I’ve found that Quick Vegetable Fried Rice recipe is the surest and healthiest way to a 20-minute meal. Especially when I realize I have nothing ready for the kids lunches. And with this fried rice, there’s always a nice plate leftover for mama’s lunch as well. How great is that?

Quick Vegetable Fried Rice

Ingredients

Scale
  • 1 cup rice, rinsed and drained
  • 2 tablespoons olive oil
  • 1 small zucchini, cut in half lengthwise and sliced thinly in half moons
  • 3 asparagus
  • 1 large carrot, diced
  • 1 large shallot or 1/2 red onion, chopped
  • 1 red bell pepper, seeded and chopped
  • 1 large handful green beans, chopped
  • 1 large handful spinach
  • Coconut aminos, to taste
  • Sea salt and pepper, to taste
  • Cilantro, squeeze of fresh lemon juice, green onions, and toasted pumpkin seeds, to garnish

Instructions

In a rice cooker or in an InstaPot, start the rice. While the rice is cooking, prep your vegetables.

In a large skillet, heat the olive oil over medium-high heat. Add all the vegetables, except the spinach, and sautรฉ until softer, about 5-6 minutes. Add the cooked rice, some coconut aminos and the spinach and cook briefly, while mixing, until the spinach are wilted. Remove from the heat, season with sea salt and pepper, taste and adjust seasonings. Add a fresh squeeze of lemon juice and garnish with cilantro, toasted pumpkin seeds, and green onions.

Notes

You may change the vegetables used here according to the seasons and according to what you have handy. Just ensure that all vegetables are cut in a way that will promote a uniform cooking time.

Il arrive, parfois, qu’au lever, je me rends compte que je n’ai rien de prรชt pour le lunch des enfants. Malheureusement, ma fille n’apprรฉcie pas spรฉcialement les sandwichs au beurre d’arachides. Je dois donc faire preuve d’un peu plus de crรฉativitรฉ. Et rapido presto. La recette que je vous propose s’effectue en 20 minutes ou moins, les enfants adorent, et il en reste toujours assez pour maman. Que demander de mieux?

  • 1 tasse de riz, rincรฉ et รฉgouttรฉ
  • 2 c. ร  soupe d’huile d’olive
  • 1 petite courgette, coupรฉe en deux sur la longueur et tranchรฉe mince en demi-lunes
  • 3 asperges, hachรฉes
  • 1 grosse carotte, en cubes
  • 1 grosse รฉchalote franรงaise ou 1/2 oignon rouge, hachรฉ
  • 1 poivron rouge, hachรฉ
  • 1 grosse poignรฉe d’haricots verts, hachรฉs
  • 1 grosse poignรฉe d’รฉpinards frais
  • Aminos de coconut, au goรปt
  • Sel de mer et poivre, au goรปt
  • Coriandre fraรฎche, filet de jus de citron frais, oignons verts, et graines de citrouille grillรฉes pour garnir

Instructions

Dans un cuiseur ร  riz ou un autocuiseur, cuire le riz. Pendant que le riz cuit, prรฉparer et couper les lรฉgumes.

Dans une grande poรชle, chauffer l’huile ร  feu moyen-รฉlevรฉ. Ajouter les lรฉgumes, sauf les รฉpinards, et faire sauter pendant 5 ร  6 minutes, jusqu’ร  ce que les lรฉgumes soient tendres. Ajouter le riz cuit, les aminos de coconut au goรปt et les รฉpinards, et cuire doucement, tout en mรฉlangeant jusqu’ร  ce que les รฉpinards soient ramollis. Retirer du feu, assaisonner de sel de mer et de poivre, au goรปt. Ajouter un filet de jus de citron frais et garnir de coriandre fraรฎche, de graines de citrouille grillรฉes et d’oignons verts.

Notes

Vous pouvez changer les lรฉgumes selon les saisons et surtout selon ce qui se trouve dans votre frigo. Il est important de couper tous les lรฉgumes de faรงon ร  ce qu’ils atteignent un certain degrรฉ de cuisson tous en mรชme temps.

Creamy Avocado Vinaigrette for Pasta Salad
Creamy Avocado Vinaigrette for Pasta Salad

Pasta salad can be extremely boring and unappetizing, or supremely colorful and healthy. I choose the latter with this Creamy Avocado Vinaigrette for Pasta Salad. So instead of spending time dicing carrots and celery for the usual mayo and pasta party, I slice up some red cabbage and some baby broccoli. To that I can add some seasonal fruit, red pepper, roasted pumpkin seeds, and a handful of fresh herbs. I then toss this goodness up with quinoa pasta and dress it with a creamy avocado vinaigrette. It’s pretty, it’s healthy, and it’s seriously nutritious. The kids also love it, which means extra points for me!

