This French Canadian Pea Soup brings back my childhood. The memory of cold winter nights and warm meals. My mom would put her peas to soak the night before she would make the soup. I knew that the next day, our home would smell fabulous and I’d have the pleasure of eating that big bowl of comfort. French Canadian Pea Soup

Ingredients

  • 4 big carrots, chopped finely
  • 2 medium onions, chopped finely
  • 1/2 head of celery, chopped finely
  • 6 cloves garlic, minced
  • 3 bay leaves
  • 812 cups vegetable broth
  • 2 Not-Chick’n bouillon cubes
  • 1 bag whole yellow peas (16 oz), soaked overnighht
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 78 drops of liquid smoke
  • Sea salt and pepper, to taste

Instructions

In a large soup pot, place all the ingredients. Bring to a boil, reduce the heat and let cook until the peas are very tender, stirring occasionally. It is important to taste as you go and adjust the seasonings.ย 

Notes

Before serving, feel free to use a hand-held mixer to purรฉe some of the soup, if the peas didn’t break off during cooking. Some people prefer a more uniform soup, whereas I love when I can see the peas. But your choice! Bon appรฉtit!

  • 1 sac (16 onces) de pois jaunes entiers, trempรฉs toute une nuit
  • 2 c. ร  thรฉ de poudre d’ail
  • 2 c. ร  thรฉ de poudre d’oignon
  • 7 ร  8 gouttes de fumรฉe liquide
  • Sel de mer et poivre, au goรปt

Instructions

Dรฉposer tous les ingrรฉdients dans un gros chaudron ร  soupe. Porter ร  รฉbullition, rรฉduire le feu et cuire, en brassant souvent, jusqu’ร  ce que les pois soient trรจs tendres. Il est important de goรปter et d’assaisonner pendant la cuisson.

Vous pouvez utiliser un mรฉlangeur ร  immersion avant de servir pour rรฉduire en purรฉe. Certaines personnes aiment une soupe plus uniforme, alors que d’autres prรฉfรจrent une soupe plus croquante. C’est votre choix. Bon appรฉtit!

Truly a must in Indian cuisine: the garlic-ginger paste. Many Indian recipes require the use of this fabulous paste. It adds a lot of depth to dishes, mixed in usually towards the end of cooking, and its flavor is essential if you’re after an authentic taste.

It doesn’t matter how much garlic, ginger and water you use, just make sure they’re about the same amount of garlic and ginger, and add water by the spoonful until you get the right consistency.

Epic Coconut Curry Soup

For the broth:

  • 3 tablespoons toasted sesame oil
  • 1/3 cup ginger, sliced in coins
  • 1 tablespoon fresh turmeric, sliced in coins
  • 1 head garlic, cloves sliced in half
  • 1 large onion, sliced thin
  • 6 tablespoons yellow curry paste
  • 2 quarts vegetable broth
  • 2 cans coconut milk
  • 2 tablespoons maple syrup
  • 2 tablespoons miso paste

For the garnishes:

  • Asian noodles of choice, cooked according to package directions (I really enjoy the “somen” noodles from Hakubaku)
  • Zucchini noodles
  • Large handfuls of spinach
  • 8 oz shiitake mushrooms, trimmed, sautรฉed in sesame oil and tamari
  • Green onions, sliced on the diagonal
  • Fresh cilantro
  • Toasted pumpkin seeds
  • Sambal oelek, to taste

Instructions

In a large soup pot, heat the sesame oil over medium-high heat. Add the ginger, turmeric, garlic, and onion, and sautรฉ, stirring often, until the onion starts to caramelize, about 5-7 minutes. Add the curry paste, mix well, and cook, stirring, until very fragrant, about 2-3 minutes. Add the vegetable broth, the coconut milk, and the maple syrup. Bring to a low boil, cover, reduce the heat and simmer for as long as you can. I recommend at least 45 minutes, but feel free to extend it to 90 minutes, for even more flavor.

Before serving, take out a cup of broth in a small bowl and add to it the miso paste. Mix well and put back in the pot. Stir. To serve, place the noodles and the zucchini noodles in a shallow bowl. Add the spinach to one side. Ladle some broth (with or without the onions/ginger/turmeric/garlic mixture) in the bowl, and top with the shiitake, green onions, fresh cilantro, pumpkin seeds, and sambal oelek.

