This French Canadian Pea Soup brings back my childhood. The memory of cold winter nights and warm meals. My mom would put her peas to soak the night before she would make the soup. I knew that the next day, our home would smell fabulous and I’d have the pleasure of eating that big bowl of comfort. French Canadian Pea Soup

Ingredients

Scale
  • 4 big carrots, chopped finely
  • 2 medium onions, chopped finely
  • 1/2 head of celery, chopped finely
  • 6 cloves garlic, minced
  • 3 bay leaves
  • 8–12 cups vegetable broth
  • 2 Not-Chick’n bouillon cubes
  • 1 bag whole yellow peas (16 oz), soaked overnighht
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 7–8 drops of liquid smoke
  • Sea salt and pepper, to taste

Instructions

In a large soup pot, place all the ingredients. Bring to a boil, reduce the heat and let cook until the peas are very tender, stirring occasionally. It is important to taste as you go and adjust the seasonings.ย 

Notes

Before serving, feel free to use a hand-held mixer to purรฉe some of the soup, if the peas didn’t break off during cooking. Some people prefer a more uniform soup, whereas I love when I can see the peas. But your choice! Bon appรฉtit!

  • 3 feuilles de laurier
  • 8–12 tasses de bouillon de lรฉgumes
  • 2 cubes de bouillon Not-Chick’n
  • 1 sac (16 onces) de pois jaunes entiers, trempรฉs toute une nuit
  • 2 c. ร  thรฉ de poudre d’ail
  • 2 c. ร  thรฉ de poudre d’oignon
  • 7 ร  8 gouttes de fumรฉe liquide
  • Sel de mer et poivre, au goรปt

Instructions

Dรฉposer tous les ingrรฉdients dans un gros chaudron ร  soupe. Porter ร  รฉbullition, rรฉduire le feu et cuire, en brassant souvent, jusqu’ร  ce que les pois soient trรจs tendres. Il est important de goรปter et d’assaisonner pendant la cuisson.

Notes

Vous pouvez utiliser un mรฉlangeur ร  immersion avant de servir pour rรฉduire en purรฉe. Certaines personnes aiment une soupe plus uniforme, alors que d’autres prรฉfรจrent une soupe plus croquante. C’est votre choix. Bon appรฉtit!

Grilled Fennel, Kale and Orange Salad

This grilled fennel, kale, and orange salad is one that could easily be made without grilling the fennel. You could slice it very thin and toss your salad same way. But by grilling the fennel, you open the door to a burst of different flavors and textures that will make you grill the fennel next time around as well! The key here is to have deep char marks on your fennel before turning it over. You want it to be caramelized. And it takes some time. It’s very hands off, but you have to be there to turn!

Grilled Fennel, Kale, and Orange Salad

Ingredients

Scale
  • 2 large fennel bulbs, trimmed and cut in halves (you can keep some of the fennel fronds to decorate the plate)
  • 2 large oranges, one zested then juiced, the other cut in supremes
  • 1 bunch lacinato kale, cut in a chiffonade
  • 1 small shallot, minced
  • 1 teaspoon old style Dijon mustard (the grainy one)
  • 1/2 cup olive oil, plus more to oil the fennel halves
  • 1/2 teaspoon maple syrup (or to taste)
  • Sea salt and pepper

Instructions

Start a grill over medium-high heat. Rub the fennel halves with some olive oil and season liberally with sea salt and pepper. Place the fennel cut-side down on the hot grill and cook, covered, until deep char marks appear on the flat side of the fennel halves. Turn and repeat the process on the other side. You can turn again and cook some more if your grill isn’t too hot. If the grill is too hot, transfer the fennel halves to the non heated zone of your grill (or on the little warming shelf many grills have). Cover and let cook some more until you obtain a very cooked, sweet tasting, and aromatic fennel.

While the fennel is cooking, make the vinaigrette by combining the orange juice, the orange zest, the shallot, Dijon, olive oil, maple syrup, and salt and pepper. Whisk until smooth, taste and adjust seasonings.

Toss the kale in a large bowl with a little bit of the vinaigrette and massage with your hands for one minute. Plate and set aside. Once the fennel is cooked, transfer to a cutting board and slice thin, discarding the cores. Transfer to the plate on top of the kale. Top with the orange supremes, some vinaigrette, and the fennel fronds.