Note: At the beginning of the week (or on Sunday), I chop up all the vegetables I’ll use for the salad. I keep them in a resealable container and have them handy throughout the week. This salad is also great for lunches, and you can also layer it in Mason jars for al fresco dining.

Ingredients

  • 1 avocado, peeled and seeded
  • 1/3 cup avocado oil
  • 2 tablespoons lemon juice
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon maple syrup
  • Sea salt and pepper, to taste

Instructions

Place the avocado, the oil, the lemon juice, the apple cider vinegar, and the maple syrup in a blender (I use a hand held mixer to purรฉe everything). Add sea salt and pepper, to taste. Serve with cut up raw vegetables, your favorite pasta, cooked, and top with roasted pumpkin seeds. Let me know what you think! Bon appรฉtit!

Vinaigrette crรฉmeuse ร  l’avocat pour salade de pรขtes

Les salades de pรขtes peuvent รชtre ennuyeuses et monotones, mais elles peuvent aussi รชtre allรฉchantes et nutritives. Alors au lieu de perdre du temps ร  couper des carottes et du cรฉleri, optez plutรดt pour la kale et le bรฉbรฉ brocoli. Ajoutez-y des fruits de saison, du poivron rouge, des graines de citrouille grillรฉes, et une poignรฉe d’herbes fraรฎches. Mรฉlangez cet arc-en-ciel de santรฉ avec des pรขtes de quinoa, cuites au prรฉalable, et une gรฉnรฉreuse touche de vinaigrette crรฉmeuse ร  l’avocat. C’est beau, c’est santรฉ, et c’est hyper nutritif. Les enfants aussi en raffolent.

Petit truc: en dรฉbut de semaine, ou le dimanche, je prรฉpare tous les lรฉgumes dรฉsirรฉs pour la salade. Je les conserve dans un contenant hermรฉtique, dans lequel je peux aller piger durant la semaine. Cette salade est parfaite pour les lunchs. Vous pouvez mรชme la dรฉposer en รฉtages dans des pots Mason pour les repas ร  l’extรฉrieur.

Banza Ziti Bolognese with Italian Sausage

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 celery rib, diced
  • 2 cloves garlic, minced
  • 1/2 can tomato paste
  • 2 28-oz cans Italian tomatoes (crushed with your hands)
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 cup red pepper flakes
  • 1/8 teaspoon cinnamon
  • 1 teaspoon maple syrup
  • 3/4 cup TVP (textured vegetable protein)
  • 3/4 cup vegetable broth
  • 2 plant-based sausages, sliced into 1/4″ rounds (Beyond or Field Roast)
  • Sea salt and pepper, to taste
  • 1 package Banza Ziti, undercooked by 2-3 minutes
  • 1/2 wheel mozzarella (I love Miyoko’s)
  • Fresh basil
  • Nutritional yeast (optional)

Instructions

In a large straight-edge skillet, heat up the olive oil over medium heat. Add the onion, celery, and garlic, and sautรฉ until the onion is translucent, about 4 minutes. Add the tomato paste, and let it take some color, about 2-3 minutes. Once it’s darker and fragrant, add the crushed tomatoes, oregano, garlic and onion powder, cinnamon, maple syrup, and salt and pepper to taste. Mix well. Let simmer and reduce, over medium-low heat, until the sauce is fragrant and tasty, about 40 minutes, stirring often and adjusting the heat, if necessary. Once the sauce is reduced, add the broth and the TVP, and combine until rehydrated. Add the Italian sausage and the cooked pasta, and heat through.

Preheat broiler. To assemble, place the pasta in an oven-proof baking dish (at least 2.2 quarts). Spread your mozzarella on top and transfer to the oven. Broil until the cheese is bubbly and brown. Take out of the oven and let cool for a few minutes before serving, garnished with fresh basil and nutritional yeast. Bon appรฉtit!

  • 1 c. ร  soupe d’huile d’olive
  • 1 oignon, en dรฉs
  • 1 branche de cรฉleri, en dรฉs
  • 2 gousses d’ail, รฉmincรฉes
  • 3 onces de pรขte de tomate (1/2 boรฎte)
  • 2 boรฎtes de 28 onces de tomates italiennes (รฉcrasรฉes avec les mains)
  • 1 c. ร  thรฉ d’origan sรฉchรฉ
  • 1 c. ร  thรฉ de poudre d’ail
  • 1 c. ร  thรฉ de poudre d’oignon
  • 1/4 tasse de flocons de piments broyรฉs
  • 1/8 c. ร  thรฉ de cannelle moulue
  • 1 c. ร  thรฉ de sirop d’รฉrable
  • 3/4 tasse de protรฉine vรฉgรฉtale texturรฉe
  • 3/4 tasse de bouillon de lรฉgumes
  • 2 saucissons vรฉgรฉ, en tranches de 1/4 pouce (Beyond ou autre)
  • Sel de mer et poivre, au goรปt
  • 1 boรฎte de ziti Banza ou autre, cuites selon les instructions, moins 2 ou 3 minutes
  • Mozzarella (j’adore le fromage Miyoko’s)
  • Basilic frais
  • Levure alimentaire (optionnel)