  • 3 c. ร  soupe d’huile de sรฉsame grillรฉ
  • 1/3 tasse de gingembre frais, coupรฉ en rondelles
  • 1 c. ร  soupe de racine de curcuma frais, coupรฉe en rondelles
  • 1 tรชte d’ail, les gousses coupรฉes en deux
  • 1 gros oignon, coupรฉ en tranches minces
  • 6 c. ร  soupe de pรขte de cari jaune
  • 2 litres de bouillon de lรฉgumes
  • 2 boรฎtes de lait de coconut
  • 2 c. ร  soupe de sirop d’รฉrable
  • 2 c. ร  soupe de pรขte miso

Pour les garnitures:

  • Nouilles asiatiques au choix, cuites selon les directives sur l’emballage (j’aime bien les nouilles “somen” de Hakubaku)
  • Zoodles (spirales de zucchini)
  • Quelques poignรฉes d’รฉpinards frais
  • 8 oz de champignons shiitake, รฉqueutรฉs, sautรฉs dans l’huile de sรฉsame et la sauce tamari
  • Oignons verts, coupรฉs sur la diagonale
  • Coriandre fraรฎche
  • Graines de citrouilles grillรฉes
  • Sambal oelek, au goรปt

Instructions

Dans une marmite, chauffer l’huile de sรฉsame ร  feu moyen-รฉlevรฉ. Ajouter le gingembre, le curcuma, l’ail et l’oignon. Faire revenir, en brassant souvent, jusqu’ร  ce que l’oignon commence ร  prendre une couleur dorรฉe, environ 5 ร  7 minutes. Ajouter la pรขte de cari, brasser, et cuire, en brassant, 2 ร  3 minutes. Ajouter le bouillon de lรฉgumes, le lait de coconut et le sirop d’รฉrable. Porter ร  รฉbullition pour quelques secondes, couvrir, et mijoter le plus longtemps possible, au moins 45 minutes, jusqu’ร  90 minutes, pour plus de saveur. Avant de servir, retirer une tasse de bouillon dans une tasse ร  mesurer, ajouter la pรขte de miso, brasser, et retourner le tout dans la marmite. Mรฉlanger.

Pour servir, placer les nouilles et les zoodles dans une assiette creuse. Ajouter les รฉpinards. ร€ la louche, ajouter le bouillon (avec ou sans le mรฉlange oignons/ail/gingembre/curcuma) et garnir des champignons shiitake prรฉalablement sautรฉs, des oignons verts, de la coriandre fraรฎche, des graines de citrouille et du sambal oelek.

Toum: A Lebanese Garlic Sauce

If you love garlic, you’ll love toum: a Lebanese garlic sauce. It’s a dip, a condiment, a sauce, and it’s very garlic. I used to order it with my shish taouk asking for a “double order of the garlic sauce!” But seriously, when I finally put my hands on homemade toum, I was hooked. I usually have a tub of the thing sitting in my fridge, and I use it with whatever I feel like, almost even on toast! Just try it, you garlic-addict!

Toum: A Lebanese Garlic Sauce

  • 1/2 cup garlic cloves, peeled and trimmed
  • 1 teaspoon sea salt
  • 1 1/2 cup grapeseed oil
  • Juice of 1 juicy lemon
  • 56 tablespoons ice water

Instructions

In a food processor, pulse garlic and salt until you get a smooth paste, scraping the sides of the bowl, occasionally. While the food processor is running, add the lemon juice. Pulse until fluffy. With the processor running, add 1/4 cup of the oil, in a thin and slow stream. Then, add 1 tablespoon of the ice water. Scrape the sides of the processor bowl and continue with another 1/4 cup of the oil. After each addition of 1/4 cup of oil, add 1 tablespoon of the ice water. Continue alternating until all the oil is used. Taste, adjust for sea salt, if necessary. You should have a light and fluffy sauce. The key is to add the oil very, very slowly.