Salade de kale avec fenouil grillรฉ et orange

Vous pouvez prรฉparer cette salade de kale sans griller le fenouil, ou en le faisant revenir ร  la poรชle jusqu’ร  ce qu’il soit tendre et caramรฉlisรฉ. Vous pouvez aussi le trancher trรจs mince et omettre la cuisson. Mais en le grillant, on ouvre la porte ร  une plethora de saveurs qui ne dรฉรงoivent pas.

Si vous optez pour la cuisson du fenouil, allez-y ร  fond. La clรฉ est d’obtenir des bulbes tendres et caramรฉlisรฉs. Et รงa prends un peu de temps. C’est nullement difficile, mais vous devez y consacrer le temps nรฉcessaire. ร‡a vaut le coup!

  • 1/2 tasse d’huile d’olive, plus 2 c. ร  thรฉ pour le fenouil (si vous le grillez)
  • 1/2 c. ร  thรฉ de sirop d’รฉrable (ou au goรปt)
  • Sel de mer et poivre du moulin

    Instructions

    Chauffer le grill ร  feu moyen-รฉlevรฉ. Badigeonner les moitiรฉs de fenouil avec les 2 c. ร  thรฉ d’huile d’olive et assaisonner de sel et de poivre. Placer le fenouil, partie coupรฉe vers le bas, sur le grill chaud, ร  couvert, et cuire jusqu’ร  ce que des marques de cuisson prononcรฉes apparaissent. Tourner et rรฉpรฉter de l’autre cรดtรฉ. Rรฉpรฉter le processus ou placer le fenouil sur une partie moins chaude du grill, s’il commence ร  brรปler. Couvrir et cuire ร  nouveau jusqu’ร  l’obtention d’un fenouil tendre, aromatique et caramรฉlisรฉ.

    Pendant que le fenouil cuit sur le grill, prรฉparer la vinaigrette. Combiner le jus d’orange, le zeste d’orange, l’รฉchalote, la moutarde, l’huile d’olive, le sirop d’รฉrable, le sel et le poivre. Bien mรฉlanger.

    Dans un grand bol, placer le kale. Verser un peu de la vinaigrette et masser avec les mains pendant une minute. Placer ensuite sur une assiette de service.Un fois le fenouil cuit, trancher mince, jusqu’au coeur. Placer dรฉlicatement sur le kale. Garnir ensuite des suprรชmes d’orange, de la vinaigrette, et des feuilles de fenouil.

Don’t skip on the simmering time, take it nice and slow. If anything, make the broth the day before, splitting your workload in half. You won’t regret it.

    Epic Coconut Curry Soup

    For the broth:

    • 3 tablespoons toasted sesame oil
    • 1/3 cup ginger, sliced in coins
    • 1 tablespoon fresh turmeric, sliced in coins
    • 1 head garlic, cloves sliced in half
    • 1 large onion, sliced thin
    • 6 tablespoons yellow curry paste
    • 2 quarts vegetable broth
    • 2 cans coconut milk
    • 2 tablespoons maple syrup
    • 2 tablespoons miso paste

    For the garnishes:

    • Asian noodles of choice, cooked according to package directions (I really enjoy the “somen” noodles from Hakubaku)
    • Zucchini noodles
    • Large handfuls of spinach
    • 8 oz shiitake mushrooms, trimmed, sautรฉed in sesame oil and tamari
    • Green onions, sliced on the diagonal
    • Fresh cilantro
    • Toasted pumpkin seeds
    • Sambal oelek, to taste

    Instructions

    In a large soup pot, heat the sesame oil over medium-high heat. Add the ginger, turmeric, garlic, and onion, and sautรฉ, stirring often, until the onion starts to caramelize, about 5-7 minutes. Add the curry paste, mix well, and cook, stirring, until very fragrant, about 2-3 minutes. Add the vegetable broth, the coconut milk, and the maple syrup. Bring to a low boil, cover, reduce the heat and simmer for as long as you can. I recommend at least 45 minutes, but feel free to extend it to 90 minutes, for even more flavor.

    Before serving, take out a cup of broth in a small bowl and add to it the miso paste. Mix well and put back in the pot. Stir. To serve, place the noodles and the zucchini noodles in a shallow bowl. Add the spinach to one side. Ladle some broth (with or without the onions/ginger/turmeric/garlic mixture) in the bowl, and top with the shiitake, green onions, fresh cilantro, pumpkin seeds, and sambal oelek.

