For the Lemon Cashew Cream:

  • 1/2 cup raw cashews
  • 1/2 cup water
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt

For the Pasta:

  • 8 oz. pasta of choice
  • 2 tablespoons olive oil
  • 4 spring onions, sliced thin, or 1/2 onion, chopped
  • 2 cups fresh asparagus, sliced thin on the diagonal
  • 4 cloves garlic, minced
  • 3 wide and long strips of lemon zest
  • 1/4 teaspoon red chili flakes
  • 4 tablespoons fresh basil, chopped
  • Juice of 2 lemons
  • Sea salt and pepper, to taste

Instructions

Cook pasta in a large pot of salted boiling water until al dente. Drain, reserving 1 cup of the cooking liquid. Meanwhile, make the Lemon Cashew Cream by blending all the ingredients in a high-speed blender until smooth. Set aside.

In a large skillet, heat the oil over medium-high heat. Add the spring onions and the asparagus. Season with salt and cook, stirring, until just beginning to take on color, about 3 minutes. Add the garlic, the lemon zest and red chili flakes, and cook 1 minute more. Add the lemon cashew cream, the lemon juice, the pasta, and stir well until well-coated, adding some of the pasta cooking liquid, as needed. Add 3 tablespoons of the fresh basil and season to taste with sea salt and pepper. Divide among bowls and top with remaining fresh basil. Bon appรฉtit!

Pour la crรจme de noix de cajou au citron :

  • 1/2 tasse de noix de cajou brutes
  • 1/2 tasse d’eau
  • 2 c. ร  soupe de jus de citron

Pour les pรขtes :

  • 8 onces de spaghetti, ou de pรขtes au choix

  • 3 longues et larges bandes de zeste de citron
  • 1/4 c. ร  thรฉ de flocons de chili broyรฉs
  • 4 c. ร  soupe de basilic frais, hachรฉ
  • Jus de 2 citrons
  • Sel de mer et poivre, au goรปt

Instructions

Cuire les pรขtes dans un grand chaudron d’eau bouillante salรฉe jusqu’ร  ce qu’elles soient al dente. ร‰goutter en rรฉservant 1 tasse du liquide de cuisson. Pendant ce temps, mรฉlanger tous les ingrรฉdients de la crรจme de noix de cajou au citron dans un mรฉlangeur haute-vitesse. Rรฉserver.

Dans une grande poรชle, chauffer l’huile d’olive ร  feu moyen-รฉlevรฉ. Ajouter les oignons de printemps et les asperges. Assaisonner de sel de mer et cuire, en brassant souvent, jusqu’ร  ce que les lรฉgumes ramollissent, environ 3 minutes. Ajouter l’ail, le zeste de citron et les flocons de chili, et cuire pendant 1 minute de plus. Ajouter la crรจme de noix de cajou, le jus de citron, les pรขtes, et mรฉlanger vigoureusement jusqu’ร  ce que les pรขtes soient bien enrobรฉes de sauce, en ajoutant du liquide de cuisson. Ajouter 3 c. ร  soupe de basilic frais et assaisonner au goรปt de sel de mer et de poivre. Servir dans des assiettes creuses, garni du reste de basilic frais. Bon appรฉtit!

When it’s pumpkin season, I love taking advantage of their freshness and abundance. Plus, they are so versatile and fun to incorporate in a variety of dishes and cuisines. In this Effortless Pumpkin and Spinach Pasta Sauce, you will get maximum satisfaction with a minimum of ingredients. The ingredients are all pantry staples, that you may already have. Just get yourself one of those pie pumpkins, also called sugar pumpkins. And if you cook it the day before, you’ll be in the kitchen no more than 15 minutes the day of. You can even put your sauce in a jar and store in the fridge until it’s time to eat. This recipe is a simple and easy way to enjoy the bounty of the season.

Effortless Pumpkin and Spinach Pasta Sauce

Ingredients

  • 3 tablespoons olive oil
  • 1 pie pumpkin (also called sugar pumpkin), cut in half, seeded
  • 4 cloves garlic, not peeled
  • 1 onion, thinly sliced
  • 4 tablespoons tomato paste
  • 1 1/2 cup coconut milk
  • 1/8 teaspoon smoked paprika
  • 2 large handfuls fresh spinach
  • Sea salt and pepper, to taste

Instructions

Preheat your oven to 350หšF (175หšC). Place two garlic cloves in each of the cavities of the pumpkin halves. Place on a parchment-lined baking sheet and pour 1 tablespoon of olive oil in each cavity. Add generous pinches of sea salt and pepper and, using your hands, rub the oil all over the cloves and the pumpkin halves. Place the halves, cut side down and hide the cloves under. Place in the oven and roast for about 45 minutes. (Doing this the day before while you do something else, is a great way to cut your time in the kitchen.) When the pumpkin is cooked through and tender when pierced with a small knife, take out of the oven and let rest.

In a skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the onion, reduce the heat to medium and let cook, until brown and caramelized, 7-8 minutes, stirring often. Add the tomato paste and let cook, while stirring, until dark red and fragrant, about 3-4 minutes. Add the coconut milk and mix until well-combined. Add the smoked paprika, sea salt and pepper to taste (about 1 teaspoon salt, 1/2 teaspoon pepper), remove from the heat and transfer to a blender. Remove the skin from the pumpkin halves and the garlic cloves and add to the blender. Process until smooth. Return to the same skillet and add the spinach over low flame, stirring until they wilt. Remove from the heat and serve with your favorite pasta. Bon appรฉtit!