  • 1 c. ร  thรฉ de sel de mer
  • 1 1/2 tasse d’huile de pรฉpin de raisin
  • Jus de 1 citron frais
  • 5 ร  6 c. ร  soupe d’eau glacรฉe

Instructions

Dans un robot culinaire, pulser l’ail et le sel de mer, jusqu’ร  l’obtention d’une pรขte homogรจne. Pendant que le robot fonctionne, ajouter le jus de citron frais. Pulser. Avec le robot en fonction, ajouter 1/4 tasse d’huile en un filet mince. Ajouter ensuite 1 c. ร  soupe d’eau glacรฉe. Pulser. Continuer avec 1/4 tasse d’huile, suivi d’une c. ร  soupe d’eau glacรฉe. Continuer d’altรฉrer entre 1/4 tasse d’huile et l’eau glacรฉe jusqu’ร  l’utilisation de toute l’huile. Ajuster le sel de mer, si nรฉcessaire. Il est trรจs important d’aller doucement avec l’huile, sinon, votre toum restera liquide et huileuse.ย

In this creamy sunchoke soup recipe, the sunchokes really shine since the preparation is so simple and straightforward. Helianthus tuberosus is a species of sunflower native to Eastern North America. Its tuber, called sunchoke, sunroot, or mistakenly Jerusalem artichoke, is cultivated widely across the temperate zone.

It is believed that the sunchoke helps in the control of blood sugar. Unlike most tubers, sunchokes store their carbohydrate as inulin rather than as starch. Either way, I love how you can handle them just like a potato, but they give you that nice sweet and nutty flavor. Enjoy this creamy sunchoke soup with garlicky croutons or crispy sage, or both!

  • 1 1/2 lb sunchokes
  • 1 tablespoon grapeseed oil
  • 2 leeks, cleaned, white and pale green parts only, sliced lengthwise and then thinly crosswise
  • 4 cloves garlic, minced
  • 1 sprig fresh thyme
  • 3 1/2 cups vegetable broth
  • 1 can coconut milk
  • Sea salt and pepper

Instructions

Peel and chop the sunchokes into coins. In a soup pot, heat the grapeseed oil over medium heat. Add the leeks, the garlic, the thyme, and generous pinches of salt and pepper. Sautรฉ until very soft, but not browned, about 15 minutes. Lower the heat if necessary.

Add the sunchokes and the vegetable broth. Bring to a boil, reduce the heat, and simmer until the sunchokes are tender, about 15 minutes. Add the coconut milk, heat through, and turn off the heat. Discard thyme sprig. Mix with an immersion blender or blend in a blender. Serve warm in soup bowls, garnished with garlicky croutons and crispy sage.

  • 1 boรฎte de lait de coconut
  • Sel de mer et poivre, au goรปt

Instructions

Peler et trancher les topinambours en rondelles minces. Dans une grande casserole, faire chauffer l’huile ร  feu moyen. Ajouter les poireaux, l’ail, la branche de thym et de gรฉnรฉreuses pincรฉes de sel et de poivre. Sauter doucement jusqu’ร  ce que l’oignon soit translucide, environ 15 minutes. Si les lรฉgumes ont tendance ร  coller, baisser le feu.

Ajouter les topinambours et le bouillon de lรฉgumes. Porter ร  รฉbullition, rรฉduire le feu, et mijoter jusqu’ร  ce que les topinambours soient tendres, environ 15 minutes. Ajouter le lait de coconut, rรฉchauffer, et retirer du feu. Retirer la branche de thym. Utiliser un mรฉlangeur ร  immersion pour rรฉduire en purรฉe ou passer au mรฉlangeur. Servir chaude dans des bols ร  soupe, garnie de croutons ร  l’ail et de sauge croustillante.

This Creamy Tomato Lentil Soup will warm your bones. It’s not spicy, unless you make it, and the kids always ask for more (little trick for the kids: serve it on rice!). I usually enjoy my adult serving over a bed of spinach or fresh kale from the garden.

Creamy Tomato Lentil Soup

Ingredients

  • 1 tablespoon grapeseed oil
  • 3 carrots, in small dices
  • 1 medium onion, in small dices
  • 4 cloves garlic, minced
  • 12” piece of fresh turmeric, pounded
  • 1 bay leaf
  • 1 sprig thyme
  • 3 ounces tomato paste (1/2 small can)
  • 1 can coconut milk
  • 34 cups vegetable broth (depending how thick you want the soup)
  • 1 cup sprouted lentils (red lentils would also work here, but might need to cook slightly longer)
  • Sea salt and pepper
  • 2 cups greens (kale, spinach, Swiss chard) (optional)
  • 1/2 teaspoon sambal oelek (optional)

Instructions

In a soup pot, heat the grapeseed oil over medium-high heat. Add the carrots, onion, garlic, turmeric, bay leaf, and thyme, and stir well. Add generous pinches of salt and pepper. Lower the heat to medium and cook, stirring often, until the onion is soft and golden, about 15 minutes. If the vegetables stick to the bottom, lower the heat a little. You want everything nice and caramelized, but not burnt.