Instructions

Dans une grande poรชle, chauffer l’huile d’olive ร  feu moyen. Ajouter l’oignon, le cรฉleri et l’ail, et faire revenir jusqu’ร  ce que l’oignon soit translucide, environ 4 minutes. Ajouter la pรขte de tomate et laisser cuire pendant 2 ร  3 minutes. Une fois la pรขte de tomate aromatique, ajouter les tomates broyรฉes, l’origan, la poudre d’ail et d’oignon, la cannelle, le sirop d’รฉrable, et le sel de mer et le poivre. Bien mรฉlanger. Laisser mijoter, ร  feu moyen-bas, jusqu’ร  ce que la sauce soit รฉpaisse et aromatique, en brassant souvent, environ 40 minutes. Une fois la sauce prรชte, ajouter le bouillon de lรฉgumes et la protรฉine vรฉgรฉtale texturรฉe. Mรฉlanger jusqu’ร  ce que la protรฉine soit rรฉhydratรฉe. Ajouter les tranches de saucisse et les pรขtes, prรฉalablement cuites, et rรฉchauffer.

Prรฉchauffer le four ร  gril (broil). Pour assembler, placer les pรขtes dans un plat allant au four (au moins 2,2 quarts). Disposer des tranches de mozzarella sur le dessus et placer sur la grille supรฉrieure du four. Griller jusqu’ร  ce que le mozzarella soit bien dorรฉ. Retirer du four et laisser reposer quelques minutes. Garnir de basilic frais et de levure alimentaire, si dรฉsirรฉ. Bon appรฉtit!

This is it! The meal of all meals, the ultimate rice dish: the Vegetable Pulao! You will often hear people using the word pulao to describe this dish. Some people say there is a difference between the two, some people say they’re fundamentally the same, but now present regional differences. Either way, the dish is fragrant and fabulous, like most Indian dishes, and is made using only one pot, which is pretty cool, if you want my opinion!

Vegetable Pulao

Ingredients

  • 1/4 cup coconut oil
  • 6 green cardamom pods, cracked open
  • 5 cloves
  • 4 star anise pods
  • 1 cinnamon stick, broken in half
  • 1 whole nutmeg seed, smashed
  • 2 jalapeรฑo peppers, cut in half
  • 1 medium onion, diced
  • 1 bay leaf
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon sea salt
  • 5 cups mixed vegetables (here I had potatoes, carrots, greens beans, and sweet peas)
  • 1 tablespoon garlic-ginger paste
  • 6 cups water
  • 1 can coconut milk
  • 1/2 bunch cilantro, minced
  • 2 tablespoons garam masala
  • 4 1/2 cups basmati rice, rinsed and drained

Instructions

Preheat oven to 400ยฐ. In a large oven-roof soup pot with a lid, or large Dutch oven, heat the coconut oil over medium-high heat. Add the cardamom pods, cloves, star anise pods, cinnamon, nutmeg, and jalapeรฑo peppers, and sautรฉ until fragrant, about 2 minutes.

Add the onion and the bay leaf, and sautรฉ until the onion is translucent, about 4 minutes. Add the turmeric and sea salt, and continue cooking for two more minutes.

Add the vegetables, garlic-ginger paste, 6 cups water, coconut milk, cilantro, and garam masala, and bring to a boil. Taste the broth and adjust seasonings, if necessary. Add the rice and return to a boil while stirring. Cover, transfer to the oven, and cook for 45 minutes. Remove from the oven and let steam 10 minutes. Serve with fresh cilantro, raita, and other curries.

Pulao aux lรฉgumes

Ingredients

Scale
  • 1/4 tasse d’huile de coconut
  • 6 gousses de cardamome verte, ouvertes
  • 5 clous de girofle
  • 4 gousses d’anis รฉtoilรฉ
  • 1 bรขton de cannelle, coupรฉ en deux
  • 1 noix de muscade, รฉcrasรฉe
  • 2 piments jalapeรฑo, coupรฉs en deux
  • 1 oignon moyen, coupรฉ en dรฉs
  • 1 feuille de laurier
  • 1/2 c. ร  thรฉ de poudre de curcuma
  • 1 c. ร  soupe de sel de mer
  • 5 tasses de lรฉgumes mรฉlangรฉs (j’utilise habituellement des pommes de terre, des carottes, des fรจves vertes (en saison) et des pois verts)
  • 1 c. ร  soupe de pรขte gingembre et ail
  • 6 tasses d’eau
  • 1 boรฎte de lait de coconut
  • 1/2 botte de coriandre fraรฎche, รฉmincรฉe
  • 2 c. ร  soupe de garam masala
  • 4 1/2 tasses de riz basmati, rincรฉ et รฉgouttรฉ

Instructions

Prรฉchauffer le four ร  400ยฐ. Dans une grande soupiรจre allant au four ou une cocotte, faire chauffer l’huile de coconut ร  feu moyen-รฉlevรฉ. Ajouter les gousses de cardamome, les clous de girofle, l’anis รฉtoilรฉ, la cannelle, la muscade, et les piments jalapeรฑo, et faire revenir pendant 2 minutes.