    Le secret de cette soupe est dans le bouillon. Avec un bouillon fabuleux, vous pourrez bien y ajouter ce qui vous plaรฎt et ce sera dรฉlicieux. Prenez bien le temps de faire mijoter.     Pour le bouillon:

    • 3 c. ร  soupe d’huile de sรฉsame grillรฉ
    • 1/3 tasse de gingembre frais, coupรฉ en rondelles
    • 1 c. ร  soupe de racine de curcuma frais, coupรฉe en rondelles
    • 1 tรชte d’ail, les gousses coupรฉes en deux
    • 1 gros oignon, coupรฉ en tranches minces
    • 6 c. ร  soupe de pรขte de cari jaune
    • 2 litres de bouillon de lรฉgumes
    • 2 boรฎtes de lait de coconut
    • 2 c. ร  soupe de sirop d’รฉrable
    • 2 c. ร  soupe de pรขte miso

    Pour les garnitures:

    • Nouilles asiatiques au choix, cuites selon les directives sur l’emballage (j’aime bien les nouilles “somen” de Hakubaku)
    • Zoodles (spirales de zucchini)
    • Quelques poignรฉes d’รฉpinards frais
    • 8 oz de champignons shiitake, รฉqueutรฉs, sautรฉs dans l’huile de sรฉsame et la sauce tamari
    • Oignons verts, coupรฉs sur la diagonale
    • Coriandre fraรฎche
    • Graines de citrouilles grillรฉes
    • Sambal oelek, au goรปt

    Instructions

    Dans une marmite, chauffer l’huile de sรฉsame ร  feu moyen-รฉlevรฉ. Ajouter le gingembre, le curcuma, l’ail et l’oignon. Faire revenir, en brassant souvent, jusqu’ร  ce que l’oignon commence ร  prendre une couleur dorรฉe, environ 5 ร  7 minutes. Ajouter la pรขte de cari, brasser, et cuire, en brassant, 2 ร  3 minutes. Ajouter le bouillon de lรฉgumes, le lait de coconut et le sirop d’รฉrable. Porter ร  รฉbullition pour quelques secondes, couvrir, et mijoter le plus longtemps possible, au moins 45 minutes, jusqu’ร  90 minutes, pour plus de saveur. Avant de servir, retirer une tasse de bouillon dans une tasse ร  mesurer, ajouter la pรขte de miso, brasser, et retourner le tout dans la marmite. Mรฉlanger.

    Pour servir, placer les nouilles et les zoodles dans une assiette creuse. Ajouter les รฉpinards. ร€ la louche, ajouter le bouillon (avec ou sans le mรฉlange oignons/ail/gingembre/curcuma) et garnir des champignons shiitake prรฉalablement sautรฉs, des oignons verts, de la coriandre fraรฎche, des graines de citrouille et du sambal oelek.

    • 1 large head cauliflower
    • 6 Scotch Bonnet peppers (or Habanero), chopped
    • 6 cloves garlic, chopped
    • 6 scallions, chopped
    • 1/3 cup vinegar
    • 1/3 cup coconut aminos
    • 1 1/2 teaspoon sea salt
    • 1 tablespoon black peppercorns
    • 1 ounce ginger (about 2″ piece), chopped
    • 2 tablespoons allspice berries
    • 2 tablespoons brown sugar
    • 1 teaspoon freshly grated nutmeg
    • 2 tablespoons coconut oil
    • 8 sprigs thyme
    • 1 lime, juiced
    • 2 cups vegetable broth
    • 1 can black beans, rinsed and drained
    • 1 can chickpeas, rinsed and drained
    • 1/3 cup shallots or red onion, minced
    • Garnishes: fresh cilantro

    Instructions

    Preheat oven to 400ยฐ. Place the Scotch Bonnet peppers, garlic, scallions, vinegar, coconut aminos, sea salt, black peppercorns, ginger, allspice berries, brown sugar, nutmeg, coconut oil, thyme, and lime juice to a blender. Blend on high until well combined. Set aside. Can be made a day ahead. Cover and refrigerate.

    Remove the leaves from the cauliflower, then trim the stem flush with the bottom of the head so the cauliflower sits flat in a Dutch oven and the lid can be closed tight. Place the cauliflower in the Dutch oven.

    Spread the reserved jerk sauce over the cauliflower and rub, with your hands, until the sauce is in all nooks and crannies. Pour the vegetable broth at the bottom of the Dutch oven. Place the lid, pop in the oven for 45 minutes. Remove from the oven and add the beans and the minced onions on the sides of the cauliflower. Put back in the oven and cook, uncovered this time, for an additional 7 minutes. Remove from the oven and let rest for 10 minutes. Garnish with fresh cilantro, serve over rice, and enjoy!