Dans cette recette de sauce pour pรขtes ร  la citrouille et aux รฉpinards, la citrouille est mise en vedette et simplement rehaussรฉe d’ingrรฉdients simples que vous avez peut-รชtre dรฉjร  sous la main.   • 1 petite citrouille (environ 1 ร  1,5 kg), coupรฉe en deux, sans les graines
  • 4 gousses d’ail, avec la peau
  • 1 oignon, tranchรฉ mince
  • 4 c. ร  soupe de pรขte de tomate
  • 1 1/2 tasse de lait de coconut
  • 1/8 c. ร  thรฉ de paprika fumรฉ
  • 2 grosses poignรฉes d’รฉpinards frais
  • Sel de mer et poivre, au goรปt

Instructions

Prรฉchauffer le four ร  175หšC (350หšF). Placer les gousses d’ail dans chacune des deux cavitรฉs de la citrouille. Dรฉposer sur une tรดle de cuisson, prรฉalablement recouverte de papier parchemin. Verser 1 c. ร  soupe d’huile d’olive dans chacune des cavitรฉs. Saupoudrer gรฉnรฉreusement de sel de mer et de poivre. Avec les mains, rรฉpandre l’huile sur toutes les surfaces des gousses d’ail et de la citrouille. Placer les demi-citrouilles, la chair vers le bas, sur la tรดle de cuisson et placer les gousses d’ail sous chacune. Transfรฉrer au four et cuire pendant environ 40 ร  45 minutes. Lorsque la citrouille est cuite et tendre, retirer du four et laisser reposer.ย 

Dans une grande poรชle, chauffer 1 c. ร  soupe d’huile d’olive ร  feu moyen-รฉlevรฉ. Ajouter l’oignon, rรฉduire le feu ร  moyen et laisser cuire, jusqu’ร  ce qu’il soit dorรฉ et caramรฉlisรฉ, 7 ร  8 minutes, en brassant souvent. Ajouter la pรขte de tomate et laisser cuire jusqu’ร  ce que celle-ci soit rouge foncรฉ et aromatique, environ 3 ร  4 minutes. Ajouter le lait de coconut et bien mรฉlanger. Ajouter le paprika fumรฉ, le sel et le poivre, au goรปt (ou 1 c. ร  thรฉ de sel et 1/2 c. ร  thรฉ de poivre) et retirer du feu. Transfรฉrer le contenu dans un mรฉlangeur et ajouter la chair de citrouille et les gousses d’ail, en prenant soin de retirer la peau. Mรฉlanger jusqu’ร  l’obtention d’un mรฉlange onctueux. Remettre dans la mรชme poรชle et chauffer ร  feu doux en ajoutant les รฉpinards. Bien mรฉlanger jusqu’ร  ce que les รฉpinards se fanent. Retirer du feu et servir avec vos pรขtes prรฉfรฉrรฉes. When the weather starts to cool in Arizona (I’m talking 90-degree weather!), I start to crave comfort and cooked food. These Autumn-Spiced Pumpkin Raviolis with Sage Brown Butter are fancy enough for company, but are also great to make with kids. It will take a bit of your time, but all the steps are very easy, and trust me the result is beyond words. I decided to flavor them with spices that reminds of the harvest and this special time of the year where everything is bountiful and full of the last rays of sunshine. I hope you enjoy them!

Autumn-Spiced Pumpkin Raviolis with Sage Brown Butter

Ingredients

  • 1 cooking pumpkin, halved and seeded
  • 4 cloves of garlic, left whole
  • 2 tablespoons olive oil
  • 1 cup semolina flour
  • 1 cup all-purpose flour
  • 1/2 cup aquafaba (the liquid from a can of chickpeas, keep the chickpeas for another use)
  • 3 tablespoons water
  • 1/2 cup toasted pecans, plus more for serving
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon grated nutmeg
  • 9 tablespoons butter, divided
  • 1 teaspoon maple syrup
  • 25 sage leaves, left whole
  • Sea salt and pepper, to taste

Instructions

Preheat oven to 400ยฐ. Coat all sides of the pumpkin and garlic cloves with the olive oil, and sprinkle generously with sea salt and pepper. Place the pumpkin halves, cut side down, on a parchment-lined baking sheet. Place two garlic cloves under each half. Transfer to the oven, and roast until tender, about 40-45 minutes. Remove from the oven and let cool.

While the pumpkin cooks, mix the semolina flour and the all-purpose flour in a large mixing bowl. Add the aquafaba and the water, and mix well with your hands, until you obtain a soft and uniform ball of dough. If the dough is too wet, add a little flour. If it is too dry, add a little water, one teaspoon at a time. Place the ball of dough in a plastic wrap and place in the fridge to rest for 40 minutes.

While the dough rests, scoop out 1 cup of flesh from the roasted pumpkin. Keep the rest for another use, like in a soup, or in a sauce. Transfer the flesh to a food processor. Peel the garlic cloves and add to the food processor. Add the toasted pecans, the cinnamon, the cloves, the nutmeg, 1 tablespoon of the butter, the maple syrup, and 1/4 teaspoon sea salt. Process until smooth. Set aside.

After resting time, remove the dough from the fridge and from the plastic wrap. On a lightly flour-dusted surface, roll out the dough, using a rolling pin, until smooth and very thin. Using a 2-in cookie cutter, or any other round cup similar in diameter, cut dough into circles. Make a ball with the unused dough, and roll out again until smooth and thin. Cut out more circles, until you use all the dough.