Ajouter les oignons et la feuille de laurier, et faire revenir jusqu’ร  ce que l’oignon soit translucide, environ 4 minutes. Ajouter le curcuma et le sel de mer, et continuer de cuire pendant deux minutes de plus.

Ajouter les lรฉgumes, la pรขte de gingembre et ail, 6 tasses d’eau, le lait de coconut, la coriandre, et le garam masala, et porter ร  รฉbullition. Goรปter et ajuster les saveurs, au besoin. Ajouter le riz et porter ร  รฉbullition ร  nouveau. Couvrir, placer au four et cuire pendant 45 minutes. Retirer du four et laisser reposer, couvert, pendant 10 minutes. Servir avec de la coriandre fraรฎche, de la raita et diffรฉrents currys, si dรฉsirรฉ.

Ingredients

  • 1 tablespoon coconut oil
  • 1 small red onion, diced
  • 1/2 red bell pepper, diced
  • 1 cup green beans, cut in 1/2″ pieces
  • 2 cloves garlic, peeled and smashed
  • 1” piece fresh ginger, smashed (optional)
  • 1” piece fresh turmeric, smashed (optional)
  • 1 can black beans, rinsed and drained
  • 1 full cup of kale, in a chiffonade
  • 4 zucchini, spiralized
  • Sea salt and pepper
  • Fresh herbs, olive oil, lemon juice (for my go-to vinaigrette, click here)

Instructions

In a large skillet, heat the oil over medium-high heat. Add the onions, bell pepper, green beans, garlic, ginger, turmeric, and generous pinches of sea salt and pepper. Sautรฉ until the vegetables are starting to soften, 3-4 minutes. Add the beans and kale, and heat through. Take off the heat. Place zoodles at the bottom of a shallow bowl and top with the beans mixture. Top with fresh herbs, olive oil, and lemon juice, or your favorite vinaigrette. Bon appรฉtit!

  • 1 boรฎte de haricots noirs, rincรฉs et รฉgouttรฉs
  • 1 tasse de kale, coupรฉ en chiffonnade
  • 4 zucchinis, en juliennes
  • Sel de mer et poivre noir, au goรปt
  • Herbes fraรฎches, huile d’olive, jus de citron frais (ou cette vinaigrette tout usage)

Instructions

Dans une grande poรชle, faire chauffer l’huile ร  feu moyen-รฉlevรฉ. Ajouter les oignons, le poivron, les fรจves vertes, l’ail, le gingembre, le curcuma, et de gรฉnรฉreuses pincรฉes de sel de mer et poivre. Faire revenir pendant 3 ร  4 minutes, jusqu’ร  ce que les lรฉgumes deviennent tendres. Ajouter les haricots noirs et le kale, rรฉchauffer. Retirer du feu. Placer les zucchinis en juliennes sur un plat de service. Couvrir du mรฉlange de lรฉgumes. Garnir d’herbes fraรฎches, d’un trait d’huile d’olive, et de jus de citron frais. Bon appรฉtit!

Banza Rotini with Leeks and Shiitake Mushrooms
Banza Rotini with Leeks and Shiitake Mushrooms

This Banza Rotini with Leeks and Shiitake Mushrooms is a protein-packed dish. If you eat a plant-based diet and protein intake is on your mind, this recipe is for you. Take comfort in knowing that just the pasta part of the meal already contains 25 grams of clean, plant-based protein. Banza is awesome that way, because their pastas are made from chickpeas. You eat pasta, you eat chickpeas! Whatever you add to this will simply boost your nutrient intake, so it’s a hefty good start!

Here, I used one of my favorite combinations: mushrooms and leeks. The slowly cooked leeks become silky savory, and the coconut milk brings you a nice dose of healthy fats along with the creaminess that is so pleasant with mushrooms. I add some warming jerk spices, to complete the flavor profile, in a simple addition, but you could skip that step and still get something fabulous, all in one pot, with less than 10 ingredients!