Add the tomato paste and mix everything well. Let the tomato paste cook for a good 5-6 minutes, stirring most of the time. You want the tomato paste to become a rich, dark red in color and have a sweet aroma.

Add the coconut milk, lower the heat and scratch the bottom of the pan nicely. Let the base of the soup become creamy and luscious, while simmering slowly for 3 minutes. Add the vegetable broth and the lentils and bring to a boil. Reduce the heat and simmer until the lentils are cooked, about 5-6 minutes. Remove from the heat. If using, add the 2 cups of greens and sambal oelek, and stir well.

Les journรฉes sont courtes, les nuits sont froides. Mais oui, c’est l’hiver, mรชme en Arizona. Les matins se pointent en affichant les 2 ou 3 tristounets degrรฉs, et disons que รงa me prend du temps me rรฉchauffer. Mais c’est que je suis comme mon jardin, on dirait bien! Blague ร  part, cette soupe vous rรฉchauffera les os. Elle n’est pas piquante, ce qui fait que les enfants en redemandent. Je la sert sur du riz vapeur pour eux. Je profite pendant ce temps de ma portion adulte, servie sur un lit d’รฉpinards ou de kale du jardin.

  • 3 carottes, en petits dรฉs
  • 1 oignon moyen, en petits dรฉs

  • 1 bout de curcuma frais de 2 pouces, รฉcrasรฉ avec le rebord d’un couteau
  • 1 feuille de laurier
  • 1 branche de thym
  • 3 oz de pรขte de tomates (la moitiรฉ d’une petite boรฎte)
  • 1 boรฎte de lait de coconut
  • 34 tasses de bouillon de lรฉgumes (moins de bouillon pour une soupe plus รฉpaisse)
  • 1 tasse de lentilles germรฉes (les lentilles rouges peuvent รชtre utilisรฉes, mais le temps de cuisson doit รชtre ajustรฉ)
  • Sel de mer et poivre
  • 2 tasses de lรฉgumes verts (kale, รฉpinards, bette ร  carde) (optionnel)
  • 1/2 c. ร  thรฉ de sambal oelek (optionnel)

Instructions

Dans une grande casserole, chauffer l’huile ร  feu moyen-รฉlevรฉ. Ajouter les carottes, l’oignon, l’ail, le curcuma, la feuille de laurier et le thym, et bien mรฉlanger. Ajouter de gรฉnรฉreuses pincรฉes de sel et de poivre. Baisser le feu ร  moyen et cuire, en brassant souvent, jusqu’ร  ce que l’oignon soit tendre et dorรฉ, environ 15 minutes. Si les lรฉgumes ont tendance ร  coller, baisser le feu. Les lรฉgumes doivent รชtre tendres et caramรฉlisรฉs.

Ajouter la pรขte de tomates et bien mรฉlanger. Laisser la pรขte de tomates cuire pendant environ 5 ร  6 minutes, en brassant. La pรขte de tomates doit devenir un rouge foncรฉ et dรฉvelopper un arรดme subtilement sucrรฉ.

Ajouter le lait de coconut en grattant bien le fond de la casserole. Baisser le feu et laisser le mรฉlange devenir crรฉmeux, tout en mijotant, environ 3 minutes. Ajouter le bouillon de lรฉgumes et les lentilles, et porter ร  รฉbullition. Rรฉduire le feu et mijoter doucement jusqu’ร  ce que les lentilles soient cuites, environ 5 ร  6 minutes. Retirer du feu et ajouter les lรฉgumes verts et le sambal oelek, si dรฉsirรฉ, et bien mรฉlanger.

I found this magical Dry Jerk Seasoning recipe written in a notebook at home. Big thank you to whoever shared this. This is something precious in a kitchen, something like a wonderful garam masala recipe. You should always have some on hand. This jerk seasoning is used in my Baked Jerk Tofu recipe, but you can also toss it into simmering coconut milk and serve over pasta. You can toss raw cashews with coconut oil, sprinkle them with the jerk seasoning, and pop in the oven. You can also sprinkle some on fried plantain chips. It’s really endless. It’s spicy and tangy, and you won’t want to live without it!