    • 6 piments Scotch Bonnet (ou Habanero), hachรฉs

    • 6 oignons verts, hachรฉs
    • 1/3 tasse de vinaigre
    • 1/3 tasse d’aminos de coconut
    • 1 1/2 c. ร  thรฉ de sel de mer
    • 1 c. ร  table de grains de poivre noir
    • 1 once de gingembre frais (environ 2″), hachรฉ
    • 2 c. ร  table de grains de piment de la Jamaรฏque entiers
    • 2 c. ร  table de sucre brun
    • 1 c. ร  thรฉ de noix de muscade, fraรฎchement rรขpรฉe
    • 2 c. ร  table d’huile de coconut
    • 8 branches de thym frais
    • Jus de 1 lime
    • 2 tasses de bouillon de lรฉgumes
    • 1 boรฎte d’haricots noirs, rincรฉs et รฉgouttรฉs
    • 1 boรฎte de pois chiches, rincรฉs et รฉgouttรฉs
    • 1/3 tasse d’รฉchalotes franรงaises ou oignons rouges, รฉmincรฉs
    • Garnitures: coriandre fraรฎche

    Instructions

    Prรฉchauffer le four ร  400ยฐ. Placer les piments Scotch Bonnet, l’ail, les oignons verts, le vinaigre, les aminos de coconut, le sel de mer, les grains de poivre noir, le gingembre, le piment de la Jamaรฏque, le sucre brun, la muscade, l’huile de coconut, le thym, et le jus de lime dans un mรฉlangeur. Mรฉlanger jusqu’ร  l’obtention d’un mรฉlange homogรจne. Rรฉserver. La sauce jerk peut รชtre faite ร  l’avance. Couvrir et placer au rรฉfrigรฉrateur jusqu’au moment de l’utiliser.

    Retirer les feuilles de la tรชte de chou-fleur et couper ensuite la base de la tรชte, si nรฉcessaire, afin qu’elle puisse รชtre disposรฉe dans une cocotte avec le couvercle bien fermรฉ. Mettre la tรชte de chou-fleur dans la cocotte., mรฉlanger l’huile d’olive, la sauce adobo, la poudre d’ail, la poudre d’oignon, l’origan, le cumin, le sel de mer et le poivre.

    Verser la sauce jerk sur la tรชte de chou-fleur et badigeonner avec les mains afin de bien la distribuer. Ne pas oublier le dessous de la tรชte de chou-fleur. Verser le bouillon de lรฉgumes au fond de la cocotte, en รฉvitant de verser sur le chou-fleur. Placer le couvercle et mettre au four pendant 45 minutes. Retirer du four et disposer les haricots noirs, les pois chiches et les รฉchalotes franรงaises รฉmincรฉes autour du chou-fleur. Remettre au four et cuire, ร  dรฉcouvert, pendant 7 minutes de plus. Retirer du four, laisser reposer pendant 10 minutes. Garnir de coriandre fraรฎche et servir sur du riz.

    Toum: A Lebanese Garlic Sauce

    If you love garlic, you’ll love toum: a Lebanese garlic sauce. It’s a dip, a condiment, a sauce, and it’s very garlic. I used to order it with my shish taouk asking for a “double order of the garlic sauce!” But seriously, when I finally put my hands on homemade toum, I was hooked. I usually have a tub of the thing sitting in my fridge, and I use it with whatever I feel like, almost even on toast! Just try it, you garlic-addict!

    Toum: A Lebanese Garlic Sauce

    Ingredients

    • 1/2 cup garlic cloves, peeled and trimmed
    • 1 teaspoon sea salt
    • 1 1/2 cup grapeseed oil
    • Juice of 1 juicy lemon
    • 5–6 tablespoons ice water

    Instructions

    In a food processor, pulse garlic and salt until you get a smooth paste, scraping the sides of the bowl, occasionally. While the food processor is running, add the lemon juice. Pulse until fluffy. With the processor running, add 1/4 cup of the oil, in a thin and slow stream. Then, add 1 tablespoon of the ice water. Scrape the sides of the processor bowl and continue with another 1/4 cup of the oil. After each addition of 1/4 cup of oil, add 1 tablespoon of the ice water. Continue alternating until all the oil is used. Taste, adjust for sea salt, if necessary. You should have a light and fluffy sauce. The key is to add the oil very, very slowly.