Scoop out a very scant teaspoon of pumpkin mixture in the center of half the circles (the โ€œbottomsโ€). Using your fingers, spread a small amount of water around the inside perimeter of the dough โ€œtopsโ€. Place them on top of the filled dough bottoms and press around the edges to seal properly. You should have approximately 40 raviolis.

Heat the remaining 8 tablespoons butter in a small saucepan, over medium-high heat. Add the sage leaves and cook until they are crispy and the butter is golden brown, approximately 5-10 minutes, adjusting the heat to make sure not to burn the butter.

While the butter cooks, cook the raviolis. Place them, without overcrowding, in a large pot of salted boiling water, for 4-5 minutes. I did mine in two batches.

Place some raviolis in a plate, spoon some of the sage butter on top, along with the crispy sage, and garnish with toasted pecans. Bon appรฉtit!

Notes

I like cutting up the leftover pumpkin and roasting while I make the raviolis. Simply cut into small cubes, season with olive oil, sea salt and pepper. Place in a 425หš oven for 15-20 minutes. Serve with the raviolis along with the sage brown butter, the crispy sage, and the toasted pecans.

  • 1 petite citrouille ร  cuire, coupรฉe en deux et รฉpรฉpinรฉe
  • 4 gousses d’ail entiรจres
  • 2 c. ร  soupe d’huile d’olive
  • 1 tasse de farine de semoule
  • 1 tasse de farine tout usage
  • 1/2 tasse d’aquafaba (liquide d’une boรฎte de pois chiches, garder les pois chiches pour un autre usage, comme cette soupe)
  • 3 c. ร  soupe d’eau
  • 1/2 tasse de pacanes rรดties, et plus pour la garniture
  • 1/8 c. ร  thรฉ de cannelle
  • 1/8 c. ร  thรฉ de clou de girofle moulu
  • 1/8 c. ร  thรฉ de muscade
  • 9 c. ร  soupe de beurre, divisรฉ
  • 1 c. ร  thรฉ de sirop d’รฉrable
  • 25 feuilles de sauge entiรจres
  • Sel de mer et poivre, au goรปt

Instructions

Prรฉchauffer le four ร  400ยฐ. Badigeonner la citrouille et les gousses dโ€™ail avec lโ€™huile dโ€™olive et assaisonner gรฉnรฉreusement de sel de mer et de poivre. Placer les moitiรฉs de citrouille, partie coupรฉe vers le bas, sur une plaque de cuisson prรฉalablement recouverte de papier parchemin. Insรฉrer les gousses d’ail sous chacune des moitiรฉs. Mettre au four et cuire jusquโ€™ร  ce que la courge soit tendre, environ 40-45 minutes. Retirer du four et laisser refroidir.

Dans un grand bol, mรฉlanger la farine de semoule et la farine tout usage. Ajouter lโ€™aquafaba et lโ€™eau. Bien mรฉlanger avec les mains, jusquโ€™ร  lโ€™obtention dโ€™une pรขte lisse et uniforme. Si la pรขte est trop mouillรฉe, ajouter de la farine. Si elle est trop sรจche, ajouter un peu dโ€™eau, une cuillรจre ร  thรฉ ร  la fois. Placer la pรขte dans un papier plastique et mettre au rรฉfrigรฉrateur pendant 40 minutes.

Pendant que la pรขte repose au rรฉfrigรฉrateur, mesurer 1 tasse de citrouille. Conserver les restes au rรฉfrigรฉrateur pour une autre utilisation. Mettre la tasse de citrouille dans le bol dโ€™un robot culinaire. Ajouter les pacanes rรดties, la cannelle, le clou de girofle, la muscade, 1 c. ร  soupe de beurre et le sirop dโ€™รฉrable. Pulser jusquโ€™ร  lโ€™obtention dโ€™un mรฉlange onctueux. Rรฉserver.

Retirer la pรขte du rรฉfrigรฉrateur. Sur une surface lรฉgรจrement enfarinรฉe, rouler la pรขte trรจs mince. En utilisant un emporte-piรจce de deux pouces de diamรจtre, ou un contenant avec un diamรจtre semblable, couper la pรขte en cercles. Faire une boule avec les restes de pรขte, et rouler ร  nouveau et dรฉcouper le reste des cercles, jusquโ€™ร  ce quโ€™il nโ€™y ait plus de pรขte.

Mesurer 1 petite cuillรจre ร  thรฉ de garniture et dรฉposer dans le milieu de la moitiรฉ des cercles (les โ€œfondsโ€). Avec les doigts, mouiller le pรฉrimรจtre de chacun des โ€œdessusโ€ et dรฉposer sur les โ€œfondsโ€ garnis. Presser sur les rebords afin de les faire adhรฉrer. Vous devriez obtenir environ 40 raviolis.

Chauffer le reste du beurre (8 c. ร  soupe), ร  feu moyen-รฉlevรฉ. Ajouter les feuilles de sauge et cuire jusquโ€™ร  ce quโ€™elle soient croustillantes et que le beurre soit dorรฉ, environ 5 ร  10 minutes.

Pendant que le beurre ร  la sauge cuit, faire cuire les raviolis. Placer dans une grande casserole dโ€™eau salรฉe bouillante, pendant 4 ร  5 minutes. Jโ€™ai cuit les miens en deux fois.

Placer les raviolis dans une assiette et garnir de beurre, de feuilles de sauge croustillante, et de pacanes rรดties. Bon appรฉtit!