Banza Rotini with Leeks and Shiitake Mushrooms

  • 1 package Banza Rotini, cooked according to package directions
  • 2 tablespoons olive oil
  • 2 leeks, cleaned well, sliced once lengthwise, and then thinly crosswise
  • 1 sprig fresh thyme
  • 7 oz shiitake mushrooms, trimmed, sliced thin
  • 2 teaspoons jerk spice mix (optional)
  • 1 can coconut milk
  • 1 tablespoon fresh parsley, chopped
  • 1/3 cup toasted pecan halves (optional)
  • Sea salt and pepper

Instructions

In a large cast iron skillet, heat the oil over medium heat. Add the leeks, the thyme, generous pinches of sea salt and pepper, and cook slowly, stirring often, until the leeks are soft and tender, about 8-10 minutes. Then add the mushrooms and cook until they are tender, about 5 minutes more. Add the jerk spices and mix well. Add the coconut milk and heat through. Add the cooked pasta, mix well, and take off the heat. Taste and adjust seasonings, if necessary. Garnish with fresh parsley and toasted pecans.

  • 1 boรฎte de pรขtes de garbanzo, cuites selon les directivesย 
  • 2 c. ร  soupe d’huile d’olive
  • 2 poireaux, propres et coupรฉs en deux sur la longueur et ensuite en tranches minces
  • 1 branche de thym frais
  • 7 onces de champignons shiitake, parรฉs et coupรฉs en tranches minces
  • 2 c. ร  thรฉ de mรฉlange ร  รฉpices jerk (en option)
  • 1 boรฎte de lait de coconut
  • 1 c. ร  soupe de persil frais, รฉmincรฉ
  • 1/3 tasse de noix de pรฉcan (en option)
  • Sel de mer et poivre, au goรปt

Instructions

Dans une grande poรชle de fonte, chauffer l’huile ร  feu moyen. Ajouter les poireaux, le thym, et de gรฉnรฉreuses pincรฉes de sel de mer et de poivre. Cuire doucement, en brassant souvent, jusqu’ร  ce que les poireaux soient tendres, de 8 ร  10 minutes. Ajouter ensuite les champignons et cuire jusqu’ร  ce qu’ils soient tendres, environ 5 minutes de plus. Ajouter le mรฉlange d’รฉpices jerk et bien mรฉlanger. Ajouter le lait de coconut et mรฉlanger. Ajouter les pรขtes cuites, rรฉchauffer, ajuster les assaisonnements si nรฉcessaire, et retirer du feu. Garnir de persil frais et des noix de pรฉcan rรดties. Bon appรฉtit!

The Lasagna alla Karina is easy andโ€ฆ full of surprises! You could easily fool a meat eater into thinking it’s a plain old meat lasagna. I’ve started playing with TVP (textured vegetable protein) recently, and oh the possibilities! My mind is bubbling! But first, lasagna! The trick to cut your time is to make your ricotta the day before or the morning of. Each step is easy and quick, though. I wrote the recipe according to each one, with the assembly as the last step.

For the tofu ricotta (inspired by the Whole Foods recipe):

  • 1/2 package extra-firm tofu, drained
  • 2 teaspoons tahini
  • 2 cloves garlic, chopped
  • 1 tablespoon nutritional yeast
  • 1 teaspoon white miso
  • 2 teaspoons lemon juice
  • 2 tablespoons chopped basil
  • Pinch black pepper

For the sauce:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 celery rib, diced
  • 3 cloves garlic, minced
  • 1/4 cup dry white wine (optional)
  • 1 1/2 cup vegetable broth
  • 1 1/2 cup TVP (I like Bob’s Red Mill)
  • 2 24-oz jars of your favorite marinara sauce
  • 2 tablespoons basil, chopped

For the assembly:

  • 1 lb. lasagna sheets, cooked according to package directions
  • 1 teaspoon olive oil
  • 1 round Miyokos Mozzarella (or your favorite mozz)
  • Fresh basil
  • Nutritional yeast

Instructions

For the tofu ricotta:

Put all the ingredients in the bowl of a food processor and process until smooth. Set aside.

For the sauce:

In a large skillet, heat the olive oil over medium heat. Add the onion, celery, and garlic, and sautรฉ until the onion is translucent, about 8-10 minutes. Deglaze the skillet with the white wine (or vegetable broth) and let it evaporate. Add the vegetable broth, bring to a boil, and add the textured vegetable protein. Reduce the heat and continue cooking until the broth is absorbed. Add the marinara sauce, heat through. Add fresh basil and done.

For the assembly:

Preheat oven to 375หš. Pour the olive oil at the bottom of a 9″ x 13″ baking dish. Spread it evenly with your hands on the bottom and the side surfaces of the dish. Pour 1 cup of the sauce at the bottom and cover with 5 cooked lasagna sheets. Top with 1 cup of sauce. Spread about 1/3 cup of the ricotta and top with 5 cooked lasagna sheets. Repeat until you are done with the lasagna sheets, and finish with some sauce. Add the mozzarella. Cover with foil and bake for 20 minutes. Remove the foil and broil for an extra 5 minutes, until the cheese is browning and bubbling. Garnish with some nutritional yeast and fresh basil. Bon appรฉtit!

