Now if you want to fancy up your pasta night, try this Pasta with Greens in Creamy Wine Sauce. If it sounds complexe, it’s actually pretty easy. And quick. Like 15 minutes quick. You can even skip the wine part and achieve pretty similar (and awesome) results. As with many of my recipes, take this as a technique, and switch up the vegetables according to the seasons. These days, the markets are filled with sprouts, leeks, and my favorite green, spigarello.

You’ll find spigarello in many of my recipes. It’s an heirloom variety of broccoli, native to southern Italy, considered the parent of broccoli-rabe. Unlike broccoli, however, you eat the leaves of spigarello, as the plant doesn’t produce florets. The taste, for me, is somewhere between kale and a very mild broccoli. It’s extremely versatile, it can be added to many dishes, and it’s popping up at farmers markets throughout the country. Look out for it. And if you can’t find it, feel free to use lacinato kale, or beet greens instead.

Pasta with Greens in Creamy Wine Sauce

  • 2 tablespoons olive or coconut oil
  • 1 leek, cleaned, sliced thin
  • 2 cloves garlic, minced
  • 2 cups Brussels sprouts, halved
  • 1 sprig fresh thyme
  • 1/3 cup dry white wine
  • 1 1/2 can coconut milk
  • 1 bunch spigarello, chopped
  • Sea salt and pepper, to taste
  • 1 pack of your favorite pasta, cooked according to package directions
  • Garnish (always optional): sliced green onions, red pepper flakes, fresh thyme

Instructions

In a large straight-edge sautรฉ pan, heat the coconut oil over medium heat. Once the oil is hot, add the leek, garlic, Brussels sprouts, thyme, and generous pinches of both sea salt and pepper. Sautรฉ, stirring often, until tender and browned, about 8-10 minutes. Feel free to play with your heat in order to achieve a nice caramelized color on your vegetables. Deglaze the pan with the white wine, and let reduce about one minute. Add the coconut milk and heat through. Add the spigarello and continue cooking until the greens are tender, about 2-3 minutes. Taste and adjust seasonings. You will most probably need to add sea salt and pepper at this point, all normal. When your sauce is ready, add enough of the cooked pasta to the pan for the sauce. Mix well. Serve garnished with sliced green onions and red pepper flakes. Bon appรฉtit!

Vous pouvez la commencer ET la finir en 15 minutes! Et comme pour beaucoup de mes recettes, cette recette de pasta devient un canvas que l’on peint selon les saisons et les rรฉcoltes.

Le spigarello est une ancienne variรฉtรฉ de brocoli, originaire du sud de l’Italie. On le considรจre comme le parent du rapini et, contrairement au brocoli, ce sont les feuilles du spigarello qui sont comestibles, comme la plante ne produit pas de fleurons. Le goรปt, selon moi, est un croisement entre la kale et le brocoli. Il s’agit d’une verdure รฉtonnamment versatile, qui peut รชtre utilisรฉe de bien des faรงons.   • 1 poireau, nettoyรฉ, coupรฉ en deux sur le sens de la longueur et coupรฉ en minces demi-lunes
  • 2 gousses d’ail, รฉmincรฉes
  • 2 tasses de choux de Bruxelles, coupรฉs en deux
  • 1 branche de thym frais
  • 1/3 tasse de vin blanc sec
  • 1 1/2 boรฎte de lait de coco
  • 1 botte de spigarello, hachรฉ
  • Sel de mer et poivre, au goรปt
  • 1 boรฎte de rotinis, cuits selon les instructions
  • Garnitures (en option): oignons verts hachรฉs, flocons de piments broyรฉs, thym frais hachรฉ

Instructions

Dans une grande poรชle ร  bords droits, chauffer l’huile de coconut ร  feu moyen. Ajouter le poireau, l’ail, les choux de Bruxelles, le thym, et de gรฉnรฉreuses pincรฉes de sel et de poivre. Sauter, en mรฉlangeant souvent, jusqu’ร  ce que les lรฉgumes soient tendres et dorรฉs, de 8 ร  10 minutes. Dรฉglacer la poรชle avec le vin blanc et laisser rรฉduire une minute. Ajouter le lait de coconut et bien chauffer. Ajouter le spigarello et continuer de cuire jusqu’ร  ce que le spigarello soit tendre, de 2 ร  3 minutes. Goรปter et ajuster les assaisonnements (il manquera fort probablement de sel et de poivre). Lorsque la sauce est prรชte, ajouter les pรขtes ร  la poรชle et bien mรฉlanger. Servir avec les garnitures suggรฉrรฉes, si dรฉsirรฉ. Bon appรฉtit!

