Wild Rice with Acorn Squash, Caramelized Onions, Pomegranate and Maple Vinaigrette

  • Author: Karine K
  • Prep Time: 10 minutes
  • Cook Time: 45 minutes
  • Total Time: 55 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

For the Wild Rice:

  • 1 cup wild rice, rinsed well and drained
  • 4 cups vegetable broth or water

For the Acorn Squash:

  • 2 acorn squash, peeled and cut into small cubes (or 1 butternut)
  • 1 tablespoon olive oil
  • 1 tablespoon maple
  • Sea salt and pepper, to taste

For the Caramelized Onions:

  • 1 large onion, sliced thin
  • 1 teaspoon olive oil
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon maple syrup
  • Sea salt

For the Vinaigrette:

  • 1 teaspoon garlic, minced
  • 1/2 teaspoon Dijon mustard
  • 2 tablespoon maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon red wine vinegar
  • 6 tablespoons olive oil
  • Sea salt and pepper, to taste

To Serve:

  • 1 cup pomegranate
  • Pumpkin seeds (totally optional)

Instructions

For the Wild Rice:

In a medium saucepan, bring the wild rice and the broth/water to a boil. Reduce the heat to obtain a simmer, cover and let cook approximately 45 minutes, until some grains start to burst open and the rice is still chewy. Drain and set aside.

For the Acorn Squash:

Preheat the oven to 400หšF (200หšC). In a mixing bowl, place the squash cubes, the olive oil, the maple, and some sea salt and pepper. Mix well with your hands and place on a parchment-lined baking sheet. Roast in the oven for 20-25 minutes, until tender and cooked through. Remove from oven and set aside.

For the Caramelized Onions:

Heat the olive oil in a sautรฉ pan over medium-high heat. Add the onion and cook, stirring often, for 5 minutes. You may need to adjust the heat. You want the onions to brown, but not burn. Add a sprinkle of sea salt, mix well and lower the heat a little. Cook for an additional 5-10 minutes, until the onions are soft and caramelized. Add the balsamic and the maple syrup, mix well and remove from the heat.

For the Maple Vinaigrette:

Whisk all ingredients together in a small bowl or shake in a mason jar.

To Serve:

Place the rice, the acorn squash, the caramelized onions, the vinaigrette and the pomegranate in a large mixing bowl and mix well. Remove to a serving platter and enjoy! Bon appรฉtit!

Edamame Potstickers

Edamame Potstickers
Edamame Potstickers

Potstickers or dumplings? It’s all a little confusing. From my research, it seems that dumplings are simply steamed and potstickers have a crispy exterior due to the way that they are cooked, as you’ll see below. But who doesn’t love them? These little packets of flavor, taking their origin in China, traditionally contain a mixture of pork, cabbage, scallions, and ginger. For this recipe, we forego the meat and use the protein-rich edamame as a base. In addition, these Edamame Potstickers contain shiitake mushrooms and a few other simple ingredients for a dish that is easy to make and secures a high dose of umami. We serve them with a quick and simple sauce made from tamari (or soy sauce), sambal oelek and lime juice, so plan for a little extra of those ingredients. They are so satisfying!

Edamame Potstickers

  • Author: Karine K
  • Prep Time: 30 minutes
  • Cook Time: 15 minutes
  • Total Time: 45 minutes
  • Yield: 6 servings 1x
  • Method: Stovetop
  • Cuisine: Chinese

Ingredients

Scale
  • 2 cups frozen shelled edamame, thawed
  • 6 ounces shiitake mushrooms, cleaned and chopped (about 3 cups)
  • 3 scallions, chopped, plus more for serving
  • 2-inch piece of fresh ginger, chopped
  • 2–3 cloves garlic
  • 1/4 cup cilantro, coarsely chopped
  • 2 tablespoons tamari or soy sauce, plus more for the sauce
  • 1 teaspoon sambal oelek, plus more for the sauce
  • 10-ounce pack of gyoza/potsticker wrappers (about 50 wrappers)
  • 3–5 tablespoons grapeseed oil, divided
  • Fresh lime juice, for the sauce

Instructions

Place the edamame, shiitake mushrooms, scallions, ginger, garlic, cilantro, tamari and sambal oelek in the bowl of a food processor. Pulse until coarsely processed, but well-combined.

