Extra Creamy Celery Root and Pear Slaw

Extra Creamy Celery Root and Pear Slaw
Extra Creamy Celery Root and Pear Slaw

Growing up, I remember loving this very creamy coleslaw from the local chicken joint. The creaminess of the sauce with the crunch of the cabbage, along with the tang of the vinegar was so good. Fast forward to now, during fall season, and I’m finding myself craving this slaw, that the kids love as well. This Extra Creamy Celery Root and Pear Slaw, a clever twist on a classic, is easy, original and serves as a perfect side for all your gatherings. I also love pairing it with my Hasselback Potatoes with Tarragon Butter.

Hasselback Potatoes with Tarragon Butter

  • Author: Karine K
  • Prep Time: 5 minutes
  • Cook Time: 60 minutes
  • Total Time: 1 hour 5 minutes
  • Yield: 4 servings 1x
  • Method: Oven

Ingredients

Scale
  • 1/2 cup butter, softened at room temperature for about 10 minutes
  • 2 tablespoons shallot, minced
  • 2 tablespoon tarragon, roughly chopped
  • 4 large potatoes, scrubbed
  • Sea salt, to taste
  • Fresh tarragon, to garnish

Instructions

Preheat the oven to 425หš. In a medium bowl, place the butter and beat with a wooden spoon until creamy, but not melted. Add the shallot, the tarragon and a sprinkle of sea salt. Mix well. Slice the potatoes into very thin wedges, leaving them joined at the bottom. You may rest the potato on two wooden chopsticks as a guide for when to stop slicing. Fan out the slices and place the potatoes on a parchment-lined baking dish. Using about 2 tablespoons of the tarragon butter, brush the potatoes generously. Place in the oven and roast for approximately 60-70 minutes (depending on the size), brushing the potatoes every 15 minutes with the tarragon butter, using a total of approximately 4 tablespoons. The potatoes should be crispy and cooked through. Serve fresh out of the oven, sprinkled with sea salt and fresh tarragon. Bon appรฉtit!

Notes

Use the rest of the tarragon butter and serve these potatoes with sautรฉed corn and peas. To do so, in a medium skillet, mix some kernels from two ears of corn, a bag of thawed green peas (or fresh, even better), the rest of the tarragon butter, and one extra small shallot, minced. Cook over medium heat until the butter is melted and the mixture is heated through. Season to taste with sea salt and pepper, and serve alongside the potato. Delectable!

Barely-Sautรฉed Spinach and Broccolette with Creamy Tahini Sauce

Barely-Sauteฬed Spinach and Baby Broccoli with Creamy Tahini Sauce
Barely-Sauteฬed Spinach and Broccolette with Creamy Tahini Sauce

Who doesn’t like a 15-minute meal that’s healthy and tasty? A bowl of this Barely-Sautรฉed Spinach and Broccolette with Creamy Tahini Sauce is perfect when you want a big helping of greens that’s just the right spice and the perfect crunch. The sauce, made with tamari and a touch of maple syrup, brings it all together in harmony. It will take approximately 5 minutes for your mise en place and 10 minutes of execution. It’s a lot of health in very little time!

Broccolette, also called broccolini, is a veggie I try to have available in my fridge at all times. It’s become readily available at many local stores and farmers markets, and I prefer their texture to the texture of broccoli. If you haven’t given them a try, this recipe is a great way to test the waters!

Autumn-Spiced Pumpkin Raviolis with Sage Brown Butter

  • Author: Karine K
  • Prep Time: 30 minutes
  • Cook Time: 45 minutes
  • Total Time: 1 hour 15 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 cooking pumpkin, halved and seeded
  • 4 cloves of garlic, left whole
  • 2 tablespoons olive oil
  • 1 cup semolina flour
  • 1 cup all-purpose flour
  • 1/2 cup aquafaba (the liquid from a can of chickpeas, keep the chickpeas for another use)
  • 3 tablespoons water
  • 1/2 cup toasted pecans, plus more for serving
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon grated nutmeg
  • 9 tablespoons butter, divided
  • 1 teaspoon maple syrup
  • 25 sage leaves, left whole
  • Sea salt and pepper, to taste

Instructions

Preheat oven to 400ยฐ. Coat all sides of the pumpkin and garlic cloves with the olive oil, and sprinkle generously with sea salt and pepper. Place the pumpkin halves, cut side down, on a parchment-lined baking sheet. Place two garlic cloves under each half. Transfer to the oven, and roast until tender, about 40-45 minutes. Remove from the oven and let cool.

While the pumpkin cooks, mix the semolina flour and the all-purpose flour in a large mixing bowl. Add the aquafaba and the water, and mix well with your hands, until you obtain a soft and uniform ball of dough. If the dough is too wet, add a little flour. If it is too dry, add a little water, one teaspoon at a time. Place the ball of dough in a plastic wrap and place in the fridge to rest for 40 minutes.

While the dough rests, scoop out 1 cup of flesh from the roasted pumpkin. Keep the rest for another use, like in a soup, or in a sauce. Transfer the flesh to a food processor. Peel the garlic cloves and add to the food processor. Add the toasted pecans, the cinnamon, the cloves, the nutmeg, 1 tablespoon of the butter, the maple syrup, and 1/4 teaspoon sea salt. Process until smooth. Set aside.

After resting time, remove the dough from the fridge and from the plastic wrap. On a lightly flour-dusted surface, roll out the dough, using a rolling pin, until smooth and very thin. Using a 2-in cookie cutter, or any other round cup similar in diameter, cut dough into circles. Make a ball with the unused dough, and roll out again until smooth and thin. Cut out more circles, until you use all the dough.