    Toum: la fameuse sauce ร  l’ail libanaise

    Ingredients

    • 1/2 tasse de gousses d’ail, pelรฉes et parรฉes
    • 1 c. ร  thรฉ de sel de mer
    • 1 1/2 tasse d’huile de pรฉpin de raisin
    • Jus de 1 citron frais
    • 5 ร  6 c. ร  soupe d’eau glacรฉe

    Instructions

    Dans un robot culinaire, pulser l’ail et le sel de mer, jusqu’ร  l’obtention d’une pรขte homogรจne. Pendant que le robot fonctionne, ajouter le jus de citron frais. Pulser.     In this creamy sunchoke soup recipe, the sunchokes really shine since the preparation is so simple and straightforward. Helianthus tuberosus is a species of sunflower native to Eastern North America. Its tuber, called sunchoke, sunroot, or mistakenly Jerusalem artichoke, is cultivated widely across the temperate zone.

    It is believed that the sunchoke helps in the control of blood sugar. Unlike most tubers, sunchokes store their carbohydrate as inulin rather than as starch. Either way, I love how you can handle them just like a potato, but they give you that nice sweet and nutty flavor. Enjoy this creamy sunchoke soup with garlicky croutons or crispy sage, or both!

    • 1 1/2 lb sunchokes
    • 1 tablespoon grapeseed oil
    • 2 leeks, cleaned, white and pale green parts only, sliced lengthwise and then thinly crosswise
    • 4 cloves garlic, minced
    • 1 sprig fresh thyme
    • 3 1/2 cups vegetable broth
    • 1 can coconut milk
    • Sea salt and pepper

    Instructions

    Peel and chop the sunchokes into coins. In a soup pot, heat the grapeseed oil over medium heat. Add the leeks, the garlic, the thyme, and generous pinches of salt and pepper. Sautรฉ until very soft, but not browned, about 15 minutes. Lower the heat if necessary.

    Add the sunchokes and the vegetable broth. Bring to a boil, reduce the heat, and simmer until the sunchokes are tender, about 15 minutes. Add the coconut milk, heat through, and turn off the heat. Discard thyme sprig. Mix with an immersion blender or blend in a blender. Serve warm in soup bowls, garnished with garlicky croutons and crispy sage.

Ajouter le lait de coconut, rรฉchauffer, et retirer du feu. Retirer la branche de thym. Utiliser un mรฉlangeur ร  immersion pour rรฉduire en purรฉe ou passer au mรฉlangeur.     Creamy Tomato Lentil Soup

    Ingredients

    • 1 tablespoon grapeseed oil
    • 3 carrots, in small dices
    • 1 medium onion, in small dices
    • 4 cloves garlic, minced
    • 1–2” piece of fresh turmeric, pounded
    • 1 bay leaf
    • 1 sprig thyme
    • 3 ounces tomato paste (1/2 small can)
    • 1 can coconut milk
    • 3–4 cups vegetable broth (depending how thick you want the soup)
    • 1 cup sprouted lentils (red lentils would also work here, but might need to cook slightly longer)
    • Sea salt and pepper
    • 2 cups greens (kale, spinach, Swiss chard) (optional)
    • 1/2 teaspoon sambal oelek (optional)

    Instructions

    In a soup pot, heat the grapeseed oil over medium-high heat. Add the carrots, onion, garlic, turmeric, bay leaf, and thyme, and stir well. Add generous pinches of salt and pepper. Lower the heat to medium and cook, stirring often, until the onion is soft and golden, about 15 minutes. If the vegetables stick to the bottom, lower the heat a little. You want everything nice and caramelized, but not burnt.

    Add the tomato paste and mix everything well. Let the tomato paste cook for a good 5-6 minutes, stirring most of the time. You want the tomato paste to become a rich, dark red in color and have a sweet aroma.

    Add the coconut milk, lower the heat and scratch the bottom of the pan nicely. Let the base of the soup become creamy and luscious, while simmering slowly for 3 minutes. Add the vegetable broth and the lentils and bring to a boil. Reduce the heat and simmer until the lentils are cooked, about 5-6 minutes. Remove from the heat. If using, add the 2 cups of greens and sambal oelek, and stir well.

    Soupe crรฉmeuse aux tomates et lentilles

    Les journรฉes sont courtes, les nuits sont froides. Mais oui, c’est l’hiver, mรชme en Arizona. Les matins se pointent en affichant les 2 ou 3 tristounets degrรฉs, et disons que รงa me prend du temps me rรฉchauffer. Mais c’est que je suis comme mon jardin, on dirait bien! Blague ร  part, cette soupe vous rรฉchauffera les os. Elle n’est pas piquante, ce qui fait que les enfants en redemandent. Je la sert sur du riz vapeur pour eux. Je profite pendant ce temps de ma portion adulte, servie sur un lit d’รฉpinards ou de kale du jardin.