Forego the frozen pizza tonight and make this Easy Homemade Pizza. These are the easy steps I go through when I want to make pizza quickly and effectively. No need to make dough, sauce, or cheese. Everything is store-bought, but the results are so spectacular, one would be crazy not to use these shortcuts! Sometimes, I make my own sauce, or I use some leftover marinara. Be creative, but rest assured that in the end, you have this fabulous pizza you can come back to, when it’s just more convenient.

Easy Homemade Pizza

  • 1 package Whole Foods All-Natural pizza dough
  • Olive oil
  • Pizza sauce (I like Rao’s)
  • Pepperoni (I like slicing Beyond Sausage really thin)*
  • 1 cup shallots, sliced thin
  • 1 cup mushrooms, sliced thin
  • 1 green bell pepper, sliced thin
  • Mozzarella (I love Miyoko’s Mozzarella)
  • Red pepper flakes
  • Fresh basil
  • Sea salt and pepper, to taste

Instructions

Bring the dough to room temperature. Line a large baking sheet with parchment paper. Apply a very thin layer of olive oil between the baking sheet and the parchment paper, to avoid the paper from slipping. Rub a little bit of olive oil between your hands and shape the pizza dough as to cover the baking sheet.

Preheat the oven to 350ยฐ. Take the pizza out of the bag and brush a thin layer of olive oil on top. Top with some pizza sauce. You can now top with the rest of your ingredients. Transfer to the oven and bake for 30-40 minutes. Because heat varies depending on the oven, start checking after 30 minutes. Take out of the oven, top with more olive oil or some leftover sauce, if desired, and some fresh basil. Bon appรฉtit!

Notes

*Alternatively, rinse and drain a can of chickpeas. Toss them with some olive oil, some red pepper flakes, and some sea salt, and distribute them on the crust.

  • 1 boule de pรขte ร  pizza
  • Huile d’olive
  • Sauce ร  pizza en pot (j’aime la sauce Rao’s)
  • Pepperoni (j’adore couper les saucisses de marque Beyond trรจs mince)*
  • 1 tasse d’รฉchalotes franรงaises, tranchรฉes mince
  • 1 tasse de champignons, tranchรฉs mince
  • 1 poivron vert, tranchรฉ mince
  • Mozzarella vรฉgรฉtalien
  • Flocons de chili broyรฉs
  • Basilic frais
  • Sel de mer et poivre noir, au goรปt

Instructions

Laisser reposer la pรขte ร  pizza ร  tempรฉrature ambiante. Appliquer une mince couche d’huile d’olive sur une tรดle et couvrir de papier parchemin. Avec un peu d’huile d’olive dans les mains, travailler la pรขte et รฉtendre sur la tรดle selon la forme dรฉsirรฉe.

Prรฉchauffer le four ร  350ยฐ. Appliquer une mince couche d’huile d’olive sur la pรขte. Recouvrir de sauce ร  pizza et garnir des ingrรฉdients. Mettre au four et cuire pendant 30 ร  40 minutes. Retirer du four et garnir de basilic frais. Bon appรฉtit!

Notes

*Vous pouvez aussi utiliser des pois chiches. Rincer et รฉgoutter. Mรฉlanger avec de l’huile d’olive, des flocons de chili broyรฉs et du sel de mer.

Butterkin Pecan Ravioli with Sage Brown Butter

  • 1 butterkin squash, or butternut squash, or cooking pumpkin, halved and seeded
  • 3–4 cloves garlic, whole and unpeeled
  • 2 tablespoons olive oil
  • 1 cup semolina flour
  • 1 cup all purpose flour, plus more for dusting
  • 1/2 cup aquafaba (water from a can of chickpeas)
  • 3 tablespoons water
  • 1/2 cup toasted pecans, plus more for toppings
  • 1 tablespoon nutritional yeast
  • 9 tablespoons butter, divided
  • 1 teaspoon maple syrup
  • 25 sage leaves, left whole
  • Sea salt and pepper, to taste

Instructions

Preheat oven to 400ยฐ. Coat all sides of the squash and garlic cloves with the olive oil, and sprinkle generously with salt and pepper. Place the squash halves, cut side down, as well as the whole garlic cloves, on a parchment-lined baking sheet. Transfer to the oven, and roast until tender, about 40 minutes. Remove from the oven and let cool.

In a large bowl, mix the semolina flour and the all purpose flour. Add the aquafaba and the water and mix well with your hands, until you obtain a soft and uniform ball of dough. If the dough is too wet, add a little bit of flour. If it is too dry, add a little bit of water, one teaspoon at a time. Place the ball of dough in a plastic wrap and place in the fridge to rest for 40 minutes.

While the dough rests, scoop out 1 cup of flesh from the roasted squash. Keep the rest for another use, like in a soup, or in a sauce. Transfer the flesh to a food processor. Peel the garlic cloves and add to the food processor. Add the toasted pecans, the nutritional yeast, 1 tablespoon of the butter, and the maple syrup. Process until smooth. Set aside.