Notes

Parfois, je coupe les restes de citrouilles en petits cubes. J’assaisonne librement d’huile d’olive, de sel de mer et de poivre, et je place au four, ร  425หš pendant 15 ร  20 minutes. Vous pouvez donc servir les raviolis avec le beurre ร  la sauge, les feuilles de sauge, les pacanes et la citrouille rรดtie.

My Take on Mac and Cheese

I would suggest you cook your squash the day before or the morning of. It’s not a hard process, the oven does all the work, but having this done will cut your recipe making time significantly. All you have to do is preheat the oven to 400หš. Prick the squash with a sharp knife four times, place the squash directly on the oven rack and roast for one hour. Remove from the oven and let cool. Once cool enough to handle, peel, seed and cut into cubes. You now have cooked butternut squash flesh!

  • 1 butternut squash, cooked and diced (see description above to see how I do)
  • 1/2 cup raw cashews, soaked overnight or 30 minutes in hot water, rinsed and drained
  • 2 teaspoons olive oil
  • 1 large onion, diced
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon ground turmeric
  • 2 teaspoons each sea salt and pepper
  • 1/2 cup plant-based milk (I use oat milk)
  • 1 teaspoon Dijon mustard
  • 2 tablespoons lemon juice
  • 1 package macaroni or fusilli pasta, cooked

Instructions

Heat the olive oil in a skillet over medium-high heat. Add the onion and cook, stirring occasionally, until the onion turns a deep golden color and is nicely caramelized, about 7-8 minutes. Add the garlic powder, smoked paprika and turmeric. Cook, stirring, for an additional two minutes. Remove from the heat.

In a high-speed blender, place the squash, the cashews, the onion mixture, plant-based milk, Dijon mustard, lemon juice, and sea salt and pepper. Blend until silky smooth.

In a large pot or bowl, mix the pasta with the desired amount of sauce and serve. I like mine with crispy sage or minced fresh parsley, for a more adult version. You may also keep aside some cubed squash and fry them in a bit of olive oil and a sprig of rosemary. Serve atop the pasta. Either way, all yummy!

Ce n’est pas un processus complexe, le four fait le gros du travail, mais ceci coupera le temps d’assemblage de la recette de faรงon significative. Pour ce faire, prรฉchauffez le four ร  400หš. Faites quatre petites incisions dans la courge ร  l’aide d’un petit couteau. Placez la courge directement sur la grille du four et cuire pendant une heure. Retirez du four et laissez refroidir. Vous pouvez ensuite peler et retirer les graines. Coupez ensuite en cubes et voilร !

  • 1 courge butternut, cuite et coupรฉe en cubes (voir la description plus haut pour voir comment je fais)
  • 1/2 tasse de noix de cajou brutes, trempรฉes toute une nuit ou 30 minutes dans l’eau chaude
  • 2 c. ร  thรฉ d’huile d’olive
  • 1 gros oignon, coupรฉ en dรฉs
  • 1/2 c. ร  thรฉ de poudre d’ail
  • 1/4 c. ร  thรฉ de paprika fumรฉ
  • 1/4 c. ร  thรฉ de curcuma moulu
  • 2 c. ร  thรฉ chacun de sel de mer et de poivre
  • 1/2 tasse de lait de plante (j’utilise du lait d’avoine)
  • 1 c. ร  thรฉ de moutarde de Dijon
  • 2 c. ร  soupe de jus de citron
  • 1 boรฎte de macaroni ou fusilli, cuits

Instructions

Chauffer l’huile d’olive dans une poรชle ร  feu moyen-vif. Ajouter l’oignon et cuire, en brassant souvent, jusqu’ร  ce que l’oignon soit tendre et caramรฉlisรฉ, environ 7-8 minutes. Ajouter la poudre d’ail, le paprika fumรฉ et le curcuma. Cuire, en brassant, deux minutes de plus. Retirer du feu.

Dans un mรฉlangeur ร  haute vitesse, placer la courge, les noix de cajou, le mรฉlange oignon et รฉpices, le lait, la moutarde de Dijon, le jus de citron, et le sel de mer et poivre. Mรฉlanger jusqu’ร  l’obtention d’une texture lisse. Goรปter et ajuster les assaisonnements.

Dans une grande casserole ou un grand bol, mรฉlanger les pรขtes cuites avec la quantitรฉ de sauce dรฉsirรฉe. J’aime bien garnir mon macaroni avec de la sauge croustillante ou du persil frais hachรฉ. Vous pouvez aussi garder des cubes de courge et les faire sauter dans l’huile d’olive avec une branche de romarin, pour une version plus adulte. Quelle que soit la garniture, ou mรชme sans, c’est dรฉlicieux!

Creamy Avocado Vinaigrette for Pasta Salad
Creamy Avocado Vinaigrette for Pasta Salad

Pasta salad can be extremely boring and unappetizing, or supremely colorful and healthy. I choose the latter with this Creamy Avocado Vinaigrette for Pasta Salad. So instead of spending time dicing carrots and celery for the usual mayo and pasta party, I slice up some red cabbage and some baby broccoli. To that I can add some seasonal fruit, red pepper, roasted pumpkin seeds, and a handful of fresh herbs. I then toss this goodness up with quinoa pasta and dress it with a creamy avocado vinaigrette. It’s pretty, it’s healthy, and it’s seriously nutritious. The kids also love it, which means extra points for me!