    • 1 oignon moyen, en petits dรฉs

    • 1 feuille de laurier
    • 1 branche de thym
    • 3 oz de pรขte de tomates (la moitiรฉ d’une petite boรฎte)
    • 1 boรฎte de lait de coconut
    • 3–4 tasses de bouillon de lรฉgumes (moins de bouillon pour une soupe plus รฉpaisse)
    • 1 tasse de lentilles germรฉes (les lentilles rouges peuvent รชtre utilisรฉes, mais le temps de cuisson doit รชtre ajustรฉ)
    • Sel de mer et poivre
    • 2 tasses de lรฉgumes verts (kale, รฉpinards, bette ร  carde) (optionnel)
    • 1/2 c. ร  thรฉ de sambal oelek (optionnel)

    Instructions

    Dans une grande casserole, chauffer l’huile ร  feu moyen-รฉlevรฉ. Ajouter les carottes, l’oignon, l’ail, le curcuma, la feuille de laurier et le thym, et bien mรฉlanger. Ajouter de gรฉnรฉreuses pincรฉes de sel et de poivre. Baisser le feu ร  moyen et cuire, en brassant souvent, jusqu’ร  ce que l’oignon soit tendre et dorรฉ, environ 15 minutes. Si les lรฉgumes ont tendance ร  coller, baisser le feu. Les lรฉgumes doivent รชtre tendres et caramรฉlisรฉs.

    Ajouter la pรขte de tomates et bien mรฉlanger. Laisser la pรขte de tomates cuire pendant environ 5 ร  6 minutes, en brassant. La pรขte de tomates doit devenir un rouge foncรฉ et dรฉvelopper un arรดme subtilement sucrรฉ.

    Ajouter le lait de coconut en grattant bien le fond de la casserole. Baisser le feu et laisser le mรฉlange devenir crรฉmeux, tout en mijotant, environ 3 minutes. Ajouter le bouillon de lรฉgumes et les lentilles, et porter ร  รฉbullition. Rรฉduire le feu et mijoter doucement jusqu’ร  ce que les lentilles soient cuites, environ 5 ร  6 minutes. Retirer du feu et ajouter les lรฉgumes verts et le sambal oelek, si dรฉsirรฉ, et bien mรฉlanger.

    The recipe for this traditional falafel, or little bites of chickpea heaven, is fantastic. You can put the falafel on top of a salad, stuff them into a pita along with toum and fresh tomatoes and lettuce, eat with rice, the choices are endless! This recipe will give you about 36 falafel so feel free to cut in half if needed. It’s also nice to use half fava beans and half chickpeas.

    Traditional Falafel

    Ingredients

    • 1 pound dry chickpeas, soaked overnight
    • 1 small onion, chopped
    • 1/2 cup flat leaf parsley
    • 1/2 cup cilantro
    • 6 cloves garlic
    • 2 tablespoons chickpea flour
    • 1 1/2 teaspoon sea salt
    • 2 teaspoons ground cumin
    • 1 teaspoon ground coriander
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon cayenne
    • 1/4 teaspoon ground cardamom
    • Grapeseed oil for frying

    Instructions

    Drain and rinse the chickpeas well. Transfer them to the bowl of a food processor along with the onion, parsley, cilantro, garlic, chickpea flour, salt, cumin, coriander, black pepper, cayenne, and cardamom.

    Pulse all ingredients together, scraping the sides of the bowl a few times, until the mixture is well combined, but still coarse in texture. Pour the mixture into a bowl, cover and transfer to the freezer for 30 minutes.

    Heat enough grapeseed oil in a deep saucepan to deep-fry the falafel. Heat the oil slowly over medium heat, until it reaches about 370หš. You can use a deep-frying thermometer if youโ€™d like. Meanwhile, form the falafel mixture into round balls (about 1 ยฝ tablespoons per ball).

    When youโ€™re ready to fry, try a test one first, to ensure the oil is at the right temperature. Each ball should take about 5-6 minutes to fry. Fry all your falafel in batches, transferring them, using a slotted spoon, to a paper towel lined plate.