After resting time, remove the dough from the fridge and from the plastic wrap. On a lightly flour-dusted surface, roll out the dough, using a rolling pin, until smooth and very thin. Using a 2-in cookie cutter, or any other round cup similar in diameter, cut dough into circles. Make a ball with the unused dough, and roll out again until smooth and thin. Cut out more circles, until you use all your dough.

Scoop out a scant teaspoon of squash mixture in the center of half the circles (the “bottoms”). Using your fingers, spread a small amount of water around the inside perimeter of the dough “tops”. Place them on top of the filled dough bottoms and press around the edges to seal properly. You should have approximately 40 raviolis.

To cook the raviolis, place them, without overcrowding them, in a large pot of salted boiling water, for 4-5 minutes. I did mine in two batches.

While the raviolis cook, heat the remaining 8 tablespoons butter in a small saucepan, over medium heat. Add the sage leaves and cook until they are crispy and the butter is golden brown, approximately 5 minutes.

Place some raviolis in a plate, spoon some of the sage butter on top, and garnish with toasted pecans. Bon appรฉtit!

  • 1 courge butterkin, ou butternut, coupรฉe en deux, les graines enlevรฉes
  • 3–4 gousses d’ail, entiรจres
  • 2 c. ร  soupe d’huile d’olive
  • 1 tasse de farine de semoule
  • 1 tasse de farine tout usage (un peu plus pour rouler la pรขte)
  • 1/2 tasse d’aquafaba (liquide d’une boรฎte de pois chiches)
  • 3 c. ร  soupe d’eau
  • 1/2 tasse de pacanes rรดties (plus 1/3 tasse pour la garniture)
  • 1 c. ร  soupe de levure alimentaire
  • 9 c. ร  soupe de beurre, divisรฉ
  • 1 c. ร  thรฉ de sirop d’รฉrable
  • 25 feuilles de sauge entiรจres
  • Sel de mer et poivre, au goรปt

Instructions

Prรฉchauffer le four ร  400ยฐ. Badigeonner la courge et les gousses d’ail avec l’huile d’olive et assaisonner gรฉnรฉreusement de sel et de poivre. Placer les moitiรฉs de courge, partie coupรฉe vers le bas, sur une plaque de cuisson prรฉalablement recouverte de papier parchemin. Mettre au four et cuire jusqu’ร  ce que la courge soit tendre, environ 40 minutes. Retirer du four et laisser refroidir.

Dans un grand bol, mรฉlanger la farine de semoule et la farine tout usage. Ajouter l’aquafaba et l’eau. Bien mรฉlanger avec les mains, jusqu’ร  l’obtention d’une pรขte lisse et uniforme. Si la pรขte est trop mouillรฉe, ajouter de la farine. Si elle est trop sรจche, ajouter un peu d’eau, une c. ร  thรฉ ร  la fois. Placer la pรขte dans un papier plastique et mettre au rรฉfrigรฉrateur pendant 40 minutes.

Pendant que la pรขte repose au rรฉfrigรฉrateur, mesurer 1 tasse de courge. Conserver les restes au rรฉfrigรฉrateur pour une autre utilisation. Mettre la courge dans le bol d’un robot culinaire. Ajouter les pacanes rรดties, la levure alimentaire, 1 c. ร  soupe de beurre et le sirop d’รฉrable. Pulser jusqu’ร  l’obtention d’un mรฉlange onctueux. Mettre la garniture de cรดtรฉ.

Retirer la pรขte du rรฉfrigรฉrateur. Sur une surface enfarinรฉe lรฉgรจrement, rouler la pรขte trรจs mince. En utilisant un emporte-piรจce de deux pouces de diamรจtre, ou un verre ou contenant avec un diamรจtre semblable, couper la pรขte en cercles. Faire une boule avec les restes de pรขte, et rouler ร  nouveau pour couper le reste des cercles, jusqu’ร  ce qu’il n’y ait plus de pรขte.

Mesurer 1 c. ร  thรฉ de garniture et dรฉposer dans le milieu de la moitiรฉ des cercles (les “fonds”). Avec les doigts, mouiller le pรฉrimรจtre de chacun des “dessus” et dรฉposer sur le dessus des “fonds” garnis. Presser sur les rebords afin de les faire adhรฉrer. Vous devriez obtenir environ 40 raviolis.

Pour cuire les raviolis, placer dans une grande casserole d’eau salรฉe bouillante, pendant 4 ร  5 minutes. J’ai cuit les miens en deux fois.

Pendant que les raviolis cuisent, chauffer le reste du beurre (8 c. ร  soupe), ร  feu moyen. Ajouter les feuilles de sauge et cuire jusqu’ร  ce qu’elle soient croustillantes et que le beurre soit dorรฉ, environ 5 minutes.

Placer les raviolis dans une assiette et garnir de beurre, de feuilles de sauge, et de pacanes rรดties. Bon appรฉtit!