Shiitake and Leek Spaghetti

  • 3 tablespoons coconut oil
  • 3 leeks, cleaned, sliced lengthwise, then sliced thin crosswise
  • 8 oz shiitake mushrooms, sliced 1/4″ thick (about 3 1/2 cups)
  • 34 sprigs fresh thyme (optional)
  • 67 whole dried allspice berries (optional)
  • 1 can coconut milk
  • 1/3 cup pumpkin seeds, toasted
  • 1 teaspoon white wine vinegar (optional)
  • Sea salt and pepper, to taste
  • Spaghetti, cooked according to package directions

Instructions

Heat the coconut oil in a large skillet, over medium-high heat. Add the leeks, sea salt and pepper to taste, and cook, stirring often, until the leeks are soft but not browned, about 3-4 minutes. Add the mushroom, thyme, and allspice berries, and cook, stirring often, until the mushrooms are cooked and slightly browned, about 5 minutes. Add the coconut milk, 1/2 cup at a time, making sure it reduces and gets thicker before the next addition, until you use the whole can. Season with sea salt and pepper, to taste. Warm through. Add the pumpkin seeds and remove from the heat. Add the white wine vinegar, mix well, and serve over cooked spaghetti. Bon appรฉtit!

  • 3 c. ร  soupe d’huile de coconut
  • 3 poireaux, lavรฉs, coupรฉs en deux sur la longueur et tranchรฉs mince
  • 8 onces de champignons shiitake, tranchรฉs 1/4 pouce (environ 3 1/2 tasses)
  • 3 ร  4 branches de thym frais (en option)
  • 6 ร  7 grains de piment de la Jamaรฏque (en option)
  • 1 boรฎte de lait de coconut
  • 1/3 tasse de graines de citrouille, rรดties
  • 1 c. ร  thรฉ de vinaigre de vin blanc (en option)
  • Sel de mer et poivre, au goรปt
  • 1 boรฎte de spaghetti, cuits selon les directives sur l’emballage

Instructions

Chauffer l’huile de coconut dans une grande poรชle ร  feu moyen-vif. Ajouter les poireaux, le sel de mer et le poivre, au goรปt, et cuire, en brassant souvent, jusqu’ร  ce que les poireaux soient tendres, environ 3 ร  4 minutes. Ajouter les champignons, le thym, le piment de la Jamaรฏque, et cuire, en brassant souvent, jusqu’ร  ce que les champignons soient dorรฉs, environ 5 minutes. Ajouter le lait de coconut, 1/2 tasse ร  la fois, en s’assurant de faire รฉpaissir entre chaque ajout. Assaisonner au goรปt de sel et de poivre. Bien chauffer, ajouter les graines de citrouille et retirer du feu. Ajouter le vinaigre de vin, bien mรฉlanger, et servir sur les spaghettis cuits. Bon appรฉtit!

This Rainbow Pasta saves the day often in my house. Before a date night, so that the kids eat before the sitter comes, on a busy weeknight after spending the day in the garden, as a quick meal for a casual get together served with garlic bread. The possibilities are endless. Even for the vegetables you put in. The only advice when it comes to your veggies is to introduce them in the recipe according to their cooking time. I wouldn’t put chopped carrots at the same time as kale, but shredded carrots, sure. Or I wouldn’t put eggplant at the same time as spinach. You see where I’m getting. This pasta recipe is more of a guideline to build your dream pasta, or to build something that will empty your fridge and make you eat veggies. Be creative!

Ingredients

  • 2 tablespoons olive oil, plus more for serving
  • 1 cup red onion, diced
  • 45 cloves garlic, minced
  • 2 zucchinis, diced
  • 2 yellow squashes, diced
  • 1/2 bunch asparagus, cut into 1” lengths
  • 1 red bell pepper, diced
  • 2 cups cherry tomatoes
  • 1 bunch Rainbow chard, stems diced, leaves torn into bite-size pieces
  • 1 bunch Lacinato kale, torn into bite-size pieces
  • 1 package of your favorite pasta
  • 1/2 cup fresh basil, leaves torn
  • 4 green onions, sliced thin on the diagonal
  • 1/2 cup cooking liquid from pasta
  • Sea salt and pepper to taste

Instructions

In a large pot, bring some water to a boil, and add a few generous pinches of salt. Once the water boils, add the pasta, and cook according to package’s instructions. Before draining the pasta, keep about 1/2 cup cooking liquid.