Spread some wrappers, about 10 at a time, onto a clean work surface. Place 1 heaping teaspoon of the filling onto the center of the wrappers. Moisten the edge with water. Fold the wrappers in half over the filling, pleating the edges, as desired, pressing to seal shut. Repeat until you use all the filling. You should have about 50 potstickers. You may keep the potstickers covered with a moist paper towel and some plastic wrap until ready to cook.

Heat 1 tablespoon grapeseed oil in a large non-stick skillet over medium-high heat. Add potstickers side-by-side. Cook for 1-2 minutes or until lightly browned on bottom. Add 1/3 cup water to the skillet, cover and cook, over medium heat until the pan is dry, about 3-4 minutes. Serve, browned-side up, with a quick sauce made simply by mixing some tamari, sambal oelek and fresh lime juice, to taste. Garnish with scallions and fresh cilantro. Bon appรฉtit!

Carrot Pottage with Tarragon

Carrot Pottage with Tarragon
Carrot Pottage with Tarragon

When simplicity truly makes a vegetable shine! This Carrot Pottage with Tarragon is a delicious addition to your seasonal menu. I use specialty carrots, those colorful bunches you find at the market. I’m sure you’ll love this as much as I do!

Kale Caesar with Chickpea Croutons

Kale Caesar with Chickpea Croutons
Kale Caesar with Chickpea Croutons

I’ve always had a deep love for caesar salad. It makes sense, I love garlic so much. The traditional recipe my mom use to make is made with egg yolks, and for years I’ve been avoiding to make a plant-based version because of fears of being let down by the taste and the creaminess. Those days are long gone! I found a way to make a Kale Caesar with Chickpea Croutons that is creamy, garlicky, and so good. I use cashews to make the base and can then say goodbye to vegan mayos, tofu and other processed goods. I also use chickpeas as the croutons, to make this salad completely gluten free. I’d love to know how you like it!

J’ai trouvรฉ une faรงon hyper simple d’arriver ร  une vinaigrette crรฉmeuse et dรฉlectable cรดtรฉ goรปt.

Poor Man’s Pudding

Poor Man's Pudding
Poor Man’s Pudding

Poor Man’s Pudding, or pouding chรดmeur as it was originally known, is a quintessential French Canadian dessert. It originated in the Belle Province early during the Great Depression and can be literally translated by “pudding of the unemployed man”. It was actually created by female factory workers. This recipe for the Poor Man’s Pudding comes from my mama’s recipe vault. I can remember eating this scrumptious dessert throughout my childhood. It is so easy to make and satisfying, I can see why there was often a pan at home. It also requires ingredients that you probably already have on hand, so you could decide to make this, like… right now! I hope you enjoy this recipe!

Traditional Chimichurri

Traditional Chimichurri
Traditional Chimichurri

Chimichurri was always one of my favorite sauce when I was eating flesh. That and bรฉarnaise were always my favorite flavors with a steak. Now that I don’t care for meat, I still crave the acidic taste of the chimichurri in contrast with the crisp of grilled ingredients. I serve this Traditional Chimichurri with oven roasted and broiled greens, on a bed of lentils, for maximum satisfaction. It could also be served simply with pasta for an alternative to pesto pasta. Make it yours today.

