dans une grande assiette et laisser refroidir. Bon appรฉtit!

I took inspiration for this Indian-Spiced Parsnip Soup in the wonderful Love and Lemons Cookbook. In her book, Jeanine Donofrio offers a Curried Parsnip & White Bean Soup that calls for curry powder and cardamom as the main spices. I added my 2 cents on the spices and I laced the soup with coconut milk. I top this Indian-Spiced Parsnip Soup with my Toasted Nuts and Seeds Mix, but feel free to improvise.

Indian-Spiced Parsnip Soup

Ingredients

  • 2 tablespoons grapeseed oil
  • 1 medium onion, chopped
  • 34 garlic cloves, minced
  • 1 tablespoon freshly grated ginger
  • 56 medium parsnips, peeled and chopped
  • 1 Gala apple, peeled, cored, and chopped
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon turmeric
  • 1 can cannellini beans, rinsed and drained
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Sea salt and fresh pepper, to taste
  • Garnishes: toasted nuts and seeds mix

Instructions

In a large soup pot, heat the grapeseed oil over medium heat. Add the onion and season with sea salt and pepper. Cook until soften, about 3-4 minutes. Add the garlic and ginger and cook for 1 minute. Add the parsnips, apple, spices, and cannellini beans. Cook until the parsnips are lightly brown and a little softer, about 3 minutes. Add the vegetable broth and simmer until parsnips are tender, about 20-25 minutes.

Let the mixture cool slightly before transferring to a blender. Purรฉe the soup until smooth, working in batched if necessary. Return the soup to the pot. Add the coconut milk. Reheat, if necessary, and taste for spices and seasonings. Adjust if necessary. Serve with your choice of toppings. Bon appรฉtit!

  • 2 c. ร  soupe d’huile de pรฉpin de raisin
  • 1 oignon moyen, hachรฉ
  • 3 ร  4 gousses d’ail, รฉmincรฉes
  • 1 c. ร  soupe de gingembre frais, รฉmincรฉ
  • 5 ร  6 panais moyens, pelรฉs et hachรฉs
  • 1 pomme Gala, pelรฉe, รฉpรฉpinรฉe et hachรฉe
  • 1 c. ร  thรฉ de garam masala
  • 1 c. ร  thรฉ de cumin moulu
  • 1 c. ร  thรฉ de coriandre moulue
  • 1/2 c. ร  thรฉ de cardamom moulue
  • 1/4 c. ร  thรฉ de curcuma
  • 1 boรฎte de haricots cannellini, rincรฉs et รฉgouttรฉs
  • 4 tasses de bouillon de lรฉgumes
  • 1 tasse de lait de coconut
  • Sel de mer et poivre, au goรปt
  • Garnitures: mรฉlange de noix et de graines rรดties

Instructions

Dans un grand chaudron ร  soupe, chauffer l’huile de pรฉpin de raison ร  feu moyen. Ajouter l’oignon et cuire pendant 3 ร  4 minutes, jusqu’ร  ce qu’il soit translucide. Ajouter l’ail et le gingembre, en remuant. Faire revenir pendant 1 minute. Ajouter les panais, la pomme, les รฉpices, les haricots cannellini, et du sel de mer et poivre, au goรปt. Cuire jusqu’ร  ce que le panais et la pomme commencent ร  dorer, environ 3 minutes. Ajouter le bouillon de lรฉgumes et mijoter jusqu’ร  ce que les panais soient tendres, environ 20-25 minutes.

Retirer du feu et laisser refroidir avant de transfรฉrer dans un mรฉlangeur. Mรฉlanger jusqu’ร  l’obtention d’une consistence crรฉmeuse. Remettre la soupe dans le chaudron et ajouter le lait de coconut. Rรฉchauffer, goรปter et ajuster les assaisonnements, si nรฉcessaire. Garnir et servir. Bon appรฉtit!

Couscous with Dates, Pine Nuts and Pomegranate Vinaigrette

Ingredients

  • 1/2 cup water
  • 1/2 teaspoon orange zest
  • 1/2 cup freshly squeezed orange juice, plus 4 tablespoons, divided
  • 1/8 teaspoon cardamom
  • 1 cup instant couscous
  • 2 tablespoons pomegranate molasses
  • 1 teaspoon, plus 1/4 cup olive oil, divided
  • 2 tablespoon fresh mint leaves,ย chopped
  • 1/2 cup dates, diced
  • 1/3 cup toasted pine nuts
  • 1/3 cup fresh scallions, slicedย thinย on the diagonal
  • Salt and pepper, to taste
  • Garnishes: fresh mint leaves, orange slices, pomegranate arils

Instructions

In a medium saucepan, bring the water, 1/2 cup of orange juice, orange zest, cardamom and 1 teaspoon olive oil to a boil. Stir in couscous, stir, cover pan and remove from the heat. Let rest, covered, for 5 minutes.

In a small bowl, whisk together the 4 tablespoons of orange juice and pomegranate molasses. Add 1/4 cup olive oil while whisking. Fold in the choppedย mint leaves. Season to taste with salt and pepper.

Uncover the couscous and fluff with a fork. Place in a large mixing bowl. Add the dates and the vinaigrette and toss until well coated. Serve sprinkled with the pine nuts, the scallions, some fresh mint leaves, orange slices, and PLENTY of pomegranate seeds. Bon appรฉtit!

Ah l’arrivรฉe de dรฉcembre avec ses pommes grenade! Bien que je les adore fraรฎches ou en dessert, elles sont aussi fabuleuses comme garniture sur un bon plat de couscous. Et mettez la main sur les meilleures dates que vous pouvez trouver, les saveurs vous surprendront!

  • 1/2 tasse d’eau
  • 1/2 c. ร  thรฉ de zeste d’orange
  • 1/2 tasse de jus d’orange fraรฎchement pressรฉ, plus 4 c. ร  soupe, sรฉparรฉ
  • 1/8 c. ร  thรฉ de cardamome
  • 1 tasse de couscous instantanรฉ
  • 2 c. ร  soupe de mรฉlasse de pomme grenade
  • 1 c. ร  thรฉ, plus 1/4 tasse d’huile d’olive, sรฉparรฉ
  • 2 c. ร  soupe de menthe fraรฎche, รฉmincรฉe
  • 1/2 tasse de dates, hachรฉes
  • 1/3 tasse de noix de pin, rรดties
  • 1/3 tasse d’oignons verts, รฉmincรฉs
  • Sel de mer et poivre, au goรปt
  • Garnitures: menthe fraรฎche, tranches d’orange, graines de pomme grenade

Instructions

Dans une casserole moyenne, porter ร  รฉbullition l’eau, la 1/2 tasse de jus d’orange, le zeste d’orange, la cardamome, et la c. ร  thรฉ d’huile. Ajouter le couscous en remuant, couvrir et retirer du feu. Laisser reposer, couvert, pendant 5 minutes.

Dans un petit bol, fouetter les 4 c. ร  soupe de jus d’orange et la mรฉlasse de pomme grenade. Ajouter 1/4 tasse d’huile d’olive, en fouettant. Ajouter les feuilles de menthe et assaisonner de sel de mer et de poivre.

Retirer le couvercle du couscous et dรฉfaire les grains ร  la fourchette. Placer dans un grand bol ร  mรฉlanger, ajouter les dates, la vinaigrette et bien mรฉlanger. Servir garni des noix de pin, des oignons verts, de menthe fraรฎche, de tranches d’orange, et de beaucoup de graines de pomme grenade. Bon appรฉtit!