Ingredients

Scale
  • 1 tablespoon garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons cayenne
  • 2 teaspoons dried parsley
  • 2 teaspoons dried thyme
  • 2 teaspoons sea salt
  • 2 teaspoons sugar
  • 1 teaspoon paprika
  • 1 teaspoon allspice
  • 1/2 teaspoon dried crushed pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon

Instructions

Just mix everything in a small bowl. Keep in the fridge in an airtight container. Bon appรฉtit!

  • 2 c. ร  thรฉ de thym sรฉchรฉ
  • 2 c. ร  thรฉ de sel de mer
  • 2 c. ร  thรฉ de sucre brun
  • 1 c. ร  thรฉ de paprika
  • 1 c. ร  thรฉ de piment de la Jamaรฏque
  • 1/2 c. ร  thรฉ de piment chili broyรฉs
  • 1/2 c. ร  thรฉ de poivre noir
  • 1/2 c. ร  thรฉ de muscade
  • 1/4 c. ร  thรฉ de cannelle moulue

Instructions

Simplement mรฉlanger tous les ingrรฉdients dans un petit bol. Conserver au rรฉfrigรฉrateur dans un contenant hermรฉtique. Bon appรฉtit!

The broth in this Asian-Inspired Soup with Pan-Seared Tofu and Brown Rice Noodles is straight-forward and delicious. It is warming, with a nice balance of ginger and garlic. To this broth, you may add whatever vegetables you have on hand. Here, I had carrots, snap peas, Brussels Sprouts, green beans, shiitake mushrooms, and spinach. By adding some pan-seared tofu and some brown rice noodles, you obtain a complete and nutritious meal.

Asian-Inspired Soup with Pan-Seared Tofu and Brown Rice Noodles

Ingredients

Scale

For the broth:

  • 2 tablespoons coconut oil
  • 1” piece ginger, minced
  • 2 cloves garlic, minced
  • 3 cups mixed seasonal vegetables, cut so that they all cook at the same time
  • 4 cups vegetable broth
  • 2 large handful spinach
  • 1/3 cup fresh cilantro leaves
  • Sea salt and pepper

For the tofu:

  • 1 block extra firm tofu, squeezed off excess water and cut into 1” cubes
  • 2 tablespoons tamari
  • 1/4 cup coconut oil
  • 2 shallots, sliced thin
  • 2” piece ginger, smashed
  • 2 cloves garlic, peeled and smashed
  • Sea salt and pepper, to taste

To serve:

  • A package of brown rice noodles, cooked according to package directions
  • 1/3 cup roasted cashews
  • 1/2 cup fresh cilantro leaves
  • 2 green onions, sliced thin
  • Lime quarters

Instructions

In a soup pot, heat the coconut oil over medium-high heat. Add the ginger and garlic, and sautรฉ for 1 minute. Add the vegetables, season to taste with sea salt and pepper, and sautรฉ, while stirring, about 2 minutes. Add the vegetable broth. Bring to a boil, lower the heat, and simmer until the vegetables are slightly tender, but still al dente. Add the spinach, stir one minute, and take off the heat. Add the cilantro and set aside.

In a shallow bowl, pour the tamari on top of the tofu cubes, and distribute evenly. In a large cast iron skillet, heat the coconut oil over medium heat. Add the shallots, ginger, and garlic, and sautรฉ one minute. Add the tofu cubes, season to taste with sea salt and pepper, and let them sear on one side for 3-4 minutes, undisturbed. Turn them only when they come off the skillet easily. Cook on the other side for another 3 minutes and remove from the heat.

In four shallow bowls, place some cooked noodles. Top with some warm broth, some tofu cubes, cashews, cilantro, green onions, and serve with lime quarters. Bon appรฉtit!

Soupe ร  l’asiatique avec tofu poรชlรฉ et nouilles de riz brun

Pour le bouillon:

  • 2 c. ร  soupe d’huile de coconut
  • 1 bout de gingembre frais de 1 pouce, รฉmincรฉ
  • 2 gousses d’ail, รฉmincรฉes
  • 3 tasses de lรฉgumes frais de saison, coupรฉs afin qu’ils cuisent tous en mรชme temps
  • 4 tasses de bouillon de lรฉgumes
  • 2 gรฉnรฉreuses poignรฉes d’รฉpinards frais
  • 1/3 tasse de coriandre fraรฎche
  • Sel de mer et poivre, au goรปt

Pour le tofu:

  • 1 bloc de tofu extra-ferme, pressรฉ et coupรฉ en cubes de 1 pouce
  • 2 c. ร  soupe de sauce tamari ou soya
  • 1/4 tasse d’huile de coconut
  • 2 รฉchalotes franรงaises, en tranches minces
  • Un bout de gingembre frais de 2 pouces, รฉcrasรฉ
  • 2 gousses d’ail, pelรฉes et รฉcrasรฉes
  • Sel de mer et poivre, au goรปt

Pour servir:

  • Une boรฎte de nouilles de riz brun, cuites selon les directives sur l’emballageย 
  • 1/3 tasse de noix de cajou rรดties
  • 1/2 tasse de coriandre fraรฎche
  • 2 oignons verts, tranchรฉs mince
  • Quartiers de lime

Instructions

Dans une marmite, chauffer l’huile de coconut ร  feu moyen-vif. Ajouter le gingembre et l’ail et faire revenir pendant une minute. Ajouter les lรฉgumes, assaisonner de sel de mer et de poivre et continuer de cuire pendant deux minutes. Ajouter le bouillon de lรฉgumes, porter ร  รฉbullition, rรฉduire le feu et laisser mijoter jusqu’ร  ce que les lรฉgumes soient cuits, mais encore croustillants. Ajouter les รฉpinards et retirer du feu. Ajouter la coriandre et rรฉserver.

Dans un bol peu profond, placer les cubes de tofu. Verser la sauce tamari sur les cubes et bien distribuer. Dans une grande poรชle de fonte, chauffer l’huile de coconut ร  feu moyen. Ajouter les รฉchalotes, le gingembre et l’ail et faire revenir pendant une minute. Ajouter les cubes de tofu, assaisonner au goรปt de sel de mer et de poivre. Laisser saisir pendant 3 ร  4 minutes, sans les bouger. Tourner les cubes de tofu et laisser saisir de l’autre cรดtรฉ pendant 3 ร  4 minutes. Retirer du feu.

Dans quatre bol peu profond, dรฉposer des nouilles de riz. Recouvrir du bouillon et des lรฉgumes, de cube de tofu, de noix de cajou, de coriandre, d’oignons verts, et servir avec des quartiers de lime. Bon appรฉtit!

Paris Bistro Soup

Ingredients

  • 1 cup mixed dried beans, soaked overnight, sorted, rinsed and drained
  • 1 tablespoon grapeseed oil
  • 1 cup diced celery
  • 1 cup diced parsnips
  • 2 cups diced carrots
  • 1 1/2 cup leeks, clean and sliced thin
  • 4 garlic cloves, smashed
  • 23 sprigs of fresh thyme
  • 1/2 teaspoon turmeric
  • 2 bay leaves
  • 6 cups vegetable broth
  • 1 bunch kale, Swiss chard, or beet leaves, sliced thin
  • 2 tablespoons fresh parsley, chopped
  • Sea salt and pepper, to taste

Instructions

In a large soup pot or Dutch oven, heat the grapeseed oil over medium-high heat. Add the celery, parsnips, carrots, leeks, garlic, thyme, and salt and pepper to taste. Mix well and sautรฉ for 2-3 minutes until the vegetables lose their crunch. Add the turmeric and cook for one minute, mixing well. Add the bay leaves and vegetable broth. Bring to a boil and add the beans. Reduce the heat to a simmer and cook until the beans are tender, about 45 minutes. Add the beet greens and cook for 2-3 minutes, until they are wilted and tender. Turn off the heat and add parsley. Test and adjust seasonings, if necessary. Bon appรฉtit!

  • 1 tasse de haricots secs mรฉlangรฉs, trempรฉs toute une nuit, rincรฉs et รฉgouttรฉs
  • 1 c. ร  soupe d’huile de pรฉpin de raisin
  • 1 tasse de cรฉleri, en dรฉs
  • 1 tasse de panais, en dรฉs
  • 2 tasses de carottes, en dรฉs
  • 1 1/2 tasse de poireaux, lavรฉs et tranchรฉs mince
  • 4 gousses d’ail, รฉcrasรฉes
  • 2 ร  3 branches de thym
  • 1/2 c. ร  thรฉ de curcuma
  • 2 feuilles de laurier
  • 6 tasses de bouillon de lรฉgumes
  • 1 botte de kale, de bette ร  carde ou de feuilles de betterave, en chiffonnade
  • 2 c. ร  soupe de persil frais, hachรฉ
  • Sel de mer et poivre, au goรปt