Note: At the beginning of the week (or on Sunday), I chop up all the vegetables I’ll use for the salad. I keep them in a resealable container and have them handy throughout the week. This salad is also great for lunches, and you can also layer it in Mason jars for al fresco dining.

  • 1 avocado, peeled and seeded
  • 1/3 cup avocado oil
  • 2 tablespoons lemon juice
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon maple syrup
  • Sea salt and pepper, to taste

Instructions

Place the avocado, the oil, the lemon juice, the apple cider vinegar, and the maple syrup in a blender (I use a hand held mixer to purรฉe everything). Add sea salt and pepper, to taste. Vinaigrette crรฉmeuse ร  l’avocat pour salade de pรขtes

Les salades de pรขtes peuvent รชtre ennuyeuses et monotones, mais elles peuvent aussi รชtre allรฉchantes et nutritives. Alors au lieu de perdre du temps ร  couper des carottes et du cรฉleri, optez plutรดt pour la kale et le bรฉbรฉ brocoli. Ajoutez-y des fruits de saison, du poivron rouge, des graines de citrouille grillรฉes, et une poignรฉe d’herbes fraรฎches. Mรฉlangez cet arc-en-ciel de santรฉ avec des pรขtes de quinoa, cuites au prรฉalable, et une gรฉnรฉreuse touche de vinaigrette crรฉmeuse ร  l’avocat. C’est beau, c’est santรฉ, et c’est hyper nutritif. Les enfants aussi en raffolent.

Petit truc: en dรฉbut de semaine, ou le dimanche, je prรฉpare tous les lรฉgumes dรฉsirรฉs pour la salade. Je les conserve dans un contenant hermรฉtique, dans lequel je peux aller piger durant la semaine. Cette salade est parfaite pour les lunchs. Vous pouvez mรชme la dรฉposer en รฉtages dans des pots Mason pour les repas ร  l’extรฉrieur.

Banza Ziti Bolognese with Italian Sausage

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 celery rib, diced
  • 2 cloves garlic, minced
  • 1/2 can tomato paste
  • 2 28-oz cans Italian tomatoes (crushed with your hands)
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 cup red pepper flakes
  • 1/8 teaspoon cinnamon
  • 1 teaspoon maple syrup
  • 3/4 cup TVP (textured vegetable protein)
  • 3/4 cup vegetable broth
  • 2 plant-based sausages, sliced into 1/4″ rounds (Beyond or Field Roast)
  • Sea salt and pepper, to taste
  • 1 package Banza Ziti, undercooked by 2-3 minutes
  • 1/2 wheel mozzarella (I love Miyoko’s)
  • Fresh basil
  • Nutritional yeast (optional)

Instructions

In a large straight-edge skillet, heat up the olive oil over medium heat. Add the onion, celery, and garlic, and sautรฉ until the onion is translucent, about 4 minutes. Add the tomato paste, and let it take some color, about 2-3 minutes. Once it’s darker and fragrant, add the crushed tomatoes, oregano, garlic and onion powder, cinnamon, maple syrup, and salt and pepper to taste. Mix well. Let simmer and reduce, over medium-low heat, until the sauce is fragrant and tasty, about 40 minutes, stirring often and adjusting the heat, if necessary. Once the sauce is reduced, add the broth and the TVP, and combine until rehydrated. Add the Italian sausage and the cooked pasta, and heat through.

Preheat broiler. To assemble, place the pasta in an oven-proof baking dish (at least 2.2 quarts). Spread your mozzarella on top and transfer to the oven. Broil until the cheese is bubbly and brown. Take out of the oven and let cool for a few minutes before serving, garnished with fresh basil and nutritional yeast. Bon appรฉtit!

  • 3 onces de pรขte de tomate (1/2 boรฎte)
  • 2 boรฎtes de 28 onces de tomates italiennes (รฉcrasรฉes avec les mains)
  • 1 c. ร  thรฉ d’origan sรฉchรฉ
  • 1 c. ร  thรฉ de poudre d’ail
  • 1 c. ร  thรฉ de poudre d’oignon
  • 1/4 tasse de flocons de piments broyรฉs
  • 1/8 c. ร  thรฉ de cannelle moulue
  • 1 c. ร  thรฉ de sirop d’รฉrable
  • 3/4 tasse de protรฉine vรฉgรฉtale texturรฉe
  • 3/4 tasse de bouillon de lรฉgumes
  • 2 saucissons vรฉgรฉ, en tranches de 1/4 pouce (Beyond ou autre)
  • Sel de mer et poivre, au goรปt
  • 1 boรฎte de ziti Banza ou autre, cuites selon les instructions, moins 2 ou 3 minutes
  • Mozzarella (j’adore le fromage Miyoko’s)
  • Basilic frais
  • Levure alimentaire (optionnel)

Instructions

Dans une grande poรชle, chauffer l’huile d’olive ร  feu moyen. Ajouter l’oignon, le cรฉleri et l’ail, et faire revenir jusqu’ร  ce que l’oignon soit translucide, environ 4 minutes. Ajouter la pรขte de tomate et laisser cuire pendant 2 ร  3 minutes. Une fois la pรขte de tomate aromatique, ajouter les tomates broyรฉes, l’origan, la poudre d’ail et d’oignon, la cannelle, le sirop d’รฉrable, et le sel de mer et le poivre. Bien mรฉlanger. Laisser mijoter, ร  feu moyen-bas, jusqu’ร  ce que la sauce soit รฉpaisse et aromatique, en brassant souvent, environ 40 minutes. Une fois la sauce prรชte, ajouter le bouillon de lรฉgumes et la protรฉine vรฉgรฉtale texturรฉe. Mรฉlanger jusqu’ร  ce que la protรฉine soit rรฉhydratรฉe. Ajouter les tranches de saucisse et les pรขtes, prรฉalablement cuites, et rรฉchauffer.