Effortless Pumpkin and Spinach Pasta Sauce

  • Author: Karine K
  • Prep Time: 5 minutes
  • Cook Time: 45 minutes
  • Total Time: 50 minutes
  • Yield: 4 servings 1x
  • Method: Make Ahead

Ingredients

Scale
  • 3 tablespoons olive oil
  • 1 pie pumpkin (also called sugar pumpkin), cut in half, seeded
  • 4 cloves garlic, not peeled
  • 1 onion, thinly sliced
  • 4 tablespoons tomato paste
  • 1 1/2 cup coconut milk
  • 1/8 teaspoon smoked paprika
  • 2 large handfuls fresh spinach
  • Sea salt and pepper, to taste

Instructions

Preheat your oven to 350หšF (175หšC). Place two garlic cloves in each of the cavities of the pumpkin halves. Place on a parchment-lined baking sheet and pour 1 tablespoon of olive oil in each cavity. Add generous pinches of sea salt and pepper and, using your hands, rub the oil all over the cloves and the pumpkin halves. Place the halves, cut side down and hide the cloves under. Place in the oven and roast for about 45 minutes. (Doing this the day before while you do something else, is a great way to cut your time in the kitchen.) When the pumpkin is cooked through and tender when pierced with a small knife, take out of the oven and let rest.

In a skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the onion, reduce the heat to medium and let cook, until brown and caramelized, 7-8 minutes, stirring often. Add the tomato paste and let cook, while stirring, until dark red and fragrant, about 3-4 minutes. Add the coconut milk and mix until well-combined. Add the smoked paprika, sea salt and pepper to taste (about 1 teaspoon salt, 1/2 teaspoon pepper), remove from the heat and transfer to a blender. Remove the skin from the pumpkin halves and the garlic cloves and add to the blender. Process until smooth. Return to the same skillet and add the spinach over low flame, stirring until they wilt. Remove from the heat and serve with your favorite pasta. Bon appรฉtit!

Date and Coconut Cake

Date and Coconut Cake
Date and Coconut Cake

This Date and Coconut Cake falls right on time for family gatherings. It’s extremely soft and the dates make it rich and flavorful. After cooking the cake, we add a decadent topping of coconut and brown sugar, and put it to broil until it’s nice and bubbly. This truly takes it over the top.

This cake is from my childhood. I found this recipe in my mom’s many, many hand written recipe notebooks. Originally named gรขteau Reine Elizabeth in French, this cake is a well-known cake by all French Canadians. I decided to change the name, for obvious reasons. Another thing to note, I use aquafaba in lieu of eggs. I believe this is what makes my cakes so soft and moist. Trust me, this cake will be a hit at the dessert table!

  • Cook Time: 30 minutes
  • Total Time: 40 minutes
  • Yield: 10–12 servings 1x
  • Category: Desserts
  • Method: Oven

Ingredients

Scale

For the Cake:

  • 1 cup dates, without the seeds, chopped
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • 1/4 cup plant butter (plus a little more to grease the pan)
  • 3 tablespoons aquafaba (chickpea juice)
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cup flour
  • 1 teaspoon baking powder

For the Glaze:

  • 3/4 cup brown sugar
  • 3/4 cup unsweetened shredded coconut
  • 1/2 cup plant butter
  • 1/3 cup unsweetened coconut condensed milk

Instructions

Preheat the oven to 350หšF (180หšC). Line the bottom of a 10-inch (25cm) spring-form pan or a 9-in (23cm) square baking pan with parchment paper. Butter and flour the sides.

In a small bowl, place the dates and cover with the boiling water. Add the baking soda and mix well. Set aside while you prepare the rest of the batter.

In a large mixing bowl, beat the butter into a cream. Add the aquafaba, the sugar and the vanilla extract and mix well. In a second bowl, whisk the flour and the baking powder. Add to the butter and aquafaba mixture, and mix well. Add the dates along with their soaking water. Mix well and place the cake batter in the baking pan. Transfer to the oven and bake for 25-30 minutes, until a toothpick inserted in the middle of the cake comes out clean.

While the cake bakes, place all the glaze ingredients in a small saucepan and bring to a boil. Lower the heat and simmer gently for 2 minutes.