    Les falafels sont si bons, mais ils me semblaient toujours si complexes ร  faire… Jusqu’ร  ce que je parvienne ร  cette recette! Tout y est: les falafels sont tendres ร  l’intรฉrieur avec une enveloppe croustillante, ils sentent bon les herbes, et ils peuvent รชtre utilisรฉs de tant de faรงons!     • 1 livre de pois chiches secs, trempรฉs toute une nuit
    • 1 petit oignon, hachรฉ
    • 1/2 tasse persil plat
    • 1/2 tasse coriandre fraรฎche
    • 6 gousses d’ail
    • 2 c. ร  soupe de farine de pois chiche
    • 1 1/2 c. ร  thรฉ sel de mer
    • 2 c. ร  thรฉ de cumin
    • 1 c. ร  thรฉ coriandre moulue
    • 1/4 c. ร  thรฉ poivre noir
    • 1/4 c. ร  thรฉ cayenne
    • 1/4 c. ร  thรฉ cardamom
    • Huile de pรฉpin de raisin pour la friture

    Instructions

    ร‰goutter et rincer les pois chiches. Placer dans le bol d’un robot culinaire et y ajouter l’oignon, le persil, la coriandre fraรฎche, l’ail, la farine de pois chiche, le sel, le cumin, la coriandre moulue, le poivre noir, le cayenne, et la cardamom.

    Pulvรฉriser tous les ingrรฉdients jusqu’ร  l’obtention d’un mรฉlange grossier et uniforme, en prenant soin d’incorporer les ingrรฉdients qui se retrouvent sur les parois du bol de temps ร  autre. Mettre le mรฉlange dans un bol, couvrir, et placer au congรฉlateur pendant 30 minutes.

    Verser assez d’huile de pรฉpin de raisin dans une casserole pour y submerger les falafels. Chauffer l’huile doucement, ร  feu moyen, jusqu’ร  ce qu’elle atteigne une tempรฉrature de 370หš. Vous pouvez utiliser un thermomรจtre ร  bonbon, si vous le voulez. Pendant que l’huile chauffe, faรงonner des falafels d’environ 1 ยฝ c. ร  soupe chacun.

    Lorsque l’huile atteint la tempรฉrature idรฉale, placer un falafel “test” dans la casserole. (Si l’huile est trop รฉlevรฉe, le falafel cuira trop rapidement ร  l’extรฉrieur et restera mi-cuit ร  l’intรฉrieur.) Chaque falafel devrait prendre environ 4-5 minutes ร  cuire. Frire les falafels en plusieurs fois, en les transfรฉrant sur une assiette recouverte d’essuie-tout.

    Butterkin Pecan Ravioli with Sage Brown Butter

    • 1 butterkin squash, or butternut squash, or cooking pumpkin, halved and seeded
    • 3–4 cloves garlic, whole and unpeeled
    • 2 tablespoons olive oil
    • 1 cup semolina flour
    • 1 cup all purpose flour, plus more for dusting
    • 1/2 cup aquafaba (water from a can of chickpeas)
    • 3 tablespoons water
    • 1/2 cup toasted pecans, plus more for toppings
    • 1 tablespoon nutritional yeast
    • 9 tablespoons butter, divided
    • 1 teaspoon maple syrup
    • 25 sage leaves, left whole
    • Sea salt and pepper, to taste

    Instructions

    Preheat oven to 400ยฐ. Coat all sides of the squash and garlic cloves with the olive oil, and sprinkle generously with salt and pepper. Place the squash halves, cut side down, as well as the whole garlic cloves, on a parchment-lined baking sheet. Transfer to the oven, and roast until tender, about 40 minutes. Remove from the oven and let cool.

    In a large bowl, mix the semolina flour and the all purpose flour. Add the aquafaba and the water and mix well with your hands, until you obtain a soft and uniform ball of dough. If the dough is too wet, add a little bit of flour. If it is too dry, add a little bit of water, one teaspoon at a time. Place the ball of dough in a plastic wrap and place in the fridge to rest for 40 minutes.

    While the dough rests, scoop out 1 cup of flesh from the roasted squash. Keep the rest for another use, like in a soup, or in a sauce. Transfer the flesh to a food processor. Peel the garlic cloves and add to the food processor. Add the toasted pecans, the nutritional yeast, 1 tablespoon of the butter, and the maple syrup. Process until smooth. Set aside.

    After resting time, remove the dough from the fridge and from the plastic wrap. On a lightly flour-dusted surface, roll out the dough, using a rolling pin, until smooth and very thin. Using a 2-in cookie cutter, or any other round cup similar in diameter, cut dough into circles. Make a ball with the unused dough, and roll out again until smooth and thin. Cut out more circles, until you use all your dough.