Prรฉchauffer le four ร  gril (broil). Pour assembler, placer les pรขtes dans un plat allant au four (au moins 2,2 quarts). Disposer des tranches de mozzarella sur le dessus et placer sur la grille supรฉrieure du four. Griller jusqu’ร  ce que le mozzarella soit bien dorรฉ. Retirer du four et laisser reposer quelques minutes. Garnir de basilic frais et de levure alimentaire, si dรฉsirรฉ. Bon appรฉtit!

  • 1 small red onion, diced
  • 1/2 red bell pepper, diced
  • 1 cup green beans, cut in 1/2″ pieces
  • 2 cloves garlic, peeled and smashed
  • 1” piece fresh ginger, smashed (optional)
  • 1” piece fresh turmeric, smashed (optional)
  • 1 can black beans, rinsed and drained
  • 1 full cup of kale, in a chiffonade
  • 4 zucchini, spiralized
  • Sea salt and pepper
  • Fresh herbs, olive oil, lemon juice (for my go-to vinaigrette, click here)

Instructions

In a large skillet, heat the oil over medium-high heat. Add the onions, bell pepper, green beans, garlic, ginger, turmeric, and generous pinches of sea salt and pepper. Sautรฉ until the vegetables are starting to soften, 3-4 minutes. Add the beans and kale, and heat through. Take off the heat. Place zoodles at the bottom of a shallow bowl and top with the beans mixture. Top with fresh herbs, olive oil, and lemon juice, or your favorite vinaigrette. Bon appรฉtit!

Dans une grande poรชle, faire chauffer l’huile ร  feu moyen-รฉlevรฉ. Banza Rotini with Leeks and Shiitake Mushrooms

This Banza Rotini with Leeks and Shiitake Mushrooms is a protein-packed dish. If you eat a plant-based diet and protein intake is on your mind, this recipe is for you. Take comfort in knowing that just the pasta part of the meal already contains 25 grams of clean, plant-based protein. Banza is awesome that way, because their pastas are made from chickpeas. You eat pasta, you eat chickpeas! Whatever you add to this will simply boost your nutrient intake, so it’s a hefty good start!

Here, I used one of my favorite combinations: mushrooms and leeks. The slowly cooked leeks become silky savory, and the coconut milk brings you a nice dose of healthy fats along with the creaminess that is so pleasant with mushrooms. I add some warming jerk spices, to complete the flavor profile, in a simple addition, but you could skip that step and still get something fabulous, all in one pot, with less than 10 ingredients!

Banza Rotini with Leeks and Shiitake Mushrooms

Ingredients

  • 1 package Banza Rotini, cooked according to package directions
  • 2 tablespoons olive oil
  • 2 leeks, cleaned well, sliced once lengthwise, and then thinly crosswise
  • 1 sprig fresh thyme
  • 7 oz shiitake mushrooms, trimmed, sliced thin
  • 2 teaspoons jerk spice mix (optional)
  • 1 can coconut milk
  • 1 tablespoon fresh parsley, chopped
  • 1/3 cup toasted pecan halves (optional)
  • Sea salt and pepper

Instructions

In a large cast iron skillet, heat the oil over medium heat. Add the leeks, the thyme, generous pinches of sea salt and pepper, and cook slowly, stirring often, until the leeks are soft and tender, about 8-10 minutes. Then add the mushrooms and cook until they are tender, about 5 minutes more. Add the jerk spices and mix well. Add the coconut milk and heat through. Add the cooked pasta, mix well, and take off the heat. Taste and adjust seasonings, if necessary. Garnish with fresh parsley and toasted pecans.

  • 2 poireaux, propres et coupรฉs en deux sur la longueur et ensuite en tranches minces
  • 1 branche de thym frais
  • 7 onces de champignons shiitake, parรฉs et coupรฉs en tranches minces
  • 2 c. ร  thรฉ de mรฉlange ร  รฉpices jerk (en option)
  • 1 boรฎte de lait de coconut
  • 1 c. ร  soupe de persil frais, รฉmincรฉ
  • 1/3 tasse de noix de pรฉcan (en option)
  • Sel de mer et poivre, au goรปt

Instructions

Dans une grande poรชle de fonte, chauffer l’huile ร  feu moyen. Ajouter les poireaux, le thym, et de gรฉnรฉreuses pincรฉes de sel de mer et de poivre. Cuire doucement, en brassant souvent, jusqu’ร  ce que les poireaux soient tendres, de 8 ร  10 minutes. Ajouter ensuite les champignons et cuire jusqu’ร  ce qu’ils soient tendres, environ 5 minutes de plus. Ajouter le mรฉlange d’รฉpices jerk et bien mรฉlanger. Ajouter le lait de coconut et mรฉlanger. Ajouter les pรขtes cuites, rรฉchauffer, ajuster les assaisonnements si nรฉcessaire, et retirer du feu. Garnir de persil frais et des noix de pรฉcan rรดties. Bon appรฉtit!