While the pasta is cooking, heat the olive oil in a very large sautรฉ pan over medium heat. Add the onion and garlic and cook for about 2 minutes. Add the rest of the vegetables (according to cooking time), keeping the chard and kale for the very end. Season with salt and pepper. Once everything is nice and cooked, but still crunchy, add the cooked pasta and some of the cooking liquid, if needed. Mix well. Serve topped with a drizzle of olive oil, the fresh basil and green onions. Bon appรฉtit!

  • 2 c. ร  soupe d’huile d’olive, plus un filet pour le service
  • 1 tasse d’oignons rouges, en dรฉs

  • 2 courgettes jaunes, en dรฉs
  • 1/2 botte d’asperges, coupรฉes en tronรงons de 1 pouce
  • 1 poivron rouge, en dรฉs
  • 2 tasses de tomates cerise, coupรฉes en deux
  • 1 botte de bette ร  carde arc-en-ciel, les queues coupรฉes en dรฉs, et les feuilles hachรฉes
  • 1 botte de chou kale, hachรฉ
  • 1 boรฎte de vos pรขtes prรฉfรฉrรฉes
  • 4 oignons verts, tranchรฉs mince
  • 1/2 tasse du liquide de cuisson des pรขtes
  • 1/2 tasse de basilic frais, hachรฉ
  • Sel de mer et poivre, au goรปt

Instructions

Dans une grande casserole, faire bouillir de l’eau avec quelques gรฉnรฉreuses pincรฉes de sel de mer. Ajouter les pรขtes, et cuire selon les directives sur l’emballage. Avant d’รฉgoutter, rรฉserver 1/2 tasse de liquide de cuisson.

Pendant que les pรขtes cuisent, chauffer l’huile d’olive dans une grande poรชle, ร  feu moyen. Ajouter les oignons et l’ail et faire revenir pendant 2 minutes. Ajouter le reste des ingrรฉdients, selon leur temps de cuisson, en gardant la bette ร  carde et le chou kale pour la fin. Assaisonner de sel de mer et de poivre. Une fois les lรฉgumes cuits, mais toujours croquants, ajouter les pรขtes cuites et le liquide de cuisson, au besoin. Retirer du feu, ajouter le basilic frais, et bien mรฉlanger. Garnir des oignons verts, et servir avec un filet d’huile d’olive, si dรฉsirรฉ. Bon appรฉtit!

Whole-Wheat Potato Gnocchi with Super-Fast Tomato Sauce

For the Tomato Sauce:

  • 1 large can (28oz) Italian plum tomatoes
  • 56 leaves of fresh basil
  • 1 large clove of garlic
  • Olive oil
  • Sea salt, to taste

For the Gnocchi:

  • 4 small potatoes
  • 1 1/4 cup whole wheat flower
  • 2 tablespoons chia seeds
  • 1 cup water
  • Pinch of sea salt

      Instructions

      For the Tomato Sauce:

      In a pan, heat garlic in olive oil. Add pureed tomato sauce and let it simmer for 30 minutes on medium heat.

      For the Gnocchi:

      Bring a large pot of salted water to a boil. Peel potatoes and add to pot. Cook until tender but still firm, about 15 minutes. Drain, cool and mash with a fork or potato masher.

      Soak chia seeds in 1/2 cup of water for about 5 minutes. Drain.

      Combine mashed potato, flour, water, and soaked chia seeds in a large bowl. Knead until dough forms a ball. Shape small portions of the dough into long โ€œsnakesโ€. On a floured surface, cut snakes into one-inch pieces. Fold.

      Bring a large pot of lightly salted water to a boil. Drop in gnocchi and cook for 3-5 minutes or until gnocchi have risen to the top; drain and add to sauce. Stir until gnocchi are well-coated with sauce. Bon appรฉtit!

      Gnocchis au blรฉ entier avec sauce tomate super rapide

      Pour la sauce tomate super rapide:

      • 1 grosse boรฎte de tomates italiennes (28 onces), en purรฉe
      • 5 ร  6 feuilles de basilic frais
      • 1 grosse gousse d’ail, รฉmincรฉe
      • Huile d’olive
      • Sel de mer, au goรปt

      Pour les gnocchis:

      • 4 petites pommes de terre, lavรฉes, pelรฉes et hachรฉes grossiรจrement
      • 1 1/4 tasse de farine de blรฉ entier
      • 2 c. ร  soupe de graines de chia
      • 1 tasse d’eau
      • Pincรฉe de sel de mer

      Instructions

      Pour la sauce tomate:

      Dans une casserole, chauffer l’huile d’olive ร  feu moyen. Ajouter l’ail et faire revenir pendant 1 minute. Ajouter les tomates et laisser mijoter pendant 30 minutes.