Pasta with Greens in Creamy Wine Sauce

Now if you want to fancy up your pasta night, try this Pasta with Greens in Creamy Wine Sauce. If it sounds complexe, it’s actually pretty easy. And quick. Like 15 minutes quick. You can even skip the wine part and achieve pretty similar (and awesome) results. As with many of my recipes, take this as a technique, and switch up the vegetables according to the seasons. These days, the markets are filled with sprouts, leeks, and my favorite green, spigarello.

You’ll find spigarello in many of my recipes. It’s an heirloom variety of broccoli, native to southern Italy, considered the parent of broccoli-rabe. Unlike broccoli, however, you eat the leaves of spigarello, as the plant doesn’t produce florets. The taste, for me, is somewhere between kale and a very mild broccoli. It’s extremely versatile, it can be added to many dishes, and it’s popping up at farmers markets throughout the country. Look out for it. And if you can’t find it, feel free to use lacinato kale, or beet greens instead.

Pasta with Greens in Creamy Wine Sauce

  • 2 tablespoons olive or coconut oil
  • 1 leek, cleaned, sliced thin
  • 2 cloves garlic, minced
  • 2 cups Brussels sprouts, halved
  • 1 sprig fresh thyme
  • 1/3 cup dry white wine
  • 1 1/2 can coconut milk
  • 1 bunch spigarello, chopped
  • Sea salt and pepper, to taste
  • 1 pack of your favorite pasta, cooked according to package directions
  • Garnish (always optional): sliced green onions, red pepper flakes, fresh thyme

Instructions

In a large straight-edge sautรฉ pan, heat the coconut oil over medium heat. Once the oil is hot, add the leek, garlic, Brussels sprouts, thyme, and generous pinches of both sea salt and pepper. Sautรฉ, stirring often, until tender and browned, about 8-10 minutes. Feel free to play with your heat in order to achieve a nice caramelized color on your vegetables. Deglaze the pan with the white wine, and let reduce about one minute. Add the coconut milk and heat through. Add the spigarello and continue cooking until the greens are tender, about 2-3 minutes. Taste and adjust seasonings. You will most probably need to add sea salt and pepper at this point, all normal. When your sauce is ready, add enough of the cooked pasta to the pan for the sauce. Mix well. Serve garnished with sliced green onions and red pepper flakes. Bon appรฉtit!

Rotini sauce crรฉmeuse au vin blanc avec lรฉgumes verts

Pour une soirรฉe pasta qui sort de la routine, essayez cette recette! Bien qu’elle semble complexe, cette recette est d’une simplicitรฉ et d’une vitesse exemplaires. Vous pouvez la commencer ET la finir en 15 minutes! Et comme pour beaucoup de mes recettes, cette recette de pasta devient un canvas que l’on peint selon les saisons et les rรฉcoltes.

Le spigarello est une ancienne variรฉtรฉ de brocoli, originaire du sud de l’Italie. On le considรจre comme le parent du rapini et, contrairement au brocoli, ce sont les feuilles du spigarello qui sont comestibles, comme la plante ne produit pas de fleurons. Le goรปt, selon moi, est un croisement entre la kale et le brocoli. Il s’agit d’une verdure รฉtonnamment versatile, qui peut รชtre utilisรฉe de bien des faรงons.   • 2 gousses d’ail, รฉmincรฉes
  • 2 tasses de choux de Bruxelles, coupรฉs en deux
  • 1 branche de thym frais
  • 1/3 tasse de vin blanc sec
  • 1 1/2 boรฎte de lait de coco
  • 1 botte de spigarello, hachรฉ
  • Sel de mer et poivre, au goรปt
  • 1 boรฎte de rotinis, cuits selon les instructions
  • Garnitures (en option): oignons verts hachรฉs, flocons de piments broyรฉs, thym frais hachรฉ

Instructions

Dans une grande poรชle ร  bords droits, chauffer l’huile de coconut ร  feu moyen. Ajouter le poireau, l’ail, les choux de Bruxelles, le thym, et de gรฉnรฉreuses pincรฉes de sel et de poivre. Sauter, en mรฉlangeant souvent, jusqu’ร  ce que les lรฉgumes soient tendres et dorรฉs, de 8 ร  10 minutes. Dรฉglacer la poรชle avec le vin blanc et laisser rรฉduire une minute. Ajouter le lait de coconut et bien chauffer. Ajouter le spigarello et continuer de cuire jusqu’ร  ce que le spigarello soit tendre, de 2 ร  3 minutes. Goรปter et ajuster les assaisonnements (il manquera fort probablement de sel et de poivre). Lorsque la sauce est prรชte, ajouter les pรขtes ร  la poรชle et bien mรฉlanger. Servir avec les garnitures suggรฉrรฉes, si dรฉsirรฉ. Bon appรฉtit!