The Lasagna alla Karina is easy andโ€ฆ full of surprises! You could easily fool a meat eater into thinking it’s a plain old meat lasagna. I’ve started playing with TVP (textured vegetable protein) recently, and oh the possibilities! My mind is bubbling! But first, lasagna! The trick to cut your time is to make your ricotta the day before or the morning of. Each step is easy and quick, though. I wrote the recipe according to each one, with the assembly as the last step.

Ingredients

For the tofu ricotta (inspired by the Whole Foods recipe):

  • 1/2 package extra-firm tofu, drained
  • 2 teaspoons tahini
  • 2 cloves garlic, chopped
  • 1 tablespoon nutritional yeast
  • 1 teaspoon white miso
  • 2 teaspoons lemon juice
  • 2 tablespoons chopped basil
  • Pinch black pepper

For the sauce:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 celery rib, diced
  • 3 cloves garlic, minced
  • 1/4 cup dry white wine (optional)
  • 1 1/2 cup vegetable broth
  • 1 1/2 cup TVP (I like Bob’s Red Mill)
  • 2 24-oz jars of your favorite marinara sauce
  • 2 tablespoons basil, chopped

For the assembly:

  • 1 lb. lasagna sheets, cooked according to package directions
  • 1 teaspoon olive oil
  • 1 round Miyokos Mozzarella (or your favorite mozz)
  • Fresh basil
  • Nutritional yeast

Instructions

For the tofu ricotta:

Put all the ingredients in the bowl of a food processor and process until smooth. Set aside.

For the sauce:

In a large skillet, heat the olive oil over medium heat. Add the onion, celery, and garlic, and sautรฉ until the onion is translucent, about 8-10 minutes. Deglaze the skillet with the white wine (or vegetable broth) and let it evaporate. Add the vegetable broth, bring to a boil, and add the textured vegetable protein. Reduce the heat and continue cooking until the broth is absorbed. Add the marinara sauce, heat through. Add fresh basil and done.

For the assembly:

Preheat oven to 375หš. Pour the olive oil at the bottom of a 9″ x 13″ baking dish. Spread it evenly with your hands on the bottom and the side surfaces of the dish. Pour 1 cup of the sauce at the bottom and cover with 5 cooked lasagna sheets. Top with 1 cup of sauce. Spread about 1/3 cup of the ricotta and top with 5 cooked lasagna sheets. Repeat until you are done with the lasagna sheets, and finish with some sauce. Add the mozzarella. Cover with foil and bake for 20 minutes. Remove the foil and broil for an extra 5 minutes, until the cheese is browning and bubbling. Garnish with some nutritional yeast and fresh basil. Bon appรฉtit!

  • 3 cloves garlic, minced
  • 1/4 cup dry white wine (optional)
  • 1 1/2 cup vegetable broth
  • 1 1/2 cup TVP (I like Bob’s Red Mill)
  • 2 24-oz jars of your favorite marinara sauce
  • 2 tablespoons basil, chopped

For the assembly:

  • 1 lb. lasagna sheets, cooked according to package directions
  • 1 teaspoon olive oil
  • 1 round Miyokos Mozzarella (or your favorite mozz)
  • Fresh basil
  • Nutritional yeast

Instructions

For the tofu ricotta:

Put all the ingredients in the bowl of a food processor and process until smooth. Set aside.

For the sauce:

In a large skillet, heat the olive oil over medium heat. Add the onion, celery, and garlic, and sautรฉ until the onion is translucent, about 8-10 minutes. Deglaze the skillet with the white wine (or vegetable broth) and let it evaporate. Add the vegetable broth, bring to a boil, and add the textured vegetable protein. Reduce the heat and continue cooking until the broth is absorbed. Add the marinara sauce, heat through. Add fresh basil and done.

For the assembly:

Preheat oven to 375หš. Pour the olive oil at the bottom of a 9″ x 13″ baking dish. Spread it evenly with your hands on the bottom and the side surfaces of the dish. Pour 1 cup of the sauce at the bottom and cover with 5 cooked lasagna sheets. Top with 1 cup of sauce. Spread about 1/3 cup of the ricotta and top with 5 cooked lasagna sheets. Repeat until you are done with the lasagna sheets, and finish with some sauce. Add the mozzarella. Cover with foil and bake for 20 minutes. Remove the foil and broil for an extra 5 minutes, until the cheese is browning and bubbling. Garnish with some nutritional yeast and fresh basil. Bon appรฉtit!

Butterkin Pecan Ravioli with Sage Brown Butter

  • 1 butterkin squash, or butternut squash, or cooking pumpkin, halved and seeded
  • 34 cloves garlic, whole and unpeeled
  • 2 tablespoons olive oil
  • 1 cup semolina flour
  • 1 cup all purpose flour, plus more for dusting
  • 1/2 cup aquafaba (water from a can of chickpeas)
  • 3 tablespoons water
  • 1/2 cup toasted pecans, plus more for toppings
  • 1 tablespoon nutritional yeast
  • 9 tablespoons butter, divided
  • 1 teaspoon maple syrup
  • 25 sage leaves, left whole
  • Sea salt and pepper, to taste

Instructions

Preheat oven to 400ยฐ. Coat all sides of the squash and garlic cloves with the olive oil, and sprinkle generously with salt and pepper. Place the squash halves, cut side down, as well as the whole garlic cloves, on a parchment-lined baking sheet. Transfer to the oven, and roast until tender, about 40 minutes. Remove from the oven and let cool.