Instructions

Dans une grande marmite, rรฉchauffer l’huile de pรฉpin de raisin ร  feu moyen-vif. Ajouter le cรฉleri, le panais, les carottes, les poireaux, l’ail, le thym, le sel de mer et le poivre. Bien mรฉlanger et faire revenir pendant 2 ร  3 minutes. Ajouter le curcuma et cuire une minute de plus. Ajouter les feuilles de laurier et le bouillon de lรฉgumes. Porter ร  รฉbullition et ajouter les haricots. Rรฉduire le feu et laisser mijoter environ 45 minutes, jusqu’ร  ce que les haricots soient cuits. Ajouter le kale et cuire doucement pendant 2 ร  3 minutes. Assaisonner au goรปt de sel de mer et de poivre, retirer du feu et ajouter le persil. Bon appรฉtit!

This Cream of Wild Mushroom soup is a plant-based version of one of my favorite soups. I was always a huge fan of Ina Garten’s famous cream of wild mushroom soup. It called for one stick of butter and two cups of heavy cream! This is one of those things that are hard to make plant-based. I tried it with almond milk, soy milk, pea milk, but nothing gave me that smoothness I was looking for. At that point, I knew nothing else would do the job as well as coconut milk. So here we are, with a smooth and dairy-free version. Adapted from: Cream of Wild Mushroom Soup, by Ina Garten.

Cream of Wild Mushroom

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 small leeks, chopped (white and pale green parts only)
  • 1 lb. wild mushrooms, cleaned, trimmed, and coarsely chopped
  • 1/4 cup all-purpose flour
  • 1 cup dry white wine
  • 4 cups homemade mushroom or vegetable broth
  • 1 teaspoon minced fresh thyme
  • 1 can full fat coconut milk
  • 1/2 cup parsley, minced
  • 1 1/2 teaspoon sea salt
  • 1 teaspoon pepper

Instructions

In a large Dutch oven, or soup pot, heat the olive oil and the butter over medium heat and add the leeks. Cook over low heat for 15-20 minutes, until the leeks begin to brown, but not burnt. Bring the heat to medium and add the wild mushrooms. Cook for 10 minutes, until the mushrooms are browned and tender. Add the flour and cook for one minute. Add the white wine, scraping the bottom of the pot and cook for one more minute. Add the broth, the thyme, the sea salt and pepper, and bring to a boil. Reduce the heat and simmer for 15-20 minutes, until slightly reduced. Add the can of coconut milk and the parsley. Taste and adjust for salt and pepper. Heat through and serve. Bon appรฉtit!

  • 1 c. ร  soupe d’huile d’olive
  • 2 c. ร  soupe de beurre
  • 3 petits poireaux, hachรฉs (partie blanche et vert pรขle seulement)
  • 1 livre de champignons sauvages, nettoyรฉs, parรฉs et hachรฉs grossiรจrement
  • 1/4 tasse de farine tout-usage
  • 1 tasse de vin blanc sec
  • 4 tasses de bouillon de champignons ou de lรฉgumes
  • 1 c. ร  thรฉ de thym frais, รฉmincรฉ
  • 1 boรฎte de lait de coconut
  • 1/2 tasse de persil frais, รฉmincรฉ
  • 1 1/2 c. ร  thรฉ de sel de mer
  • 1 c. ร  thรฉ de poivre noir

Instructions

Dans une marmite ou une cocotte, chauffer l’huile d’olive et le beurre ร  feu moyen. Ajouter les poireaux et cuire ร  feu doux pendant 15 ร  20 minutes, jusqu’ร  ce que les poireaux commencent ร  caramรฉliser. Rรฉduire le feu et ajouter les champignons. Faire revenir pendant 10 minutes, jusqu’ร  ce que les champignons soient dorรฉs. Ajouter la farine et cuire pendant une minute. Ajouter le vin blanc et dรฉglacer la marmite. Une fois le vin รฉvaporรฉ, ajouter le bouillon de lรฉgumes, le thym, et assaisonner de sel de mer et de poivre. Porter ร  รฉbullition, rรฉduire le feu et laisser mijoter pendant 15 ร  20 minutes. Ajouter la boรฎte de lait de coconut et le persil. Goรปter et ajuster les assaisonnements. Bon appรฉtit!