      Pour les gnocchis:

      Placer les pommes de terre dans une grande casserole, remplir d’eau et porter ร  รฉbulliotion. Cuire jusqu’ร  ce que les pommes de terre soient tendres, mais conservent leur forme, environ 15 minutes. ร‰goutter, laisser refroidir et rรฉduire en purรฉe avec une fourchette ou un pilon.

      Tremper les graines de chia dans 1/2 tasse d’eau, pendant 5 minutes. ร‰goutter.

      Combiner les pommes de terre, la farine, l’eau, et les graines de chia dans un grand bol. Pรฉtrir en formant une boule de pรขte. Former des morceaux en longs ยซ serpents ยป. Sur une surface de travail saupoudrรฉe de farine, couper les serpents en morceaux de 1 pouce (2,5 cm). Plier chacun sur lui-mรชme.

      Porter une grande casserole d’eau ร  รฉbullition. Saler, au goรปt. Dรฉposer les gnocchis et cuire pendant 3 ร  5 minutes ou jusqu’ร  ce que les gnocchis flottent ร  la surface. ร‰goutter et ajouter ร  la sauce. Remuer jusqu’ร  ce que les gnocchis soient nappรฉs de sauce. Bon appรฉtit!

      The trick for this Grape or Cherry Marinara is to get the very best and sweetest grape or cherry tomatoes you can find. I try to get mine at the farmerโ€™s market, and oh my! This makes a tomato sauce that tastes like candy. I also put a ton of garlic in my marinara, because garlic is my thing. You can always cut on some of the garlic and add some heat too with fresh chile or red pepper flakes. The goal is to let it simmer gently, for a while. Youโ€™ll end up with a very sweet and rich sauce. And you’ll end up eating it with a spoon, without pasta!

      Grape or Cherry Tomato Marinara

      • 1/3 cup good olive oil
      • Grape tomatoes (I get the equivalent of 3 pints from the farmerโ€™s market)
      • 3/4 of a whole head of garlic (minced)
      • Fresh basil, torn, to taste
      • Sea salt and pepper, to taste

      Instructions

      In large skillet (with a lid), heat up the oil over medium heat. Add the tomatoes, salt and pepper, and mix well to coat all the tomatoes. Add half of the garlic and some basil sprigs, and mix well. Put the lid on, reduced the heat to low and let simmer gently until the tomatoes start to burst open, maybe 5-10 minutes depending on the thickness of the tomatoes skin.

      In large skillet (with a lid), heat up the oil over medium heat. Add the tomatoes, salt and pepper, and mix well to coat all the tomatoes. Add half of the garlic and some basil sprigs, and mix well. Put the lid on, reduced the heat to low and let simmer gently until the tomatoes start to burst open, maybe 5-10 minutes depending on the thickness of the tomatoes skin.ย 

      Remove the lid, put the heat to medium-low, add the rest of the garlic and more basil. Taste and adjust for salt and pepper, and continue simmering, uncovered, until the sauce is thick and sweet, about 30 minutes. Taste and adjust seasonings. Enjoy with your favorite pasta or zucchini noodles. Bon appรฉtit!

      Notes

      I like my sauce chunky, but feel free to use an immersion blender to smooth out the texture and get rid of any pieces of tomato skin left behind.

      • 1/3 tasse d’huile d’olive
      • 3 pintes de tomates cerises
      • 10 gousses d’ail (รฉmincรฉes)
      • Basilic frais, hachรฉ, au goรปt
      • Sel de mer et poivre, au goรปt

      Instructions

      Dans une grande poรชle avec un couvercle, chauffer l’huile d’olive ร  feu moyen. Ajouter les tomates, le sel de mer et le poivre, et bien remuer. Ajouter la moitiรฉ de l’ail et des feuilles de basilic. Remuer, couvrir, rรฉduire ร  feu doux, et laisser mijoter doucement jusqu’ร  ce que les tomates commencent ร  percer, environ 5 ร  10 minutes, selon l’รฉpaisseur de la peau des tomates.

      Retirer le couvercle, monter le feu ร  moyen-bas, ajouter le reste de l’ail et plus de basilic. Goรปter et ajuster les assaisonnements. Continuer de mijoter jusqu’ร  ce que la sauce soit รฉpaisse et sucrรฉe, environ 30 minutes. Goรปter ร  nouveau et ajuster les assaisonnements. Bon appรฉtit!