In a large bowl, mix the semolina flour and the all purpose flour. Add the aquafaba and the water and mix well with your hands, until you obtain a soft and uniform ball of dough. If the dough is too wet, add a little bit of flour. If it is too dry, add a little bit of water, one teaspoon at a time. Place the ball of dough in a plastic wrap and place in the fridge to rest for 40 minutes.

While the dough rests, scoop out 1 cup of flesh from the roasted squash. Keep the rest for another use, like in a soup, or in a sauce. Transfer the flesh to a food processor. Peel the garlic cloves and add to the food processor. Add the toasted pecans, the nutritional yeast, 1 tablespoon of the butter, and the maple syrup. Process until smooth. Set aside.

After resting time, remove the dough from the fridge and from the plastic wrap. On a lightly flour-dusted surface, roll out the dough, using a rolling pin, until smooth and very thin. Using a 2-in cookie cutter, or any other round cup similar in diameter, cut dough into circles. Make a ball with the unused dough, and roll out again until smooth and thin. Cut out more circles, until you use all your dough.

Scoop out a scant teaspoon of squash mixture in the center of half the circles (the “bottoms”). Using your fingers, spread a small amount of water around the inside perimeter of the dough “tops”. Place them on top of the filled dough bottoms and press around the edges to seal properly. You should have approximately 40 raviolis.

To cook the raviolis, place them, without overcrowding them, in a large pot of salted boiling water, for 4-5 minutes. I did mine in two batches.

While the raviolis cook, heat the remaining 8 tablespoons butter in a small saucepan, over medium heat. Add the sage leaves and cook until they are crispy and the butter is golden brown, approximately 5 minutes.

Place some raviolis in a plate, spoon some of the sage butter on top, and garnish with toasted pecans. Bon appรฉtit!

  • 1 courge butterkin, ou butternut, coupรฉe en deux, les graines enlevรฉes
  • 34 gousses d’ail, entiรจres
  • 2 c. ร  soupe d’huile d’olive
  • 1 tasse de farine de semoule
  • 1 tasse de farine tout usage (un peu plus pour rouler la pรขte)
  • 1/2 tasse d’aquafaba (liquide d’une boรฎte de pois chiches)
  • 3 c. ร  soupe d’eau
  • 1/2 tasse de pacanes rรดties (plus 1/3 tasse pour la garniture)
  • 1 c. ร  soupe de levure alimentaire
  • 9 c. ร  soupe de beurre, divisรฉ
  • 1 c. ร  thรฉ de sirop d’รฉrable
  • 25 feuilles de sauge entiรจres
  • Sel de mer et poivre, au goรปt

Instructions

Prรฉchauffer le four ร  400ยฐ. Badigeonner la courge et les gousses d’ail avec l’huile d’olive et assaisonner gรฉnรฉreusement de sel et de poivre. Placer les moitiรฉs de courge, partie coupรฉe vers le bas, sur une plaque de cuisson prรฉalablement recouverte de papier parchemin. Mettre au four et cuire jusqu’ร  ce que la courge soit tendre, environ 40 minutes. Retirer du four et laisser refroidir.

Dans un grand bol, mรฉlanger la farine de semoule et la farine tout usage. Ajouter l’aquafaba et l’eau. Bien mรฉlanger avec les mains, jusqu’ร  l’obtention d’une pรขte lisse et uniforme. Si la pรขte est trop mouillรฉe, ajouter de la farine. Si elle est trop sรจche, ajouter un peu d’eau, une c. ร  thรฉ ร  la fois. Placer la pรขte dans un papier plastique et mettre au rรฉfrigรฉrateur pendant 40 minutes.

Pendant que la pรขte repose au rรฉfrigรฉrateur, mesurer 1 tasse de courge. Conserver les restes au rรฉfrigรฉrateur pour une autre utilisation. Mettre la courge dans le bol d’un robot culinaire. Ajouter les pacanes rรดties, la levure alimentaire, 1 c. ร  soupe de beurre et le sirop d’รฉrable. Pulser jusqu’ร  l’obtention d’un mรฉlange onctueux. Mettre la garniture de cรดtรฉ.

Retirer la pรขte du rรฉfrigรฉrateur. Sur une surface enfarinรฉe lรฉgรจrement, rouler la pรขte trรจs mince. En utilisant un emporte-piรจce de deux pouces de diamรจtre, ou un verre ou contenant avec un diamรจtre semblable, couper la pรขte en cercles. Faire une boule avec les restes de pรขte, et rouler ร  nouveau pour couper le reste des cercles, jusqu’ร  ce qu’il n’y ait plus de pรขte.

Mesurer 1 c. ร  thรฉ de garniture et dรฉposer dans le milieu de la moitiรฉ des cercles (les “fonds”). Avec les doigts, mouiller le pรฉrimรจtre de chacun des “dessus” et dรฉposer sur le dessus des “fonds” garnis. Presser sur les rebords afin de les faire adhรฉrer. Vous devriez obtenir environ 40 raviolis.

Pour cuire les raviolis, placer dans une grande casserole d’eau salรฉe bouillante, pendant 4 ร  5 minutes. J’ai cuit les miens en deux fois.

Pendant que les raviolis cuisent, chauffer le reste du beurre (8 c. ร  soupe), ร  feu moyen. Ajouter les feuilles de sauge et cuire jusqu’ร  ce qu’elle soient croustillantes et que le beurre soit dorรฉ, environ 5 minutes.

Placer les raviolis dans une assiette et garnir de beurre, de feuilles de sauge, et de pacanes rรดties. Bon appรฉtit!