When the cake is ready, take out of the oven and put the oven on “broil”. Top the cake with the glaze and place back in the oven 2-3 minutes, making sure to watch to prevent burning. Take out the oven, let cool and remove from the pan. Slice and enjoy. Bon appรฉtit!

Mustard and Tarragon Baby Potato Salad

Mustard Tarragon Baby Potato Salad
Mustard and Tarragon Baby Potato Salad

The kids and I are hooked on this Mustard and Tarragon Baby Potato Salad. So why not skip the mayonnaise next time you make potato salad? This version uses mustard and a touch of olive oil, for a much lighter rendition. Adding tarragon, a licorice-tasting perennial herb in the daisy family, makes this dish light and vibrant. I personally love tarragon. And with potatoes, it’s a match made in heaven. I also enjoy making this Hasselback Potatoes with Tarragon Butter recipe, which uses both as well.

Tofu Satay with Vegetables, Noodles and Peanut Sauce

Tofu Satay with Vegetables, Noodles and Peanut Sauce
Tofu Satay with Vegetables, Noodles and Peanut Sauce

Satay is an Indonesian dish, usually made with meat, skewered onto bamboo sticks and grilled. In this Tofu Satay with Vegetables, Noodles and Peanut Sauce, lemongrass gives a nice splash of citrusy aroma that will be perfectly balanced by the creaminess of the sauce. We also broil the tofu, at the end of cooking, to ensure a nice char on the cubes for maximum texture and flavor. Feel free to put your tofu on skewers for an authentic presentation.

For the Marinade:

  • 2 1/2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1 lemongrass stalk, first 6 inches only, trimmed
  • 1 shallot, peeled and chopped
  • 2 garlic cloves
  • 1” fresh ginger, peeled
  • 1/4 cup coconut milk
  • 2 dates
  • 2 tablespoons tamari or soy sauce
  • 2 tablespoons lime juice
  • 1/2 teaspoon turmeric
  • 1 bloc of firm tofu, pressed and cubed

For the Peanut Butter Sauce:

  • 4 tablespoons peanut butter
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons coconut milk
  • 1 tablespoon lime juice
  • 2 teaspoons chili-garlic paste
  • 1 teaspoon ginger, minced
  • 1 teaspoon maple syrup
  • 1 clove garlic, minced

For the Assembly:

  • 1 bunch broccolette
  • 1 red bell pepper, sliced
  • 1–2 tablespoon(s) olive oil
  • 1 package of noodles, cooked according to package directions
  • Garnishes: Fresh lime quarters, roasted peanuts, sliced green onions

Instructions

In the bowl of a food processor, place the coriander and cumin, the lemongrass, shallot, garlic, ginger, coconut milk, dates, soy sauce or tamari, lime juice and turmeric. Process until a homogenous consistency is achieved. Pour the marinade in a shallow bowl and add the tofu cubes. Mix until well-coated and let stand for 30 minutes.

Meanwhile, preheat the oven to 350หš. Make the peanut sauce by whisking all the sauce ingredients in a medium bowl, until smooth and well-combined. Keep aside.

After 30 minutes, place the tofu cubes on a parchment-lined baking sheet, keeping the marinade for later. Place in the oven and bake for 15 minutes. On a second parchment-lined baking sheet, place the broccolette and the red pepper and rub with olive oil, sea salt and pepper. After baking for 15 minutes, turn the tofu cubes over and brush them with the rest of the marinade. Place back in the oven, along with the vegetable baking sheet, and bake for 10 minutes. Take the vegetables out of the oven and place the tofu on the top rack to broil. Broil, while checking to make sure it doesn’t burn, for 3-5 minutes, until the sides are gently charred. Serve the tofu on a bed of cooked noodles along with the vegetables and top with the peanut sauce. Garnish with roasted peanuts, some fresh lime juice, and green onions. Bon appรฉtit!