    Scoop out a scant teaspoon of squash mixture in the center of half the circles (the “bottoms”). Using your fingers, spread a small amount of water around the inside perimeter of the dough “tops”. Place them on top of the filled dough bottoms and press around the edges to seal properly. You should have approximately 40 raviolis.

    To cook the raviolis, place them, without overcrowding them, in a large pot of salted boiling water, for 4-5 minutes. I did mine in two batches.

    While the raviolis cook, heat the remaining 8 tablespoons butter in a small saucepan, over medium heat. Add the sage leaves and cook until they are crispy and the butter is golden brown, approximately 5 minutes.

    Place some raviolis in a plate, spoon some of the sage butter on top, and garnish with toasted pecans. Bon appรฉtit!

    • 1 courge butterkin, ou butternut, coupรฉe en deux, les graines enlevรฉes
    • 3–4 gousses d’ail, entiรจres
    • 2 c. ร  soupe d’huile d’olive
    • 1 tasse de farine de semoule
    • 1 tasse de farine tout usage (un peu plus pour rouler la pรขte)
    • 1/2 tasse d’aquafaba (liquide d’une boรฎte de pois chiches)
    • 3 c. ร  soupe d’eau
    • 1/2 tasse de pacanes rรดties (plus 1/3 tasse pour la garniture)
    • 1 c. ร  soupe de levure alimentaire
    • 9 c. ร  soupe de beurre, divisรฉ
    • 1 c. ร  thรฉ de sirop d’รฉrable
    • 25 feuilles de sauge entiรจres
    • Sel de mer et poivre, au goรปt

    Instructions

    Prรฉchauffer le four ร  400ยฐ. Badigeonner la courge et les gousses d’ail avec l’huile d’olive et assaisonner gรฉnรฉreusement de sel et de poivre. Placer les moitiรฉs de courge, partie coupรฉe vers le bas, sur une plaque de cuisson prรฉalablement recouverte de papier parchemin. Mettre au four et cuire jusqu’ร  ce que la courge soit tendre, environ 40 minutes. Retirer du four et laisser refroidir.

    Dans un grand bol, mรฉlanger la farine de semoule et la farine tout usage. Ajouter l’aquafaba et l’eau. Bien mรฉlanger avec les mains, jusqu’ร  l’obtention d’une pรขte lisse et uniforme. Si la pรขte est trop mouillรฉe, ajouter de la farine. Si elle est trop sรจche, ajouter un peu d’eau, une c. ร  thรฉ ร  la fois. Placer la pรขte dans un papier plastique et mettre au rรฉfrigรฉrateur pendant 40 minutes.

    Pendant que la pรขte repose au rรฉfrigรฉrateur, mesurer 1 tasse de courge. Conserver les restes au rรฉfrigรฉrateur pour une autre utilisation. Mettre la courge dans le bol d’un robot culinaire. Ajouter les pacanes rรดties, la levure alimentaire, 1 c. ร  soupe de beurre et le sirop d’รฉrable. Pulser jusqu’ร  l’obtention d’un mรฉlange onctueux. Mettre la garniture de cรดtรฉ.

    Retirer la pรขte du rรฉfrigรฉrateur. Sur une surface enfarinรฉe lรฉgรจrement, rouler la pรขte trรจs mince. En utilisant un emporte-piรจce de deux pouces de diamรจtre, ou un verre ou contenant avec un diamรจtre semblable, couper la pรขte en cercles. Faire une boule avec les restes de pรขte, et rouler ร  nouveau pour couper le reste des cercles, jusqu’ร  ce qu’il n’y ait plus de pรขte.

    Mesurer 1 c. ร  thรฉ de garniture et dรฉposer dans le milieu de la moitiรฉ des cercles (les “fonds”). Avec les doigts, mouiller le pรฉrimรจtre de chacun des “dessus” et dรฉposer sur le dessus des “fonds” garnis. Presser sur les rebords afin de les faire adhรฉrer. Vous devriez obtenir environ 40 raviolis.

    Pour cuire les raviolis, placer dans une grande casserole d’eau salรฉe bouillante, pendant 4 ร  5 minutes. J’ai cuit les miens en deux fois.

    Pendant que les raviolis cuisent, chauffer le reste du beurre (8 c. ร  soupe), ร  feu moyen. Ajouter les feuilles de sauge et cuire jusqu’ร  ce qu’elle soient croustillantes et que le beurre soit dorรฉ, environ 5 minutes.

    Placer les raviolis dans une assiette et garnir de beurre, de feuilles de sauge, et de pacanes rรดties. Bon appรฉtit!