Scoop out a very scant teaspoon of pumpkin mixture in the center of half the circles (the โ€œbottomsโ€). Using your fingers, spread a small amount of water around the inside perimeter of the dough โ€œtopsโ€. Place them on top of the filled dough bottoms and press around the edges to seal properly. You should have approximately 40 raviolis.

Heat the remaining 8 tablespoons butter in a small saucepan, over medium-high heat. Add the sage leaves and cook until they are crispy and the butter is golden brown, approximately 5-10 minutes, adjusting the heat to make sure not to burn the butter.

While the butter cooks, cook the raviolis. Place them, without overcrowding, in a large pot of salted boiling water, for 4-5 minutes. I did mine in two batches.

Place some raviolis in a plate, spoon some of the sage butter on top, along with the crispy sage, and garnish with toasted pecans. Bon appรฉtit!

Notes

I like cutting up the leftover pumpkin and roasting while I make the raviolis. Simply cut into small cubes, season with olive oil, sea salt and pepper. Place in a 425หš oven for 15-20 minutes. Serve with the raviolis along with the sage brown butter, the crispy sage, and the toasted pecans.

  • Author: Karine K
  • Prep Time: 30 minutes
  • Cook Time: 45 minutes
  • Total Time: 1 hour 15 minutes
  • Yield: 4 portions 1x

Ingredients

Scale
  • 4 gousses d’ail entiรจres
  • 2 c. ร  soupe d’huile d’olive
  • 1/8 c. ร  thรฉ de cannelle
  • 1/8 c. ร  thรฉ de clou de girofle moulu
  • 1/8 c. ร  thรฉ de muscade
  • 9 c. ร  soupe de beurre, divisรฉ
  • 1 c. ร  thรฉ de sirop d’รฉrable
  • 25 feuilles de sauge entiรจres
  • Sel de mer et poivre, au goรปt

Instructions

Prรฉchauffer le four ร  400ยฐ.

ร  soupe), ร  feu moyen-รฉlevรฉ.

Hearts of Palm Ceviche
Hearts of Palm Ceviche

I’ve always loved hearts of palm. I would simply slice them up and season with sea salt, pepper, and a dash of olive oil. But there was something about their texture that made me think they would be absolutely perfect in a fish-less ceviche. And I was right. This Hearts of Palm Ceviche is bright and colorful. It is perfect served with tortilla chips, on a tostada, or, my favorite way, on plantain chips. It would also look lovely as an appetizer for a more formal affair, served in martini glasses and a delicate spoon. Either way, the taste is absolutely fresh and fantastic. Try it now!

Simple Vegetable Soup with Creamy Coconut Broth

Simple Vegetable Soup with Coconut Broth
Simple Vegetable Soup with Coconut Broth

I made this soup while vacationing in Colorado. Our family prefers to stay in Airbnb rentals, with the kids, the food and all. This was our first night in Colorado, after a 9-hour drive. I had brought a few things from home to make sure we had dinner covered the first night (the beauty of road tripping), but I had forgotten herbs, spices, oils. Thankfully, I had onions, garlic, and ginger! The kids declared this Simple Vegetable Soup with Creamy Coconut Broth one of their favorites and requested that I make it again as soon as we get back home. I am, sharing this soup made with truly simple ingredients, also perfect for vacation rental cooking. A totally awesome twist on the traditional minestrone.

Jicama Salad with Creamy Tahini and Dill Sauce

Jicama Salad with Creamy Tahini and Dill Sauce
Jicama Salad with Creamy Tahini and Dill Sauce

Whoa! I never knew I’d love this Creamy Tahini and Dill Sauce so much. It is so very versatile. Last week I served it with roasted potatoes, and now it shines bright in this lettuce-free salad of jicama, corn and zucchini. This Jicama Salad with Creamy Tahini and Dill Sauce is also completely raw and oil-free. I also love it because it’s fast and fresh, and doesn’t require the use of a blender, unlike many other raw sauces.

Pine and Ginger Salad

Pine and Ginger Salad
Pine and Ginger Salad

Pineapple is probably my second favorite fruit, after mango. And when mango season ends, and I can’t make my Livity Mango Salad anymore, I turn to this zesty Pine and Ginger Salad to call in the last feelings of summer. I enjoy the taste of pineapple and ginger together very much, it’s a juice I make often. This salad, with the addition of creamy avocado, should be put high on your list of things to make now.

Gongura Chana Dal

Gongura Chana Dal
Gongura Chana Dal

This Gongura Chana Dal is one gorgeous and tasty Indian recipe. Gongura grows wild in Livity Gardens. I planted many vegetables native to the Indian subcontinent and they grows extraordinarily well in Arizona. I have three gongura bushes that are at least four-feet high. The leaves are sour tasting and the hotter the place where they grow, the most sour they become.

Gongura is a plant grown for its edible leaves in India. It is a rich source of iron, vitamins, folic acid, and anti-oxidants. It is quintessential to Andhra cuisine, and Telegu call it Andhra Matha (mother Andhra) due to significance of the plant in their daily diet. In the Caribbean, the plant is used widely, especially around the Holidays, and is known as sorrel. It is also eaten by Acholi and Lango people in northern Uganda, where it is known as malakwang. How wonderful to discover plants that are used in many cultures, all over the world.

You may serve this dish with an assortment of other Indian dishes for a wonderful spread when you have company. You may want to check out this South Indian Eggplant Fry (Brinjal Fry) and this Cauliflower Keema.
